DALLOYAU的拿破倫蛋糕統絕對令人一試難忘!不是誇張,這個拿破倫的酥皮除了鬆化,還帶有香濃的牛油味。而中間兩層的吉士忌廉更是又香又滑,一入口,既感受到酥皮的鬆化,同時能感受到吉士忌廉慢慢溶入口中的幸福感。

最後,是桑莓蛋糕。它是眾多種蛋糕中口味最清新的一個。蛋糕面放上7粒桑莓,內層則有桑莓醬。酸酸甜甜的,留它在最後食,就像餐後一柸茶,令人回甘。

Dalloyau has a long history in France. They were the official patisserie of Louis XIV and the royal court of Versailles. Which is perhaps my most favorite part of French history. They even invented the opera cake. Yeah, I was excited!

Located in Ocean Center, the Patio area where Spasso used to be. When I arrived, I was greeted with a bonjour and a bow. I noticed there was a dining area and asked if I could order a cake and dine there. The lady said no, I had to order either their high tea set for two or a macaron and cake set for one. As I was by myself, I ordered the macaron and cake set. For $168, you get two macarons, one cake and coffee or tea.

The cake shop is outside the cafe area. The cafe is very simple, a long sofa, few tables and a bar area where the barista is.

I ordered an opera cake as that was what made them famous in France. When I was in Paris, I didn't order their opera cake but their tarte citron as I don't like chocolate and love LOVE tarte citron. So, I decided to try the opera here in Hong Kong. I asked for a macaron to complement the cake and the hostess suggested a tart flavor like citron. I chose that and orange blossom as I love how the French use flower essence in their pastries.

The opera cake was amazing. This from someone who doesn't like chocolate. The top layer was a thick slice of dark chocolate. It was layered with a rich, moist coffee soaked sponge cake and a rich smooth coffee cream. This is how an opera cake should taste like! Yes, the size wasn't huge, but it was perfect.

The macarons were tiny. Even smaller than Laduree. But the flavors were intense. The cookie was crisp, yet soft. It was dry to the touch. The ganache filling smooth. It wasn't overly sweet. They were divine.

I ordered a cafe latte and it came in a small coffee cup. This was fantastic French roasted coffee. It was smooth, rich and strong. With just the right amount of foam. Good strong coffee makes me sleepy and this did just that. It felt like I was taken back to Paris.

I noticed there were some French people there to over see operations. One of them spoke to a French couple seated next to me in French to ask how they liked it. Hopefully standards will remain high when the French leave.

Leaving, I was greeted again from the hostess with a thank you (what? no merci?) and they bowed as I left.

I will be back.

Saint-Honore Chantilly賣相美麗觸目,雲呢拿忌廉帶點雲呢拿籽,焦糖泡芙表面泛起亮光,令人垂涎。嚐一口,忌廉軟滑輕柔,含豐富的雲呢拿香氣,伴著沾上脆焦糖的泡芙來品嚐,中心灌滿美味Chiboust cream,入口軟軟甜甜,軟、脆的對比分明,雲呢拿和脆焦糖的香味自然又濃郁,讓人一吃難忘。

First on the list, the “Delice Du Chef”, consists of Almond Genoise, Raspberry Compote, Supreme Vanilla Mousse, and fresh Raspberries. It looked delicious at first sight, however, the red and pick outer layer of sponge cake was on somewhat of the dry side, although it tasted good and not too sweet. The highlight to the “Delice Du Chef” was the very smooth and delicate Vanilla Mousse, as well as the crunchy Almond Genoise. First on the list, the “Delice Du Chef”, consists of Almond Genoise, Raspberry Compote, Supreme Vanilla Mousse, and fresh Raspberries. It looked delicious at first sight, however, the red and pick outer layer of sponge cake was on somewhat of the dry side, although it tasted good and not too sweet. The highlight to the “Delice Du Chef” was the very smooth and delicate Vanilla Mousse, as well as the crunchy Almond Genoise. Finally, since the “fresh” Raspberries were glazed, they were beginning to wilt a little bit but at least it was still sweet. Overall, paying a little bit more attention to the Raspberries’ freshness and the cakes moistness would have been perfect.
Next, the “Saint-Honore Chantilly”, with Caramelized Choux Pastry on Sweet Dough stuffed with Vanilla Chantilly, than topped off with Chiboust Cream. The Sweet Dough was delicious, a bit on the sweet side but needed to add the crunchiness when one bite into it. The Chiboust Cream was light and fluffy, just right to complement the crunchy dough. Looked simple but very satisfying, goes great with a good cup of coffee.
Next up, the namesake “Dalloyau”, made with Almond Meringue, Praline Cream, and Crushed Caramelized Hazelnut. The Crushed Caramelized Hazelnut was sweet and delectable, almost wanted to lick the plate clean of its bits (sit Scooby sit), the Almond Meringue and Praline was just perfect accompaniment to the Crushed Caramelized Hazelnut. Overall, this was simply delicious.
Here’s the “Tartelette Au Citron”, with Sweet Dough, Lemon Curd, and Confit Lemon Zest. Looked simple enough, however, the Lemon Curd is one of the more challenging aspect to this dessert, it had to have the right combination of sweetness as well as little bit of sourness mix in with some tartness. Ah, the Chef mastered the Lemon Curd with just the right combination, the Sweet Dough Tart was perfect, one can eat this without utensils because it was so good as well as easy to pick up, but again to be civilized utensils are recommended.
Finally, the one everyone is talking about, the “Opera” made with Coffee Jonconde Sponge, Coffee Cream, 70% Chocolate Ganache, and Chocolate Glaze. Saved this one for last because so many people are talking about it, well actually it went down first, just reviewing it last. The Coffee Jonconde Sponge was moist and delicious, the combination was just perfect. Had different variations of the “Opera” elsewhere, must admit this one was my favorite. Don’t know how to describe it, I’m sure other chocoholics and coffee lovers out there know what I mean.

Paris-Brest $48: 9分, 另外一款甜點就是Paris-Brest, 泡芙的質感很鬆軟, 中間的就是榛子忌廉以及焦糖. 很喜歡輕柔的焦糖, 跟香濃的榛子是很匹配的組合. 這客Paris-Brest, 層次分明, 愛吃榛子的朋友, 準會比那榛子忌廉迷倒了.

Online reports indicated that the former head pastry chef of Petite Amanda, Matthieu Godard, has been appointed as the head pastry chef of Dalloyau Hong Kong. He now has the daunting task of pleasing the taste buds of every Hong Kong foodie with some of the finest French confectioneries.

The Dalloyau boutique is divided into three different sections. The first section (facing the entrance) is dedicated to the macarons.

The second section features mostly fruit themed cakes and tarts while the third holds all of my personal favorites from the traditional French recipes including opéra cakes, eclairs, saint-honoré, mille-feuille and Paris-brest.

Dalloyau may be best known for its opera cake but their Dalloyau ($52) is equally impressive.

Le Dalloyau is a praline cake with silky smooth praline cream and delicate almond meringue. The texture was superbly light. I liked the fact that they have added an exterior layer of crushed caramelized hazelnuts giving it just the perfect contrasting texture.

Of course, we couldn't leave the place without getting their opéra ($58). This looked simple but the layering effects from the coffee joncorde sponge, coffee cream, 70% chocolate ganache and chocolate glaze did not disappoint.
