新鮮炸起的食物真的最美味了,不論是蝦棗,還是蟹棗,兩者均加入蝦肉、蟹肉,但個人覺得味道還不算濃郁,反而被餡入面的蘿蔔搶味了。要是蝦肉蟹肉的味道更濃郁的話,味道定必更佳。

本來只是想點鵝腸,不過待應提議我們點雙拼,一來可以多試一款食物,二來價錢較化算,而雙拼我點的是鵝腸拼燒鵝,這裏的滷味做得非常出色,滷水味道不會過鹹,而且食物亦非常入味,鵝腸入口爽脆,脂肪不多,而燒鵝啖啖肉,口感嫰滑。

這個菜式的賣相不算很討好,說實,與餐牌的圖片有很大差距,不過,它的味道還是非常不錯,魚鰾吸收了滿滿的湯汁,入口軟淋,鮮味十足,而青瓜口感爽脆,一軟一淋,營成強烈對比。

潮州翅同廣東燴魚翅其實大同小異,分別就喺個湯度,廣東酒樓燴翅會用清湯,清湯以老雞、火腿及精肉慢火煲成,湯喺煲好之後,裏面嘅湯料仲係完好嘅,成隻雞會完好無缺,其他肉都係,而湯亦會好清,冇乜油,但潮州翅用嘅係濃湯,煮濃湯嘅湯料同清湯嘅其實一樣,不過會用猛火煮成,湯煲好成隻雞會散哂,湯會好俗好多油,濃湯本身會相對清湯香濃,用作燴翅我認為更惹味。

今晚呢度做嘅翅真係好到加零一,湯甘香濃甜,魚翅份量多,估算最少有三兩濕翅,發得相當軟滑,可以用繞樑三日形容佢有幾味美。

除翅之外,筆者最鍾意嘅就係下面呢道鹵水雙拼,雙拼可以任揀兩款鹵味,我地揀左墨魚同鵝片,個鹵水做到好香兼有不俗回甘味,鵝片肉好嫩滑,墨魚片又爽口,用靚料絶無懷疑。
