座銀自從駐進香港以黎,一直系Facebook見到唔少有關距既宣傳,而且賣的是香港比較小見的白雞湯,所以放工特登座半個鐘車入跑馬地試下。進店得時候大概系7點幾幸運地沒有什麼人,可以座bar臺近距離觀賞拉麵師傅煮麵。比較特別既系,呢間拉麵店會問客人想要暖水還是冰水,而一般傳統的日本拉麵店只會提供冰水,呢種“反傳統”系冬天十幾度既時候反而幾窩心。椅子下面仲有籃可以擺放客人既隨身物品。 今次同女朋友分別叫了雞白湯拉麵($138) 同 雞 沾面($148),另外加了一隻溏心蛋($15) 和 牛蒡雞肉飯($38)。呢間店十分講究上菜既樣,無論系餐具和餐盤既設計,拉麵既擺放方式,以至配菜既擺法都很講心思,稍微留意既話不難發現。拉麵的排版十分特別,上面既牛蒡疊到好似藝術品一樣。拉麵湯上面有一層特別既泡泡,系店家將打泡沫咖啡既方法打落拉麵度,令堂面更滑,現場仲見到師父用疑似打咖啡既器具黎打拉麵,十分特別。至於沾面,麺質同傳統拉麵的口感有少少唔同,食落有少少烏冬既質感,咬落比較彈牙,放入口既時候散發住淡淡麥香,掛湯程度亦非常滿意,濃郁既雞湯掛上微粗既拉麵,一淡吸嗮入口,真係好有幸福既感覺。有去過日本既話,

有去過日本既話,唔難發現又d日本人食拉麵之後會叫炒飯食,估唔到座銀都有賣牛蒡雞肉飯,分量雖小,但係又幾好食


值得一提既系,呢間拉麵店既廁所都非常乾淨,而且據女朋友所講女廁仲有女性用品提供@@",睇得出店家無論服務,擺盤,味道同環境都好用心,價錢雖然比較貴(仲要加一),兩個人食左370蚊,但的確系一次難得既飲食體驗,並無後悔。

又黎食了,連續3個星期都黎一次本身我極鍾意食拉麵,試左香港好多唔同拉麵,大概只有兩三間係會令我食完又食,呢間就係其中一間!今次試沾麵先,因為前兩次已試雞白湯拉麵同海鮮雞拉麵,而牛蒡雞肉飯同炸雞上次已經食左沾麵個湯比普通雞白湯更重味,超級濃郁,好似飲緊忌廉雞湯咁麵條份量多(女士們可能會食唔晒)好彈牙,而雞肉都好嫩滑,整體上好豐富牛蒡分開上,可以當前菜食好鍾意食炸牛蒡,好似薯片咁脆!真係想問問可唔可以當小食咁叫黎食

Super nice staffs and services. They are so detail that they could tell I was hot and asked if they need to turn up the air conditioner for me. Foods are not like other ordinary ramen. We love it so much. The fried burdock is like an art and went well with the ramen.

香港一向都多日本拉麵店,花多眼亂呢..而呢間據說係來自大阪既拉麵店,身為一個拉麵達人,當然要試試呢...未食視覺上已經很豐富...飲第一啖湯之後,就愛上了!濃得有點像忌廉雞湯...炸牛蒡炸得像薯片一樣脆,味道甘香而拉麵係我喜歡既粗身拉麵雞肉嫩滑,反而叉燒沒有什麼特別溏心蛋係另外加,味道不錯,不過無果重食完想再食既感覺湯底真係絕對值得再三回味,係香港黎講應該都算係Top 5 拉麵店,雖然價錢比較略貴...下次再試其他款式拉麵!

飲第一啖湯之後,就愛上了!
濃得有點像忌廉雞湯...

炸牛蒡炸得像薯片一樣脆,味道甘香
而拉麵係我喜歡既粗身拉麵
雞肉嫩滑,反而叉燒沒有什麼特別
溏心蛋係另外加,味道不錯,不過無果重食完想再食既感覺

湯底真係絕對值得再三回味,係香港黎講應該都算係Top 5 拉麵店,雖然價錢比較略貴...下次再試其他款式拉麵!

So the place offers very limited choices in terms of noodles and snacks/appetizers, only three choices were chicken noodle, chicken and seafood noodle and dipped noodle. Me and my other half tried the chicken and the chicken plus seafood. The soup was pretty rich, I remember few years back there were another chicken soup noodle place in Causewaybay that didn't work out too well because the soup was very rich and fat, Zagin has less of this problem (on a relatively scale of course as chicken based are pretty rich itself). They had an interesting choice of condiments, with a piece of pork, some bamboo, roasted onions and a piece of chicken breast. I also liked the presentation and the environment is decorated like a sushi bar rather than a ramen place so it's more spacious with better decoration and style.

However I don't think I'm a big fan of chicken soup ramen and another issue with this place is that the portions are in fact a little too small given it's $138 per bowl. They also offer a smoked half boiled egg which I thought was a little similar to those from shanghainese cuisine. In conclusion, it was fair but I wasn't too impressed. It's expensive and portions are small on a relative scale comparing to other ramen places in Hong Kong, whatever soup base there is. I think there are better choices in Hong Kong.

跟我在食評開頭講的一模一樣,「座銀」的招牌拉麵跟「霸X拉麵」、「麵X」或「拉麵X」一樣,都是製造雞白湯湯底的拉麵。唯一分別就是,「座銀」還有提供雞白湯沾麵,菜式名把「白湯」兩字都删走,變成了「雞沾麵」。

之前我已經吃過了好幾次「沾麵」,第一次是在荃灣「X麵台風」,第二次是在佐敦恆豐中心地庫,可惜現在已經結業的「八盛屋」。我吃過的第三次沾麵是位於灣仔,「霸X拉麵」的姊妹店「風雲X」。

最近一次我食過的日本沾麵,就是在上環歌賦街,可以吃到先醬油湯,後加入雞湯的米芝蓮食店「麵X醬油房周月」。「X麵台風」跟「麵X醬油房周月」都可以免費選擇加大麵底,「風雲X」則勝在有塊灸燒厚豚肉。

不過前面四間沾麵店,沾麵本質都是以豬肉湯或醬油湯做沾麵的沾汁,直到我今次來到跑馬地「座銀」,才第一次真正見識到,由沾汁到叉燒,都見到雞肉蹤影的「雞叉燒沾麵」。

除了「座銀」的招牌「雞沾麵」之外,我還額外點了一份「座銀炸雞」。話說「座銀」可以因為位處於住宅區的關係,所以「座銀」的氣氛都看似很悠閒,一眾員工都很有禮貌,很好招呼。

點餐後,我坐在「座銀」廚房附近的吧檯附近,看着一眾員工在工作,煮「雞沾麵」的蕎麥麵條和沾汁。大約十分鐘過後,「雞沾麵」終於率先完成上檯,只剩下「座銀炸雞」還末完成。

「雞沾麵」除了有碗沾汁、一碟蕎麥麵、雞叉燒和豬叉燒各一塊之外,「座銀」,廚房還另外配備了一小碟「牛蒡」配菜,「牛蒡」為了讓食客感受到它的香脆口感,所以索性炸起後不放入沾汁或蕎麥麵裡頭,直接分開碟另上。

由於「座銀」「雞沾麵」麵條屬於蕎麥麵的關係,所以「座銀」安排「雞沾麵」使用的沾汁,溫度不會太過滾燙,屬於中等程度的暖沾汁。把蕎麥麵放入暖沾汁裡頭,蕎麥麵吸引了沾汁鮮甜雞湯味道精華,口感有少許韌性的蕎麥麵充滿了雞湯的香味。

「座銀」本身的沾麵,我覺得有點似人手操作壓麵機製造而成,難得地成功把麵條做得粗幼一致,每條沾麵的口感都一樣的同時,還有蕎麥麵專有的麥香。或許因為是蕎麥麵的關係,所以「座銀」沒有點餐紙,食客也沒機會選擇麵條的軟硬度,食拉麵沾麵都一樣。

至於「座銀」「雞沾麵」的叉燒,無論是餐牌還是其他食評的內容,都沒有指明雞沾麵的兩塊叉燒,究竟雞豬比例如何。究竟是兩塊雞叉燒,兩塊豬叉燒,還是一塊雞叉燒夾着豬叉燒一起上呢?

我就管不得是雞叉燒還是豬叉燒,總之兩塊「薄叉燒」,一同浸在雞白湯裡頭,一同夾起放入口中就算了,反正我在星期日晚的晚餐,肉類是沒有限制,照吃無誤。

既然我搞不清楚這兩塊叉燒,有幾多雞肉,有幾多豬肉,我的口感只能告訴我,叉燒雖然肉質偏瘦,但實際口感卻是偏向軟腍嫩滑。而且,我把兩塊「叉燒」一併放入雞白湯沾汁裡面,叉燒已經全部吸引了雞白湯的雞肉精華。

就連跟餐附上,炸起的牛蒡絲,也吸引了雞白湯的精華味道。就算這一刻你跟我說,「座銀」雞白湯沾麵兩塊叉燒都是豬肉製成,我也會告訴自己,不用怕,不用怕,「今次我吃全部雞叉燒的雞白湯沾麵」,我沒有吃豬肉。

「座銀」的沾麵相比「麵X醬油房周月」的沾麵最大的分別在於吃法。「座銀」不會另外提供湯汁,不會另外為你注入湯汁。沾湯以外表簡單平凡,實際有厚厚質感的黑色湯碗去載起。

吃到最後,我把剩餘的蕎麥麵和沾麵一齊喝進口內,雞白湯的濃厚雞湯精華,我一滴也沒有浪費。在我還未吃完「雞沾麵」的時候,廚房的師傅跟學徒都已經炸好「座銀炸雞」,送到我的手上。

「座銀」的招牌「炸雞」,除了有新鮮炸起,新鮮滾熱辣的炸雞之外,旁邊還附上一碟疑似「味鹽」的調味料,調味料味道偏鹹,感覺實在很像味鹽,又有點像我們坊間都經常食食的椒鹽。

那些味道帶鹹鮮的調味料,實在給人太大的幻想空間,就算說那些調味料是胡椒粉,都可能有人會相信。總之那些調味料,有少許的鹹味,是給食客享用「座銀炸雞」而設的。

我把「座銀炸雞」沾上少許調味料,之後立刻吃肉質飽滿,外層鬆脆,兼且有鹹鮮的炸雞。一山還有一山高,連炸雞都有「一雞還比一雞鮮」的驚喜新發現。

「座銀炸雞」本身是無骨炸雞炸雞除了新鮮炸起,啖啖無骨之外,炸雞的炸漿表層還做得十分之薄。炸雞除了皮薄肉鮮之外,我還感受到「座銀炸雞」新鮮炸起,炸雞皮層脂肪的雞油從皮肉之間不斷滲出來,令炸雞每一啖肉都令我回味無窮。

再把「座銀炸雞」沾上調味的粉末,新鮮炸雞還多出一份鹹鮮味道。要造滾熱辣炸雞不難,很多日本韓國,或者美式炸雞店都可以做到,但是口感又脆又肉嫩,連皮層也造得新鮮香脆的餐廳,我暫時找到不超過五間,「座銀」應該位列其中之一。

但是一分錢一分貨,在香港想吃新鮮滾熱辣炸雞不難,難在價錢很難做到便宜街坊價錢,例如「座銀」的招牌炸雞,未計算加一服務費已經要收港幣四十八元一客。雞沾麵更加要收一百四十八元一客,想吃新鮮滾熱辣炸雞,如果不是親手做的話,恐怕要破費了,就像我一樣。

總結我在跑馬地,食「座銀」高級日式沾麵炸雞晚餐,已計算加一服務費在內,總共要收港幣二百一十六元正,這價錢真的很昂貴。但是雞白湯沾麵的確成為了我,我第一次食的雞白湯做沾湯湯底,蕎麥麵做麵底材料的沾麵,是之前吃過沾麵給不到我的經驗,而且雞白湯的雞味很濃。

吃完晚飯我索性徒步,從跑馬地返回銅鑼灣,究竟我下次再光顧「座銀」,享受「座銀」炸雞沾麵,和員工專業有禮服務,會是何時呢?
