The place is small but yet intimate. Is rare to find a good Raman place espically in Hong Kong. I came in by myself so the wait was not long. Sat at the bar which I can see all the cooking done in front of me. I ordered the soba dip with rich sauce base. The noodles were so soft and tender. I also ordered the fried chicken which was perfection.I loved it so much going again tonight with my dad and hubby. Just need to work on service. But the place is small so just be a little more patient.

首先,嗰賣相已經好吸引,金黃色嘅炸牛蒡好搶眼,好似成件Art piece咁! 嗰牛蒡係新鮮即炸,好似薯片咁脆,一啲油膩感都無,不過牛蒡味唔重。除咗脆食,可以好似炸魚皮咁放落啲湯到,記住唔好浸太耐,如果唔係就會淋晒。

炸雞一嚟到,見到佢顏色咁深,以為佢炸得過火,點知咬落去皮脆肉嫩,係啱啱好,仲有啲雞油肉汁,好Juicy。店長話因為佢哋先用日式醬汁醃過雞件,然後再炸,所以顏色比坊間嘅炸雞較深。再點啱黑椒鹽一齊食,真係無得彈!

雞白湯拉麵一碗$138,價錢其實偏貴;不過一想到跑馬地的舖租,其實整件事就會變得合理。而香港其實以這種湯底為主的店並不多,我還記得上次吃雞白湯拉麵,已是兩年前的鳥華亭。那時我覺得鳥華亭挺有看頭,且看這裡的雞白湯拉麵,又到達什麼境界?

湯頭上但見起泡,侍應說這是師傅專門用Cappuccino機打過;先呷一口湯,拍案叫絕!這湯頭可說是混合了數種特式之長:中式雞湯的老火,西式忌廉雞湯的均勻層次,加上日式湯頭的濃味。整體既不感油膩,味道也一氣呵成,即使吃完了麵,也會毫不猶豫想將它一飲而盡。

麵質比中太粗身一點點,蛋味雖不算很出,但勝在掛湯力夠,令湯和麵的味道相互融和;而且雖然沒有硬度選擇,師傅仍是弄得有彈牙口感,收貨。

叉燒有兩種,一種是豚肉叉燒,另一款是雞叉燒。先試豚肉,師傅用上很多功夫醃味,再經低溫慢煮十小時而成。質感大塊而薄身,入口鬆軟,卻不致於即化;脂肪和瘦肉位均勻而鮮明,味道也富肉香,非常出色。

雞叉燒則較為厚身,以日本產的雞胸肉製成,表面有先割幾刀再經醃味,再慢煮約六到七小時。雞肉味算香濃;口感方面帶點彈性,卻不算很嫩; 比起豚肉叉燒的出色,它卻稍遜半籌。

當然也要試試它們自家製的座銀炸雞,一客$48有三大件。不似南蠻炸雞伴以醬汁,而是伴以椒鹽。炸漿上得不厚,表面色澤均勻,不呈油膩的乾身。入口結實而富彈性,可惜肉汁不夠豐富,火喉的處理略見過火,稍見瑕疵。

總結:它的出品都很有自家的風格和水準,整體來說流於高水準品質。尤其它的雞白湯拉麵,比起鳥華亭還要出色,絕對深具個人之長!若想在香港吃一碗有質素又有風格的拉麵,這裡絕對不會令你失望。

侍應所說,日本師傅要求控制品質嚴謹,而且慢工出細貨,之所以遠離主戰場來到跑馬地,也是避免人流太旺影響質素。日本人的這份認真和堅持,其實筆者我挺欣賞。

Originating from Osaka, Zagin Soba is known for ramen with a chicken based broth. As it had just opened, the staff is from Osaka. How long they will be here, I do not know. 

The shop is narrow with a few tables. There is a bar table in one section where you can see the chefs at work. Menu is in Chinese and Japanese. There is no English but they do have photos of every thing. There is also no 10% service charge. However, they only serve three types of ramen: chicken broth, chicken broth tsukemen style and chicken with bonito fish based broth. All ramen are priced at $138. Unlike other ramen shops, they do not have a check off list to let you decide how you want your noodles and toppings.

Chicken Broth Ramen ($138). I chose their signature ramen. It came with half an egg, one slice of char siu, one slice of chicken breast and deep fried burdock. The char siu was interesting as it tasted a lot like ham instead of the usual char siu taste. The chicken breast was slow cooked and was moist and tender. The deep fried burdock was a nice addition to give a bit of crunchy texture. The egg was wonderful. It was perfectly cooked and it had a tea smoke flavor that wasn't too overpowering. But the broth was fantastic. Creamy and smooth. It was rich in chicken taste yet didn't feel oily. It felt like having a cream soup. It was great!

The noodles were perfectly al dente with no starchy after taste. It clung to the soup well. By the end of my meal, the noodles had soaked up the soup but it still remained chewy. These were good quality noodles.

Chicken and Fish Broth Ramen ($138). Boyfriend chose this one. It was a it saltier than mine and I did prefer mine more. It had a strong fish taste. But what we found interesting was that most places in Hong Kong that offer this type of ramen, they just give you  spoonful of bonito powder and you just mix it in. But as boyfriend discovered, there were small diced pieces of fish meat. It appeared they used actual fish meat to create the soup instead of just plopping on powder.

Karage ($48). They only have two snack items. One was fried rice using chicken oil. The other was karage. Japanese fried chicken. We decided to share this. There were about three pieces. These were possibly the best karage I've ever had in Hong Kong! They even left the chicken skin on so it was extra crunchy. It was perfectly seasoned an the meat was moist and juicy. They included some dipping salt if you wanted extra seasoning.

It's been a long time since I've gotten excited over a ramen shop in Hong Kong and this place has me excited. It's rare for me to recommend to people to actually take the trip into Happy Valley  to eat here. But here I'm doing so. Try this place. Though a lot more expensive than any other ramen place, it was worth every dollar. Quality was excellent. It tasted divine. I'll be back as I only live across the street. I'll try out the tsukemen next time. Hopefully they will maintain quality.

近年拉麵店在香港簡直是百花齊放, 無論本地薑或是過江龍, 大家都不斷過來開完一間又一間, 除了在熱門的拉麵激戰區之外, 越來越多店都選擇開在比較偏遠的地方, 例如元朗, 上水, 屯門等等. 現時可算是幾乎香港每一區都找到拉麵的蹤影, 對我們這等拉麵迷來說當然是好事. 但當然也希望香港人不會再是三分鐘熱度, 熱潮過後又會出現結業潮吧. 說回宅女近期吃過自己覺得比較欣賞的拉麵, 就是在大阪座銀吃的雞白湯拉麵了. 想不到上周竟然發現他們居然也來進軍香港!! 雖然遠在跑馬地, 但實在忍不住就動身過來試試!! 這家Zagin Soba 座銀就是去年底宅女在大阪南船場店吃過的海外分店. 這次開來香港時可調相當低調, 宣傳亦不多. 宅女也是靠一位香港拉麵迷告知才知道他們剛開店. 這家座銀在大阪都算利害的, 在當地有兩家分店, 本店位於肥後橋那邊, 2014年才開業, 但馬上就被列為日本拉麵5000大之一, 也是日本某食網站的人氣店.而香港店則於今年2月底才開業, 選址居然是完全想不到的跑馬地! 宅女覺得開在這個地點其實有好有不好, 因為完全遠離激戰區, 競爭就自然少 (雖然宅女覺得他們就算在激戰區

[自費] 近年拉麵店在香港簡直是百花齊放, 無論本地薑或是過江龍, 大家都不斷過來開完一間又一間, 除了在熱門的拉麵激戰區之外, 越來越多店都選擇開在比較偏遠的地方, 例如元朗, 上水, 屯門等等. 現時可算是幾乎香港每一區都找到拉麵的蹤影, 對我們這等拉麵迷來說當然是好事. 但當然也希望香港人不會再是三分鐘熱度, 熱潮過後又會出現結業潮吧. 說回宅女近期吃過自己覺得比較欣賞的拉麵, 就是在大阪座銀吃的雞白湯拉麵了. 想不到上周竟然發現他們居然也來進軍香港!! 雖然遠在跑馬地, 但實在忍不住就動身過來試試!!

這家Zagin Soba 座銀就是去年底宅女在大阪南船場店吃過的海外分店. 這次開來香港時可調相當低調, 宣傳亦不多. 宅女也是靠一位香港拉麵迷告知才知道他們剛開店. 這家座銀在大阪都算利害的, 在當地有兩家分店, 本店位於肥後橋那邊, 2014年才開業, 但馬上就被列為日本拉麵5000大之一, 也是日本某食網站的人氣店.

而香港店則於今年2月底才開業, 選址居然是完全想不到的跑馬地! 宅女覺得開在這個地點其實有好有不好, 因為完全遠離激戰區, 競爭就自然少 (雖然宅女覺得他們就算在激戰區都會穩勝的) , 不過在交通不算方便的跑馬地來說, 到底會有多少人專程去吃呢? 又是未知之數.

第一次來是周末下午時間, 有點意外的是他們居然沒有落場時間. 但這樣也令宅女前去的時間可以有點鬆動. 來到門口感覺好時尚呀~門面跟日本店的有點不一樣, 日本的店面是比較和風感覺, 香港店就有點高級時尚感. 幸好宅女認得他們都是共用著同一花款的門簾.

雖然過了午飯時間, 但因為假日, 店內仍然坐無虛席, 更需要等上15分鐘左右才有位. 如果不想等的話, 像宅女第二次去時是平日晚上, 就可以直接入座不用等了.

店內地方其實不算很大, 但比一般拉麵小店來說座位比較多. 煮麵區就在店的盡頭佔了四分一的位置. 在日本店兩家都只有吧台, 不過來到香港店, 這裡除了在煮麵區前有約9個吧台位之外, 其餘的地方還有幾張二人或四人枱, 眼看來這裡多了不少一家大細, 看來都是方便他們而設的.

店子裝潢感覺比日本店更講究, 內裡的擺設裝飾都充滿著和風, 但當中又帶點時尚感. 整個店都予人整潔舒服的感覺.

宅女兩次都是獨個兒來, 當然就是坐吧台. 一問之下才知道原來新店開張期間, 本店的店長也會坐陣這裡, 正好就可以看看師傅煮麵的過程了~ 坐下來店員先捧上麥茶跟濕手巾, 這個手巾宅女在日本店看到時印象很深刻, 因為很少拉麵店會提供這種漂亮花紋的手巾啊~

順帶一提這裡的杯子跟拉麵碗全都用上跟日本店的一樣, 加上師傅們也是一樣穿著整齊西裝加白袍, 突然有種回到大阪店的感覺~ 可惜的是大阪南船場店的帥男師傅們沒有過來...(笑)

再看看這裡的餐牌, 麵款只有三款可以選, 最基本的是雞白湯拉麵, 亦有沾麵可以選擇. 另外亦有一款海鮮雞拉麵. 其他菜色就只有炸雞跟牛蒡雞肉飯.

不過價錢方面就真的有點嚇人, 雖然不能以日本店相比, 不過記得日本店只賣850YEN (即約港幣60元左右), 不過現在三款麵一律收費HK$138!! 真的貴了一倍有多. 不過想一下又難怪, 始終香港鋪租跟外國是天與地比, 所以吃的價錢有一半是可能去了鋪租那邊.....

等了一會拉麵就上來了!! 看到白雪雪像牛乳般的湯頭, 馬上就喜上眉稍, 終於不用飛日本都可以回味這個湯了!! 配料跟普通拉麵有點不一樣, 叉燒有兩片, 另外還有一片雞肉. 當中有些水菜跟紫洋蔥, 還包括了半隻蛋. 比較特別的是他們用了炸牛蒡來代替平常的蔥花, 看起來更有藝術感, 而且在日本吃過宅女超愛這個炸牛蒡, 多想他們可以把這個炸牛蒡做成單點菜色! 不過有點可惜的是, 這裡的炸牛蒡份量好少呀....只有幾條, 反觀日本店的是有超多, 吃得好滿足的~

來看看下圖這是去年尾在大阪店吃過的模樣, 炸牛蒡非常多夠滿足. 不過蛋是要另加錢.

先來喝口湯, 以雞來作主打做湯頭的在香港算是少見. 記憶中在香港做雞湯的不是沒有, 也是有幾家, 像很久以前現巳結業的丸玉拉麵, 或松壹家曾推出的終極雞湯拉麵等, 灣仔的那家鳥華亭也是做得不錯. 但能做成這種有如牛乳一樣的雪白的湯真的暫時是座銀這裡才找得到吧. 湯頭本身濃稠度適中, 不會令人覺得太重口味, 油份不算多, 反之湯的表面帶點泡沫感, 喝入口雞湯味濃郁得來口感很厚身, 質感非常的順喉, 當中帶著雞的甜美, 湯內其實亦有加入魚介湯, 不過喝起來主要就是雞湯的味道. 這個就是宅女在日本喝過的味道了!! 其實這個湯巳做得很不錯, 不過感覺日本店的好像再濃多一點. 但這種質素在香港來說可算是暫時排在頭五位了.

麵條是店家自調出來的低加水直身麵, 入口質地順滑, 麵條不算很硬很煙韌那種, 其實個人覺得是有點普通, 也不是自己最愛的麵條, 但配著這種雞湯來吃, 又非常對味, 而且掛湯能力亦夠理想, 所以也令人滿意.

叉燒有兩種, 分別是兩片豚肉叉燒跟一塊雞叉燒. 據知雞叉燒是用上日本產的雞, 以低溫來慢煮, 夾起來沒半點肥脂, 入口雞肉很有彈性, 而且也吃得出香濃的雞味, 可惜只有一小塊. 而豚肉叉燒亦是用上近年比較流行像火腿般的薄身叉燒, 看看叉燒當中仍帶點粉嫩紅色, 入口肉質非常柔軟, 連著的肥脂跟瘦肉比例恰到好處!

再來是期待巳久的炸牛蒡, 用來代替了蔥, 對於我等不吃蔥的人來說當然是喜訊. 牛蒡份量雖然少, 只有3-4條, 不過每條長長的炸出來金黃亮麗, 油份也不算多, 個人覺得吃法有兩種, 可以先試試不沾湯來吃, 感覺非常的香口薄脆, 當中有著牛蒡的清新味道; 再來吃麵吃到一半時, 亦可以把牛蒡浸在湯內一會再吃, 牛蒡會變得軟淋一點, 吃起來多了幾分煙韌, 不過宅女自己每次都忍不住未浸湯就吃了大半....

最後是半熟蛋, 這裡的只有半隻, 但看看蛋芯雖半流心啫喱狀, 入口香口蛋味濃, 蛋白亦富彈性. 雖然驚喜度不高, 但也不錯吃的.

常說近年因為健康問題 (主要因為怕肥), 所以如非很喜歡的湯, 都很少會全部喝完. 不過看到最後這個喝光光的情景, 應該對這裡的湯頭水準不用懷疑吧.

接下來試的這個就是海鮮雞湯底的. 上來的湯頭色澤一看就知比剛才的雞白湯味道更濃了. 雖然仍以雞湯作基本, 但加入了蝦, 煮干及醬油一同熬製而成, 出來的湯頭色澤深沉得多, 看看油份不會太高. 喝一口, 質地的確比雞白湯更濃稠, 味道更重一點, 當中的煮干味道更突出. 不過老實說這個湯的驚喜度還不及雞白湯出色. 味道雖然夠豐富, 但太多角色加了在內, 變得有點過於複雜. 自己還是喜歡實在一點的雞白湯呢~

配料方面其實跟剛才的雞白湯拉麵大同小異, 同樣都有豚肉叉燒, 雞叉燒, 炸牛蒡及半隻蛋. 麵條用上一樣的直身麵, 加在這裡濃郁的湯頭內掛湯十分理想, 而且吃起來麵條順滑帶點咬口. 這次的豚肉叉燒體型更大, 所以變成了只有一塊. 不過肉質依然不錯, 浸一浸在湯內吃味道更香濃.

炸牛蒡份量依然好少呀, 真的很想建議一下能不能加錢追加多一份牛蒡呢....

雖然整體來說不算有很大驚喜, 但水準也是不錯的. 所以雖然很飽, 但仍努力的把湯喝到最後.

這個湯的色澤, 不禁就令宅女想起在南船場店吃過的一款煮干吟釀拉麵, 同樣都是這樣深沉的湯底, 但那款煮干吟釀湯是非一般的濃厚, 而且還帶點香醇的感覺, 是香港暫時都吃不到的味道. 好奇問了問店師傅, 才說原來那款煮干吟釀拉麵是只有南船場限定的, 就連本店都沒有. 本店也就只有這款海鮮雞拉麵. 所以有點可惜, 想再回味那個香醇的味道還是要走一趟大阪了....

上次試過了兩款湯拉麵, 這次再來試試他的沾麵. 等了一會麵就上來了. 看看麵條擺放得很漂亮, 雖然沒問麵條份量, 但目測應該有200G或以上吧. 配料就有一片豚肉叉燒, 半隻蛋及一些水菜跟大蔥絲. 而沾汁份量都算幾多, 原以為沒有了雞叉燒, 不過番一番沾汁底, 原來還有幾塊雞肉及紫洋蔥的. 都算幾豐富. 那麼湯拉麵的牛蒡去了哪裡? 原來是放了在另一個小盤上, 旁邊還有些薑蓉.

先來試試沾汁吧, 色澤仍是跟湯拉麵一樣有著像牛乳般雪白, 但質地就感覺更為濃稠一點. 先小喝一口, 湯的濃度真的比較高, 而且口感更厚身, 喝起來更有份量感. 不過咸度相對當然也提高一點, 畢竟是沾汁嘛. 雞湯味道更突出, 而且仍覺鮮甜. 底下的雞肉大約有5-6條, 入口十分有彈性, 吃起來一點都不乾, 很嫩滑的感覺. 把麵條放進沾汁內吃, 麵條非常掛湯, 每一口都有著香濃的雞湯味道, 十分不錯.

而這次的麵條因為冷吃, 更顯得有彈性亦富煙韌感.

叉燒這次有點乾, 不過浸在湯內一會吃還算是不錯, 而且體型一樣很大塊, 吃起來很有肉味.

不過想說的是沾汁有個缺點, 就是太快冷掉了. 可能因為麵條也是比較冷, 最初幾口吃起來熱度還算理想, 不過吃到一半就開始冷掉, 尾聲更是飲喝到放過雪櫃的冷度. 其實現時有不少拉麵店的沾麵都選用熱石鍋來盛沾汁, 更會放入熱石加熱保持溫度, 店方會不會未來考慮一下這種方法呢?

既然店子是主打雞, 沒理由不吃吃他們的炸雞吧. 據說他們店內所用的雞都是日本雞, 所以對這份炸雞也算是有點信心. 上來一碟有三大塊, 體型不小, 伴了點椒鹽吃. 炸雞表面色澤非常平均, 也沒有焦黑出現, 油份不多, 都幾乾身, 咬下去仍是十分香脆, 中間的雞肉非常厚身, 當中還帶點油脂, 十分JUICY, 這個炸雞實在做得不錯. 吃著時多想可以叫杯啤酒伴吃, 可惜店方暫時沒有酒牌, 只有汽水而已....

最後再來一碗這個牛蒡雞肉飯. 其實份量真的不多, 幾口就吃完. 看樣子應該也是用日本米吧, 每顆都是圓圓短短十分飽滿, 米飯內加入了雞油精華, 令飯身吃起來更香. 當中亦有不少牛蒡塊及雞肉, 一點都不會單調. 飯粒帶淺啡色, 入口感覺水份有點多, 煮得有點過爛. 可能宅女自己比較喜歡挺身一點的飯吧, 所以覺得這個口感差了一點. 不過本身的味道是相當不錯, 吃起來夠香, 配料也豐富.

整體來說這個雞白湯拉麵的確是沒有令人失望, 以香港水準來說這個暫時可以列入頭5位之內. (按自己喜好而已)

當中的雞白湯當然是最有驚喜的, 也跟在日本吃過的差不多了, 畢竟以後不用下下飛去日本巳經能吃到, 就令人相當高興.

其他麵款跟菜色雖然都有一點點瑕疵, 但都是小問題 (除了沾汁快冷之外), 大部份都是令人滿意的.

最大的缺點, 可能就真的是地點比較偏遠, 希望店子可以長期維持得到, 那麼宅女以後就可以常常來回味了!

When asked to clean it a bit, the waiter came with a rag, slapped it on the table, pulled my chair back while i was on it (pretty strong guy considering i weight over 150) and proceeded to move the rag around a couple times. he then went back, apparently to learned from the chef. he put the rag down and went straight in and prepared the food with his bare hands. guess you know you are going to get that local taste. the ramen was innovative, of fusion type. a very strong soup base, but it was very condensed and only comes up to about 1/5 of the bowl. the ramen itself was pre packaged, so dont expect homemade quality. 2 pieces of meat, one pork and one chicken. overall, it was decent. nothing memorable, but it is distinct from other ramen shops. service needs a big improvement. hopefully they can work the kinks out. will have to wait till then for a return.

一入店內已感受到濃烈的日本味,今次特地選了吧枱的位置,感受一下日本的風味。我們叫了招牌的雞湯拉面,同冷沾面。拉面的雞湯底creamy得黎又唔太肥膩,手打泡沬有cappuccino的感覺很特別,面下炸得硊硊的牛磅條很好味,一定要趁未被浸淋時吃掉,最特別是一塊慢煮叉燒同雞肉,滑得黎有彈性。據店主說全部都係來自日本,仲要慢煮了10個鐘。但一定要試的反而是冷沾面,面身很有彈性,配上超級濃湯,好味到難以形容。本來仲想試炸雞,但估唔到碗面其實睇落唔特別大碗,食落就份量十足,炸雞要留待下次先試。

其實我好鍾意食炸雞,但外面嘅炸雞如果差嘅,係真係會差到想喊,所以盡量少食。本身諗住叫其他小食試吓,但店員話暫時得牛蒡雞肉飯及炸雞,而menu入面嘅炸雞相實在吸引到令人欲罷不能,唔叫唔得,於是忍唔住叫咗一碟試吓。佢哋將雞扒嘅中間部份切出嚟,先用日式醬汁醃過再炸,所以顏色會較深。以小食嚟講,呢3件雞絕對唔失禮,大大件,上菜時睇住啲油花喺表層彈吓彈吓,加上香氣四溢,即時心諗好在我叫咗咋!趁熱即刻放入口,係會後悔嘅,因為熱到嘴都腫,但一咬開後嗰啲肉汁係湧入口腔嘅,熱上加熱,溫馨提示真係放幾分鐘先好食!但望住佢實在忍唔住,再食,真係好味到不得了,雞肉超級嫩滑,啲肉係一絲絲咁㗎,仲有勁香嘅雞味,香港啲冰鮮雞真係冇。再點少少黑椒鹽食,天啊,一碟得3件,如果唔係已經咁晏,我真係會叫多碟再食!真係好耐好耐,冇食過咁好味嘅炸雞😋!!!!!

盡量唔喺食評入面提洗手間嘅事,但實在唔提唔得!相信所有女士入到去會覺得好貼心,有放大鏡、化妝棉、牙線等,仲有最重要嘅,一大支hand cream!真係由入嚟嗰刻至食完都冇令我失望過!
