早前與友人晚上在西營盤小聚。正所謂「正餐甜品兩個胃」,吃完晚飯後,我們便想到stack一嚐它的招牌pancake。奈何當天夜已深,店舖早已打烊。。。今天友人剛巧在上環出沒,我便再相約友人在Stack嘆個weekend brunch!來到Stack,當然要order它的pancake。pancake選擇不多,只有3款,於是我們須臾間便點了一份Running Honey。pancake賣相不錯,份量亦適中。pancakes之間夾著半溶化的牛油和焦糖脆脆,而上面則澆上了層層蜜糖。pancakes的口感偏扎實,咬下去相當濕潤,齒頰間縈繞著淡淡的蛋奶香;配上半溶的牛油,香味更為濃厚。可惜焦糖脆脆稍微烤焦,帶有一股苦澀味,令pancakes稍為失色。整體而言,食物質素中等偏上、不算驚艷,但勝在用餐環境舒適,而且小店客人不多 ,適合和三兩知己相約小聚。

We ordered 2 dishes; the Benedicts duck/ Salmon and the running honey. Both dishes came with a standard coffee.

We'll start with the coffee. It tasted like drip coffee or a short black which they served with a separate cold milk. As a coffee lover this should have been a bad sign.

The first dish is actually a salmon royale with duck egg. The texture of the duck egg was strange, more like cottage cheese than silky egg. The pancake was slightly dry and everything was covered in salad greens. There was nothing new or exciting with this dish. I would actually have preferred thick cut sourdough.

The second dish was really good though, the pancakes soaked in the syrup and burnt honey flavours. If you do want to go, I would recommend this one.

I really want to like this place but I doubt I will ever come back. The menu is terribly cryptic and the staff are rather nonchalant. I make better pancakes at home, and there I get to wear my pyjamas.

While their dessert pancakes are extremely popular, it's always been their savory pancakes that have been grabbing all the spotlight. I was supposed to meet a few friends for dinner in the neighborhood but since I still got another half an hour to kill, I thought I should hop in and have a quick one just to save me another trip.

This is a nicely decorated dish with the pan seared scallops ($148) as the centerpiece. Each scallop was neatly sitting on top of a homemade pancake and it was served with ham, watercress and edible flowers.

So not stellar, especially at $360, pricey. The service, slow and rude.

The interior of the restaurant is a rustic, industrialised design that makes it stand out from the other places. There is only a bar table, and limited seats inside this bar+restaurant. The two friendly bosses that I mentioned just now are the twin brothers who started the cafe Common Grounds in Sheung Wan. They are quite famous in the local culinary circle, I think.

Since I mentioned that this is a bar+restaurant, they paired up their sweet/savory dish with their creative cocktails with Chinese elements added to it. We did not try out the cocktails this time, but would love to for our next visit. This time, we just focus on the food itself.
First up will be the '12H78C' That's the name of the dish, super cool right? BBQ short ribs with coffee infused butter topped with dried strawberry chunks. Short ribs were slow-cooked 12 hours at 78°C, and definitely soft with flavor intensely absorbed. The buckwheat pancakes were fragrant and fluffy, but seemed to be overshadowed by the short ribs. I would prefer a balance of both elements if they want to execute the concept. The fig at the side was a great palate-cleanser.

Next up, we ordered another savory dish that was the Pearls - Oil poached scallops with ikura and wasabi mayo. As I sliced through the scallop, I could tell that it was cooked to perfection when there’s a gradient of color, from outer white layer to slight pinkish translucent centre. It had a very light seasoning, but the wasabi mayo didn’t really shine through. Pancakes were, again, kept at a very ‘low profile’ in this dish. Credits to the very well-poached scallops by the way.

A dinner should definitely end with a dessert. For the sweet, we ordered Citrus and berries - Yuzu curd with raspberry rose puree. The flavor of this dessert was, one word, awesome! The ricotta pancake had a generous layer of yuzu curd, and they matched amazingly well. Stacking three pancakes together and eating them one mouthful was really satisfying. A very refreshing dessert to end our dinner.

Food: First off, I'm going to say that Hong Kong has seen it's fair share of trendy, hip, and hot spots open around the west side of the island. while some are great and ingenious, Stack sets itself apart by having an absolutely perfect product.

Stack serves up an all new way to eat pancake. fact is, whoever said it needs to be eaten sweet with maple syrup?

Each of five savory dishes are blended with a mixture of sauces that you never knew were that good together. I particularly liked Pearl: a Scallop ikura pancake topped with a might wasabi infused sauce. I ordered another serving after finishing each first dish, naturally. the 12H78C pork was impressive. stands for 12 hours in 78 degrees C. The pulled pork looked very good and popular, unfortunately my stomach had no more space to try after I ordered two servings of everything. bottom line, try everything. Each of your taste buds will light up with the fusion flavors dabbled in. The pancake becomes just a medium on which to present the art.

Now onto the sweet ones. order the maple syrup. not all the pancakes deviate from the original. but this original will take you to the moon, cuz it's completely unlike any other syrup pancake you've ever had. it's as smooth as, well, the syrup that it rests on. in between the layers (probably stacks is more apt) is yet another sauce that just complicates things in a really good way.

I forget to mention that each pancake goes with a unique mixed drink you've never had before. I was fine just having the food, so can't comment on the drinks.

Service: the staff is friendly and enthusiastic. very professionally telling you and introducing the food. very good wait staff. I got a chance to shake hands with the proprietor, Josh. he told me he takes his inspiration from various US, Latin American and Asian influences. The only place I'd take away few points is the chocolate pancake took a half hour to serve, but hey, if I got another a perfect dish why not.

Decor: the whole restaurant seats around a long metallic bar table on high chairs. very cool setup, that's perfect for a group party, or a chic date.

this restautant isn't to be missed. I'm going again very soon, that's for sure.

The service could be improved by staff paying more attention - it started with the waitress not realizing there were 2 empty seats at the end of the bar and telling us our party of 3 would have to wait, despite my two friends already being seated. We constantly had to ask for more water as the cups are tiny. Finally, the bill was wrong. Twice. First they underchraged us - and then they overcharged us.

The decor was nice but the seating is quite uncomfortable.

We got our drinks first: The Innocent Geisha and Harry had a little Lamb. The Innocent Geisha was so sickly sweet I couldn't drink it; the Harry had a little Lamb was a bit more refreshing but also quite sweet, unfortunately it didn't contain much alcohol despite being on the cocktail list. We didn't take photos because we were so disappointed.

There were 3 of us and we were still a little hungry after this.

A very memorable, pleasant and cozy experience at Stack, a labour of love and new endeavor of the Twins Kitchen brothers.... All in all, Stack offers delectable, crafty and original tapas-like dishes for dinner (paired with cocktails possible) that should satisfy different palates and appetite sizes. Combined with the nice service it's entirely worth a detour to go there!

On the top layer, there was a cute onsen quail egg.
The Mexican sunshine had guacamole mixed with yuzu dressing which I found to be extremely delicious because the Yuzu was very refreshing with tones of lime in it as well.
However, the pieces of avocado were not ripe and rather hard but the pancakes were nice as expected.
