Here’s what we had.
Smoked chicken with raw onion that has been processed, (which- as noted by chef- we could eat carefree as it wouldn’t give us bad breath).

Chicken neck skin. Chef noted that his menu offered skin from various parts of the body; eg skin from the tummy area was generally more thick and fatty; local diners preferred them a bit crispier- hence he picked skin from the neck
