割烹 櫓杏 ,香港唯一一間以九洲熊本為主題嘅餐廳😍。當知道佢地有Omakase食,DuckGor🦆立即去咗book位😂。餐廳位於尖沙咀isquare 28樓,座位闊落,有吧枱,有卡位,有4️⃣人枱,仲可以飽覽維港海景🌅。餐廳嘅餐牌📔有好多選擇,最特別係有Omakase 食,不過佢地嘅Omakase 係完全冇menu,意思係大家唔會知道有咩食,有幾多刺身,有幾壽司😆,係真真正正嘅廚師發辦。咁神秘,我鍾意😂。割烹 櫓杏 廚師發辦 $1280/位🌟岩手縣赤崎生蠔 生蠔🦪好大隻,肉身肥美飽滿,口感creamy,新鮮冇腥味🥰。🌟香箱蟹素麵日本手打素麵🍜上面舖滿了香箱蟹🦀和海膽,連埋海赡汁撈埋一齊食,勁惹味😋。🌟鮟鱇魚肝呢度嘅鮟鱇魚肝非常特別,係將肝壓碎之後再煮,所以非常creamy😋,上面灑滿了黑七味粉,配上最中餅,所以唔會好腬🥰。🌟蓮根饅頭蓮根即係蓮藕,將新鮮蓮藕磨成泥之後打造做成丸子形狀,口感特別😋,配上山葵汁,就更加好食😍。🌟鰤魚刺身鰤魚🐟最好食的季節係冬季,大約11月尾至2月頭;口感彈牙清爽,肉質鮮甜、脂膏豐富。🌟秋刀海苔卷一半燒🔥一半唔燒,食落既有魚嘅油香味,也有濃濃嘅魚味😋。🌟舞茸燒天婦羅舞茸🍄口感較為爽口彈牙,師傅建議蘸白鹽一齊食😋。🌟天婦羅鱧魚鱧魚🐟脂肪少,口感相對較為清淡爽口,所以師傅就建議蘸山椒鹽😋。🌟熊本A4和牛師傅即場將和牛🐃在高湯上輕輕灼兩三下,之後送上。熊本和牛🐃肉質軟嫩且帶有溫和嘅味道,和牛🐃油花遍佈均勻、鮮嫩;鰹魚高湯由於加了日本青椒🫑和蒜頭🧄一齊煮,所以都幾辣🌶,近排天氣涼涼地,啱哂😋。壽司🌟目仁奈 - 油份不多,質感軟韌適中,魚味極濃😍。🌟赤貝 - 肉質爽甜,鮮味濃郁,上面加了青檸汁增加了鮮味和口感😋。🌟鮫魚 - 肉質軟綿,煙燻過後味道更好。🌟沙甸魚 - 師傅話只有新鮮的沙甸魚🐟才可以當作刺身,魚味濃郁😍。🌟赤身醬油漬 - 肉質滑嫩,醬油🧉甘香,入面包住金箔、日本芽蔥 和北海道海膽,口感登豐富😍。🌟拖羅 - 油脂甘香,入口即溶,完全無根😋。🌟蛇腹拖羅 - 由於蛇腹拖羅是拖羅中最肥美最多根的部位,所以炙燒🔥過後不但減少了油膩感而且亦無需切根,但油份仍然豐富,而且入口即溶🤤。🌟小肌 - 漬了醋嘅小肌肉質鮮嫩細緻,味道再升一級😍。🌟海膽手卷 - 海膽色澤橙黃🟠,味道濃郁,口感嫩滑😋。🌟麵豉湯熱辣辣🔥,味道非常濃郁,十分好飲😋。🌟熊本蜜瓜最後果物是香甜多汁的熊本蜜瓜🍈,為呢餐完美作結。 continue reading
