不久之前才品嚐過網上獨立店 Le Canelé d'Or 的優質 Canelé, 今次又從食友糖小妹手中獲得一顆來自上環法國小店 Monsieur Chatté 的 Canelé, 實在驚喜! 這件 Canelé 的全名為 Canelé de Bordeaux, 突顯這款食物的來源地, 就是法國的波爾多。同樣是雲呢拿配冧酒的傳統口味, 味道卻跟 Le Canelé d'Or 的有所不同, 外層冧酒味頗為香濃, 吃時更感受到來自冧酒的苦澀味; 內層質感鬆軟, 亦帶濕潤感, 蛋味濃郁, 反而雲尼拿味則較薄弱, 大慨跟這裡不見雲呢拿籽有關, 但也不失為一件質素不俗的 Canelé。先後品嚐過兩次質素不俗的 Canelé, 令「檸茶」進一步對這款法式甜點產生興趣, 下次到訪法國一定會尋找一些美味的 Canelé。再一次多謝糖小妹!

這件 Canelé 的全名為 Canelé de Bordeaux, 突顯這款食物的來源地, 就是法國的波爾多。

同樣是雲呢拿配冧酒的傳統口味, 味道卻跟 Le Canelé d'Or 的有所不同, 外層冧酒味頗為香濃, 吃時更感受到來自冧酒的苦澀味; 內層質感鬆軟, 亦帶濕潤感, 蛋味濃郁, 反而雲尼拿味則較薄弱, 大慨跟這裡不見雲呢拿籽有關, 但也不失為一件質素不俗的 Canelé。

先後品嚐過兩次質素不俗的 Canelé, 令「檸茶」進一步對這款法式甜點產生興趣, 下次到訪法國一定會尋找一些美味的 Canelé。

再一次多謝糖小妹!

早幾年筆者仍在中環上班時,就已經發現上環文咸東街有間專門經營法國紅酒及食品的店舖 Monsieur Chatté,不過當時以為那裡只售自家製鵝肝、手製農場芝士、風乾肉腸和各式肉類冷盤等,所以一直沒留意有 Canelé 發售。早兩晚和食友小妹一起去品嚐乳酪,可愛的小妹竟然為我們帶來了 Monsieur Chatté 的 Canelés de Bordeaux 及 Orange & Lemon Sweets,實在太好了。自從近期看過網上食評介紹前者那一款波爾多特產可麗露蛋糕後,就一直渴望有機會品嚐,想不到這麼快竟可願望成真,真的要再次向小妹說聲多謝呢!原來這款 Canelés 法式可麗露蛋糕是以蛋黃加入牛奶、麵粉、雲呢拿油、焦糖和小量冧酒等製作而成的。先把這個啡黑色的小蛋糕切半,內裡滿佈不規則的氣孔,有大有細,看起來呈蜂巢狀。吃一口外層,焦脆得來又帶點彈性,而內裡則軟綿且微帶濕黏,細嚼下還散發著絲絲蛋香,不過冧酒味唔算明顯,而且亦沒發現雲呢拿籽的蹤影,但以口感和風味來說,已頗不俗。至於那些小巧的糖果,有檸檬和橙兩款口味,而且色彩繽紛,十分可愛,而味道方面,入口帶淡淡的水果味,

原來這款 Canelés 法式可麗露蛋糕是以蛋黃加入牛奶、麵粉、雲呢拿油、焦糖和小量冧酒等製作而成的。先把這個啡黑色的小蛋糕切半,內裡滿佈不規則的氣孔,有大有細,看起來呈蜂巢狀。吃一口外層,焦脆得來又帶點彈性,而內裡則軟綿且微帶濕黏,細嚼下還散發著絲絲蛋香,不過冧酒味唔算明顯,而且亦沒發現雲呢拿籽的蹤影,但以口感和風味來說,已頗不俗。

至於那些小巧的糖果,有檸檬和橙兩款口味,而且色彩繽紛,十分可愛,而味道方面,入口帶淡淡的水果味,酸酸甜甜,很適合愛吃零食一族。

This was exciting because I have never tried it before so I did not know how the texture and taste would be.

These candies were really cute, they reminded me of fruit pips in the UK but slightly bigger.
There are three flavours which are different in colour, the orange one is orange and the darkest one is honey, the light brown one tasted like ginger/aniseed with a minty cooling tone to it.

身為香港人,有一點點自豪就是,很多國家有意打入香港市場,令我們可以不用太舟車勞頓,也可品嚐外國食品。處於”舊區”的文咸街,這間專售法國食品的店子,以木樓梯走進三層售貨區,確有風味。貨品琳瑯滿目,餅乾、pasta、wine、cheese、jam、鵝肝、還有「新鮮」的果批、小甜點、乳酪、等等等等…..價錢比平時見的法國食品廉宜,而且包保正宗!(中size的果醬也只售$28。)最興奮是,Financier$12杏仁味非常!在坊間時常看到這「法國小金磚」,但也做得如普通牛油小蛋糕。這裡出品,有漿力,真是咬到粒粒杏仁粉!驚喜!Canele de Bordeaux $12,無乜特別,皮有點韌,內裡蛋味一般。朱古力牛油杏仁片$12,帶到回家,朱古力開始溶,牛油也開始”鯨”出固體油狀。手上拿過,牛油味洗了兩次手,仍「不捨」牛油味。但杏仁味十分香!好喜歡好喜歡這間,貨品款式多,且十足小法國的店啊!

除了兩大碗勁多魚肉的潮州粥外﹐我今日食的野全部都甜到漏﹐雪糕窩夫筒啦、試食軟雪糕啦、大size的berry overload再加brownie...再不行下真的是會變大肥婆的~﹗所以我決定行下﹐聽住喇﹐係由K11行去圓方﹐輕易去到之後發現飽度竟然完全沒有變﹐於是不能去下一場蛋糕店﹐要先行行新開張的法式食材店Monsieur Chatte。要左件金磚蛋糕﹐口感像布朗尼﹐以前以為是用杏仁粉做﹐今日先試到不是﹐應該只是用麵粉。

終於有機會吃到處於文咸東街Monsieur Chatte最受大家歡迎的Cannelés啦。每次有朋友來找我吃飯時想買這個在上環甚為出名的小可愛作禮但每次向隅,難得今日開完會買吃的時在門口看到還未賣外,小人唯有冒(肥)死的危險入去買一個(我掙扎好好好久才忍手買一個啊)回公司吃。開初我還在想用叉吃,但似脆又軟的外皮叉插不進去(大鄉里耶),最後乾脆用手拿著吃。外層焦糖味濃而不苦,rum酒味道淺淺得不浮誇;一咬開外層,內裡是又軟又香像吉士,但沒有一般吉士的死甜或重奶味,吃完一整個一點都不膩!

開初我還在想用叉吃,但似脆又軟的外皮叉插不進去(大鄉里耶),最後乾脆用手拿著吃。外層焦糖味濃而不苦,rum酒味道淺淺得不浮誇;一咬開外層,內裡是又軟又香像吉士,但沒有一般吉士的死甜或重奶味,吃完一整個一點都不膩!

職員很友善,罐頭、果醬、肉醬、芝士, 餅乾, 酒類都是好貨色,很用心經營的店。 最喜歡它自家制的CANNELES DE BORDEAUX $12/pc 及多款TART (廿幾至三十多元),做得地道,跟以前在法國常吃的味道一樣,最推介其中的LEMON TART, PEAR TART, 玫瑰花JAM(小瓶二十多元,大瓶約六十元)。

Monsieur Chatte係一個非常適合法國菜自煮樂的朋友的好地方, 有獨家入口的法國罐頭, 紅酒, 自家製鵝肝醬, 麵包, 甜點等等係香港要搵canelé已經唔易, 整得好的就更加難, 今次買左一個試下, 自家製的canelé只賣$12, 比較起香港地閒閒地都二三十蚊一件甜品啦, 不算貴了, 呢度的canelé的面頭有著深啡色的外殼, 焦糖味雖濃但卻不苦, 內裡軟熟而且濕度亦相當不錯, 蛋味同奶香十足, 而且唔會太甜, 有水準的甜點雖然地點唔就腳, 但下次都要試下$20有五個而且有檸檬香味的madeleine...

從蓮香居走出來,想起海味街有這一間法式食材店。心欲造訪的目的不在於甚麼鴨肝醬或是油封鴨腿,而是一件網上食友有口皆碑的芝士薯仔批....沒有堂吃,只能外賣一件回家放進焗爐弄熱吃,滋味總不能勝過即焗起即吃的。五十多大洋像普通one slice of pizza那樣的件頭,當然不算便宜。但焗起後牛油及芝士香四溢,薯仔片又是層層相疊,雖然口感有些帶硬身,但那一口牛油滑膩凝香及芝士的獨有鹹香卻令薯味更突出。對愛吃芝士及薯仔的太太來說,簡直是一個不折不扣的double punch....最後還是忍不住從店裡選購了一小樽鴨肝醬回家,但隔了差不多個多月還未"開光",實在是暴殄天物也......

12.9.2009 炎熱剛吃過腸粉後,一人無聊地行到此店,在門外看了那些法式食品…心癢癢的入內尋寶去!記憶中,這三層高的唐樓數年前翻新過,及後放租多時…想不到竟會是開法國雜貨店! 店內充滿歐洲小店風情,令我留連忘返!心多多,真惱人! 最後買了法國無加糖梨子果醬($65),回家一試…驚為天人! 其味充滿梨子天然的鮮甜味,是我暫時吃過的最好一種,怪不得小兒在一兩天,就吃了半樽啦!此店還有紅酒試,下次和同事一齊來,點客芝士或鵝肝,慢慢試,那就可以消磨一個下午了。

It's now a must-stop on my lunchtime circuit - they do about 4 types of baguettes daily, ranging from about $38-$48. I love the Bayonnais, with dried ham (similar to Italian prosciutto), gouda and rocket, but actually all their baguettes are great. I'm not sure if the bread is made in house, but it's crust and chewy and easy to eat on the go. No seats though - take away only.They also sell little tarts and a very tempting mini chocolate cake, but at $38 for what I could finish in 2 bites, it's a

Hong Kong is certainly spoilt for choice when it comes to purchasing desired foreign food products, with an array of specialty shops popping up at the oddest of locations and timing with no sign of abatement. Just a short brain storming session yields names such as Monsieur Chatte, il Bel Paese, CitySuper, Oliver's, Ole's, Olala Charcuterie, Great, 有食緣, the difficult-to-access Fauchon, etc. (Plus a myriad of others such as 360, TASTE, Jason's, Sogo, Jusco, Apita, Tajima, and Taiwanese or Chin

Most of these aforementioned shops shelving carefully chosen delectable products which beckons for loyal customers willing to spend big bucks in the continual cycle - in return our curiosity and disposition to spend for exotic imported items will hopefully, fuel them up for at least another short survival cycle, protecting them from a quick demise in a city notorius for its irrational rental levels. (As I began writing this paragraph I realised I'd completely forgotten to collect my loyalty card stamps at Monsieur Chatte's during my last purchase
. I must remind myself!) Some of the proud smaller importers are not unknown to be seeing red or if extremely lucky, might just see their accounting balance sheet signed off with a 'break-even' .....with certain big name bosses willing to accept a financial risk in the sake of promoting their own beloved products to fellow food lovers, some even sacrificing their precious high-paying jobs in order to concentrate on nurturing their conceptual vision and beloved hobby into a material reality.

These bosses to me - are the true food lovers of this world and I have a feeling Monsieur Chatte could just be one of them. Rather than importing uniquitous items that are proven winners and will surely make quick business turnarounds, I find a lot of items in this shop to be niche but selectively so by the French boss, even educational. Some, such as specialty regional white wines and ciders, confitures and lollies, rillettes, cassoulets, or rare home-made items such as their sweets or cold yet readily edible foie gras blocs are highly unlikely to find their mass marketable audience. Not helped by the shop being tugged along a back alley full of customers bargaining their way through their Chinese medicine and dried swallows nests - its only conspicuous edge being it stands out like a sore thumb amongst the rest!


CERTAIN ITEMS THAT ARE VERY FRENCH AND INTERESTING! :

- Cheeses from Eric Lefebvre. A lot of varieties of cheeses ranging from soft to hard, unpasteurished to pasteurised, cow's to ewe's to goat's milk. Some favourites might include the Cantal, Chabichou, Pyrenees Brebis, Crottin Chavignol, Langres, Valencay, Livarot, Espoisses, Camembert, Roquefort Carles, extra old Mimolette, plus many I cannot remember. Beautiful cheeses but surprisingly none of them overly stinky compared to say the Bernard Anthony equivalents.

- Tinned cassoulets and duck confits, rillettes and pates, etc. To be honest it slightly irked me that my La Belle Chaurienne confit duck legs felt apart before it managed to even cross one leg over the tin's edge.

- Wines, especially their carefully selected Bourgognes which are a pain in the butt to source correctly unless you're willing to fork out millions for experimentation, some white Alsace wines perfect for asian food matching and my beloved Loire sauvignons, also affordable niche Bordeaux/Rhone producers that aren't available in other wine shops too infatuated with Pxrkerised fructose waters. Someone once told me Mr Chatte is a reputable wine importer, which certainly is reflected in the wine qualities and intelligent selections if it holds any truth.

- I believe recently introduced sweets, home-made by Mr Chatte's wife I believe? I'm too disciplined to have already tried them all at once yet, but from memory there's Kanugas, Cannelé de Bordeaux (my favourite and only seen at Cepage so far), Macaron's done the traditional French St Emilion way that's almost identical to modern American Macaroons, Citrusy Madeleines, etc.

- There's also savoury food available such as KC's mentioned Dauphinois, Ratatouille, salads, baguettes, saucissons, savoury tarts, plus others I simply don't have the brain capacity to recall. Its very distracting once you set foot into this 2 storey store.

- French pastas, jams, candies and nuts, etc.

As much as I treasure my shopping at City Super's and Ole's and even including the inaccessible Fauchon outlet, Monsieur Chatte is smartly filling in the missing jigsaw pieces for the Hong Kong market, providing every customer with an opportunity to secure previously unattainable or many unheard of French items (at least to me, who hardly understands French and makes it doubly hard to understand what I'm buying!) and I presume Mrs Chatte is busy using her lovely hands to spoil us with some homely concoctions with the risk that they might not sell by the end of the day...

This is the French counterpart of the Italian themed il Bel Paese. It demands respect and our support. Imagine the endless possibilities if this business grows and thrives, when 'us' foodies can only benefit more if they can afford to import more tasty yum-yums into the country! Let's not let it falter and then have regrets later

二月初一‧霧轉晴是同事介紹來吃這裡的薯仔批的。話說有一天,下午經過pantry,聞到濃香的芝士味道,以為有人在叮pizza,原來是焗這個薯仔批。看來幾真材實料,找一天下午,買了一件當午餐。照同事的指示,先叮熱,再放在多士焗爐烘香表面就食得。薯仔批是一片片的切片薯仔疊成,吃起來又稔又香,但薯仔味不算很濃。同樣不算濃的是芝士的味道,以為吃起來很重味,原來還要下鹽來吃,才更可口。吃到有藍芝士,還有羊奶芝士的羶香,感覺很「家常」。雜誌介紹,這一味焗薯批學名叫「gratin dauphinois」,當然,寫完都唔識串又唔識讀。每客二百克,盛惠48蚊,不要看只區區一磚,幾撐肚子的。薯仔迷,可一試。
