見到乳白色的湯頭就感覺到它的柔滑口味,十分綿密,不自覺一口一口接著喝⋯

麵條則比較普通,個人比較喜歡硬身的麵,所以覺得不夠硬,幸好掛湯能力不錯。

牛蒡應是這裡的特色食材吧。配搭拉麵吃都頗特別,十分脆口,浸在湯也不會太油膩,很喜歡呢。

有兩款叉燒,是豚肉和雞。豚肉肥瘦均勻,入口肉質不錯👍雞叉燒則十分有驚喜,入口有濃厚的雞味,十分好吃😋

加了錢要蛋,可見不算太流心,不過都收貨。

埋單每人百五,以拉麵來說價錢算是十分高,不過其湯底真的有水準,頗值得久不久回來回味一下,不過地方有點隔涉,確是一大缺點呢。

值得一提它的廁所十分舒服,還有女性用品,很貼心

I didn't know about this place, and it is around my neighborhood. I just walked by and went in with no expectation. The noodle was really good, soup was taste just rightly balanced, smooth and hot. The Chicken was carefully placed, so it doesn't get overlooked, after a few seconds into the soup, it was perfectly tender and in good temperature. I will come back. I was impressed, and I will definitely come back again.

平時唔會專登去排隊但呢間都值得排一陣。佢地係你排緊隊會俾凍既麥茶你消下暑。第一啖有驚喜,有啲似carbonara,即刻好fusion。個湯頭濃而不咸,雖然個麵無得揀硬度但夠彈。炸牛蒡絲同塊豚肉同雞都好好味。雞應該係用低溫煮法所以幾嫩滑下。第一次食拉麵會飲曬成碗湯。加左隻糖芯蛋,好有煙薰既味,必點。

Chicken Soup Dipping Ramen (Tsukemen)
When it arrives our jaws dropped for the ramen portion. The ramen noodles has to be served cold and dip into the hot thick soup. As we shared the previous ramen before this, the soup got cold n the waiter offered to reheat the soup. Everything is similar the the previous ramen but the thick soup reminds me of high quality Campbell mushroom chicken soup.

見到個量,覺得好大份。因為之前食左個拉麵,呢個湯凍左,個店員好貼心咁幫我地加熱。呢碗啲配料同拉麵大同小異。沾麵個湯就濃同咸好多,有小小金寶蘑菇忌廉雞湯既影子(不過係好味既!) 建議係將一小撮麵好似食意粉咁捲一啖,輕輕浸一半落個湯就夠。

後記:呢間一定encore,多謝店員叔叔真係送左碟炸雞(7/10)同係日本自家製既柚子俾我地。

好了, 不論名稱如何, 這一家在跑馬地景光街的座銀, 賣的乃是雞湯拉麵。做得好的雞湯湯頭又甜又濃香, 而那種甜香是豚骨無論如何都比不上的。雖然在香港不是人氣很盛, 但雞湯拉麵的確是我個人最愛的拉麵款式, 只是本地的鳥華亭、松壱家兩家麵店的出品均不是太合我心意, 是以見到有新人加入戰團, 當然是馬上衝去湊熱鬧的。

可能是選址影響, 座銀的定價很進取, 湯拉麵HK$138沾麵HK$148還要加一, 比得上新登陸的米芝蓮一星級拉麵蔦! 裝潢的確的高檔的舒服的, 咋看之下會以為是甚麼新開的日本料理店呢。雖然是平日的午市, 到埗時店內已經幾乎坐滿了人, 走的時候門外也起了短短的人龍。這是證明拉麵店很受香港人歡迎麼? 答案先在這裡賣個關子。

我們被安排坐在吧枱的位置, 剛剛好可以清楚看到廚房範圍。下頓下來, 只可以說整個團隊給我的感覺是鬆散的, 未有專業態度帶到出來。廚房人手非常多, 但似乎大多很悠閒; 又恰好有一個新人上場, 似乎仍在一個搞不清楚狀況的狀態, 不時呆呆的站著。日籍師傅並沒有下手煮麵備湯(功夫應該已全數交給其中一個香港師傅了), 反而主要在指點新人, 這樣的安排倒是令我覺得新奇了。最吊詭的是, 店面並不小, 卻只有一個女侍應在外堂下單、上菜、執拾、收款 - 啊不, 還有一個穿著廚師衣飾的人在外堂幫忙, 簡直是蔚為奇觀。

先上的是沾麵, 又額外加點了溏心蛋一隻以及雞肉牛蒡飯。第一印象其實不差, 器具都很精緻, 擺放的角度也是一絲不苟的。沾麵的份量意外的大, 麵條目測是250g-300g左右的份量吧? 只是我們所坐的位置視角實在太好, 恰恰見到師傅分好麵條之後還好整以暇地握在手中, 用了大約兩分鐘去梳理再擺放美觀... 不是說放得美美的不好, 只是這個梳理的時間太長, 要人看到將會放入自己口中的東西被人捏在手中, 感覺, 真差。

記得上次在東京的麵道吃沾麵, 麵條一樣也是放得美美的。不過當時師傅不是用手而是用筷子去做這一個步驟, 而且是非常俐落地挾起兩三次, 梳順了麵條, 手抖一抖 , 麵條就是被子一樣蓋下, 極顯功架。

不過呢, 座銀的麵條有點先天不足, 剛剛才開始吃已經發現麵條粘在一起了。大概這就是師傅要梳理那麼久的原因吧。以筷子加少許暴力把麵條挾散, 丟到湯之中拖一拖, 終於真正嚐味了。

入口既濃又香, 還有一絲絲的甜, 果然是水準很高的雞湯。湯身真的很厚重, 直接飲用是絕不建議的, 只要幾口應該已可以把人擊倒吧。但也因為湯很杰身, 掛麵的能力非常高, 當你吃光麵條的時間湯也應該已去掉七、八成了。

要在座銀吃到最濃厚的雞湯, 就一定要點沾麵。拉麵的做法則是用一半的雞湯加上一半的清湯做成的。密度可以想像是比較低一點, 入口除了雞湯的甘甜, 更加上了昆布的咸清。油膩感比沾麵低很多, 但對雞湯愛好者來說, 滿足度也會相對低一些。

若不是同時和朋友一個點沾麵一個點湯麵, 可能不容易發現原來座銀有準備兩種不同的麵。沾麵稍稍粗身一點, 也因此帶來了更爽更彈的口感, 比起湯麵的要強一點, 也更合我的心意。

貪心的我們打算多試餐單上的食物, 所以也叫了一個牛蒡雞肉飯。老實說真的不是很令人喜歡的飯啊, 味道似是不夠香的臘味飯, 口感也太濕爛。在吃完濃味的雞湯之後再吃這個, 真有一點「玩自己」之感。倒是寧願座銀提供白飯就好了。白飯和雞湯加在一起吃, 真的會很好味呢。

雖然我也頗喜歡座銀的出品, 覺得雖然膩但還是有很多可取之處, 但短時間內可能都不會回頭。一來, 跑馬地真的太不方便了, 地理位置令人卻步; 其次, 定價真的太進取了, 帶來的滿足感值得我付這一個價錢嗎, 我又覺得未能對應。整體來說都差了一點點, 未可以入我的心水清單。

另外, 來座銀吃拉麵除了要為荷包做預算, 也要為時間做預算。廚房出菜的速度比較慢, 也是門外人龍會堆積的原因。店員的工作態度很悠閒, 也是別的拉麵店比較少有的。

麵經個冰水過冷河,所以比平時食嘅沾面都凍。但湯同碗嘅溫度可以令麵變到最適合入口嘅溫度!而且麵質非常爽口彈牙,直情好似食緊橡筋咁粗幼度又到又啱啱好,掛湯嘅效果真係一流。
另外,雞肉嘅口感真係世界級!嫩得黎竟然會有種爽口,好似食緊雞髀菇咁嘅口感😱真係完全唔知佢用咩方法整,但真係好新奇好好食!

湯底濃烈得非常有衝擊感!第一啖食落去已經可以食到聞到雞肉嘅香味😱而且唔係慢慢咁滲出黎,而係一食落口有爆炸性嘅香濃!情況有如食緊佛跳牆咁,好香好醇好粘,但一啲都唔膩😋

看到很多評價好的食評,再加上傳媒的吹捧,說什麼必吃拉麵12家😒最終失望而回。其實拉麵本身問題不大,比普通好吃,但弊在侍應的服務態度嚴重差劣!安排位子非常差,其實講真跑馬地人流不多,我經過幾次,每次也是見到有大約六七人排隊,但店子裏有三四台是空枱,也不讓客人進入,可能他們想營造有多客人的幻覺。每次見到多人排隊也放棄,今天星期日晚上八時,見前面只有五個人排隊,而店內也有多張空枱,於是便等一陣。等了大約15分鐘,前面的客人已經入內,而散漫的店員從來也沒有問我多少位客人,結果在排我後面的兩位客人先入座。我問他為什麼我們沒有位子,他說二人優先來進🙁,我看情況不妙,後面的大多數是兩位或者一位,那豈不是要等多一個鐘!於是主動提議三人(因為其中一位是小朋友)的迫迫的坐在沙發上。其實餐廳本身人不多,座位也很寬躺,主要兩位侍應招呼,師傅也有幫手,可是坐了5分鐘也沒有人來理會,沒餐牌、沒有茶,枱上有杯,於是自己去門口斟水。未叫食物已經一肚氣!😤拉麵到了,雞湯是挺好味,但一點也不值百多元一碗,湯較為鹹,炸牛蒡令到啲湯好又鹹又油膩,面粗但不好吃,可能是店員服務態度惡劣,已經令我胃口冇晒。我絕對不會再次幫襯,店員

I rarely walk around Happy Valley, but that day, after my hospital visit, I was desperately hungry and decided to check what's around the neighbourhood. The storefront of Zagin Soba was quite understated. I didn't feel like soba that much - didn't realize it's a ramen place, until I checked out their menu. This place specializes in chicken, so from its brooth to their meat, it's all chicken! They only have a handful of items on the menu, reminding me of Japan, where they're big on specialty shop

This place specializes in chicken, so from its brooth to their meat, it's all chicken! They only have a handful of items on the menu, reminding me of Japan, where they're big on specialty shops. After trying their signature chicken soup ramen, I went back the next day to try their seafood chicken soup ramen, which really is chicken soup ramen with dried shrimp. The 'seafood' version was a bit salty for my taste. I would stick with their traditional version instead. 

Their fried chicken and half boiled egg was cooked to perfection. Overall, I definitely recommend this place and would go back if I had another ramen craving!
