第二輪是其餘七件壽司,包括火炙大とろ中とろ赤身銀鱈赤貝北海道海膽兩款玉子。火炙大とろ的口感未算肥美,最大問題是未能在師傅做好壽司後立即品嚐(因為並非坐在壽司吧),所以經火炙逼出的魚油很快已經涼了下來,失去了應該散發出來的油香,魚油甚至已經被とろ再吸收。但其實大とろ質素很好,入口冇筋,也入口即溶,油分溢滿口腔;感覺上是浪費了。中とろ無論賣相及味道都與預期中有差距,外觀欠缺脂肪紋理,入口雖然軟滑,但欠缺中とろ應有的油分。赤身反而較為好味,酸度平衡,魚肉軟滑有咬口。

北海道海膽的紫菜香脆、海膽份量夠多,但滿瀉了的海膽賣相就不太好了,紫菜應該裁得大塊一點;也不應該將山葵蓉放在海膽上面,會奪去了海膽獨有的鮮甜味。撥走山葵蓉才將整件海膽軍艦放入口中,鮮味滿瀉!玉子是大驚喜,估唔到午市套餐都有特別炮製的玉子壽司,還要有兩款味口。

傳統玉子卷加入了黑松露醬;黑松露的獨有香氣未算強勁,就算不大喜愛黑松露都勉強可以接受。另一款玉子就更加吸引,一般鮨店通常要晚市才有供應。先用魚肉、蝦肉、雞蛋打成糊,然後用焗爐炮製。無論賣相及口感都有點似蛋糕,入口鬆軟、又有少少魚膠的煙韌;有蛋香、兼又多了幾分海鮮鮮味 ⋯⋯ 是最好食的玉子壽司變奏版。

小公主唔可以食魚生、又唔想食鹽燒和牛午餐,只好單點一份冷稻庭烏冬($150)。嘩!份量較預期之中還要少,簡直可以用少得可憐去形容。先講賣相,已經不太合格;冷烏冬並不代表要用冰粒墊底,較正宗的處理方法是用冰粒鎮凍烏冬、瀝乾水份,再用小竹蓆墊著奉客。另外,雖然是高級鮨店,但稻庭烏冬並非什麼貴價食材;加上肯定是供應商交貨,並非新鮮自家製作,兼且價錢又不便宜;即使烏冬爽口彈牙,仍然有點失望。

壽司質素其實很好。師傅們喜歡傳統做法,即只簡單掃上醬油,火炙已算突破常規;並不喜歡添加天然調味如辣蘿蔔蓉、柚子皮末等等。不過,食材比較普通,欠驚喜。以這個價位的午市壽司套餐,銅鑼灣及尖沙咀、甚至中環,應該有更佳的選擇。

友人生日到鮨幸用膳順便慶祝,在香港第一次試omakase,相當不錯!由頭說起,我在大概一個月前book檯,所以當天去到便直接入坐,内裏細心地設有普通餐檯及吧檯,我選擇了吧檯,可以邊吃邊欣賞師傅的刀功。我們選擇了壽司12件加卷物那個lunch set,都由師傳當日發板,說真的,每一件前菜,壽司,到手卷,水果及甜品都好像充滿靈魂,鮮有能一邊吃一邊和食物好好交流,靈魂除了食材新鮮外還少不了立了功的醬汁,他們確實下了功夫鑽研醬汁,能放在魚生上散發出神奇的效果,下次決定晚上到訪,聽說晚市的食材比午市更令人心動。師傳們親切友善,環境乾淨舒適,同時提供不少日本酒給選擇作pairing,也是令我在次光顧的原因。

朋友推介所以試吓,我係食晚餐菜單揀咗係Kou $1780果一款、由於我好鍾意食海膽但係唔食牛㗎、嗰晚每一款菜式我都覺得非常之好味至少五至六樣都係加入左海膽做材料、餐廳入邊環境雖然唔大但係個吧枱都算有空間感。如果喜歡食新鮮食材日本菜的話、呢度係一個好好嘅地方👍🏻 由於大部份菜式都非常好味,食到都唔記得咗影相😂

在鮨幸吃生日飯,自帶生日蛋糕,免切餅費啊!一向喜愛鮨幸,愛其頂級魚生,沙律、烏冬、甜蛋、雪糕/咖啡... 全齊,卻是親民價格,超級満足!

由淡味和油脂小點的魚生開始吃起:
左口魚: 比較乾身,比左口魚群邊瘦很多
牛秋魚: 淡味點的魚
碎甜蝦:由蝦膏、甜蝦肉、紫蘇花做成,非常鮮美
野生銀雪魚:野生銀雪魚的口感和味道零舍不同
三文魚籽: 自家醃製的三文魚籽,很新鮮飽滿
油甘魚:以網燒煮法,很香口
赤貝: 爽脆鮮甜
北海道根室馬糞海膽: 根室出品,頂級海膽,超級鮮甜,完全沒有防腐劑味!
吞拿魚背、中toro、網燒大toro: 吃盡瘦中肥toro, 完全沒有筋,入口即溶!

第一次食omakase 選擇左呢間平民價而且預訂了Lunch time 12:00結果早到了便成為第一位客人餐廳內BAR檯大概有14至16個座位另外亦有幾張大檯檯上已放好讓你存放口罩的紙袋非常細心這次和朋友是特意來嘗試omakase只是糾結選擇幾多貫特意問了師傅原來12貫比9貫多了海膽和拖羅,最終選擇了12貫前菜有蒟蒻沙律和燉蛋因為在他們剛營業就到於是看到師傅們把新鮮魚塊切成一片片刺身壽司方面:左上角的甜蝦蝦膏茸壽司比較特別賣相亦十分吸引另外十分推薦的就是海膽壽司海膽份量很多而且十分冰凍鮮甜 食落有幸福感還有吞拿魚腩壽司 雖然未去到好像日本那種入口即溶但都已經有半溶化的口感最後的一道是金箔紫蘇葉拖羅蓉手蓉,單是賣相已經十分奢華,食下去紫蘇葉提升了整個手卷的層次非常清新其他的壽司份量都十分足而且食材新鮮 建議不用再點醬油,不然會掩蓋了魚生的鮮味壽司師傅十分有耐性推介每一款壽司無奈我和友人十分投入聊天沒太專注師傅的推介😅食完壽司竟然還有烏冬 和麵鼓湯2件小方塊蛋 還有芝麻口味雪糕

左上角的甜蝦蝦膏茸壽司比較特別賣相亦十分吸引
另外十分推薦的就是海膽壽司海膽份量很多而且十分冰凍鮮甜 食落有幸福感
還有吞拿魚腩壽司 雖然未去到好像日本那種入口即溶但都已經有半溶化的口感
最後的一道是金箔紫蘇葉拖羅蓉手蓉,單是賣相已經十分奢華,食下去紫蘇葉提升了整個手卷的層次非常清新
