The sweetness of the caramelized onions blends perfectly well with the salty anchovies, making the latter’s umami pop😙.
▪️ Salade de petits pois
As a pea-hater, never had I ever imagined that I would be impressed by a green pea dish! The green peas here are extremely fresh, imparting loads of natural sweetness to the salad🥗. The earthiness of the poached egg did a great job in connecting every single ingredient of the salad together!
▪️ Escargots rotis au beurre persille
The escargots have a tender center and slightly chewy crust, while the garlic and parsley adds great flavours to the dish😋.
▪️ Aioli de poissons
The monk fish is seasoned with kimchi-like paste, which is surprisingly good. However, the boiled veggies are quite blend in flavour and the fish is a bit rubbery.
▪️ Profiteroles
The vanilla ice-cream is milky and smooth, but the puff pastry is a bit dry and not flaky enough🥐.
