朋友說永合隆出名食燒味,今天經過就買左$400燒腩仔加叉燒外賣,返到去打開,份量已經唔多,但唔明白明明買燒腩仔,何解會搭左兩大舊骨頭,腩肉都幾咸而且唔覺有炭燒味,而且店員態度惡劣,貼錢買難受,一定唔會再幫襯!

我以前食開,真係好食,不過可能都係大半年前嘅事,最近一次去,舖面裝飾唔同左,亦都設定左要食套餐,其實冇問題,但係最大嘅問題,係食物品質唔同左(尤其是係嗰啲主角 : 燒味),今日我又專程喺公司搭幾個站地鐵過去,再食一次,結果係更加清楚,真係差左,可能冇左以前啲話事人喺度監場,啲出品維持唔到以前水準,對唔起呢個老子號招牌,平均100蚊套餐,樣樣都好似執齊俾你地,但我去,心目中係食以前質素嘅燒肉飯,咁就覺得失望(义燒係更差),職員方面都有禮貌招呼我,但係食飯都係以食物質素為主導嘅,呢餐我就覺得好失望,如果佢地真係新一代接手,如果真係想做呢門生意,就要放多啲心機,否則不如轉型做佢地自己鍾意做嘅生意啦。

上網睇吓燒味飯推介,見到炭火燒肉去試吓,去到三拼100蚊,無問題,點知吃落口仲衰過街市燒味,叉燒又硬又無味,燒肉皮係薄,但又肥又咸,切雞完全冇味,垃圾之中㗎垃圾,仲要賣100蚊一蝶飯,好食就完全唔貴,但十分難食,完全對唔住价,都唔知邊個俾咁大既信心!應該自己鋪,否則必執!有時傳統係好,但滥用傳統但又唔好食就好有問題!

偶然都會光顧這一間老店,雖然近年質素已大不如前,而且不斷加價,但總算仍能接受,仍有一點舊有的味道,但已並不出眾。農曆年前一般燒味飯價錢已經$50,但估不到農曆年後更大幅加價至$88起 (一定要連例湯和紙包飲品),只可以說姜太公釣魚,願者上釣,哈哈! 我叫了一個燒腩肉、雞飯$108,質素不算高,而且不穩定,那天的飯更是軟爛難吃,燒味尚算可以。但這個價錢我會選擇去中環鏞記,或者一樂更便宜,更出色!其實香港仍有不少燒味店比永合隆做得好得多,單靠老字號真的能夠維持下去⋯識食嘅人一定懂得選擇!相信附近的街坊都會覺得物非所值,而我對此店亦都後會無期。

永合隆飯店在上世紀60年代開業,至今已有六十年多。褪色的金漆招牌,加上「乳豬燒臘第一家」的字句,令人勾起飯店昔日的光輝歲月。永合隆堅持用炭燒做法,乳豬仍有一定的捧場客。燒豬也備受歡迎,外皮香脆、肉質鬆軟、肉中滲出炭香,相比掛爐燒製,味道方面有較多層次。今天試試叉燒、燒肉飯,叉燒是用梅頭半肥瘦,叉燒邊有少許脆,以及帶點蜜味,好味。燒肉皮不單止脆,咬落更發出聲音,肉質不是硬繃繃,味道有點鹹。可惜,飯沒有飯味,有點失望。

今天路經太子站附近,見到久違了的永合隆燒臘店,想起20多年前食過一次,燒肉皮脆肉香懷念至今,於是就決定去買燒腩肉回家吃,他們的價錢比一般燒臘舖貴好多,燒腩仔賣$198一斤,當天只是一隻細中豬,不是以前賣的大豬,我要了一條骨,竟然要$180,回到家趁還有一點暖身,就急不及待去嘗試,結果徹底徹底的失望,燒肉完全冇味道,淡茂茂,皮又硬又un ,完全咬唔入,真係食之無味棄之可惜,份量又少得可憐,完全揾苯,所以以後一定唔會再去光顧。
