近排天氣咋暖還寒, 凍下又熱下凍下又熱下, 個人作病, 連搵食都無心機, 某天傍晚路過了灣仔, 見到聞名已久的十三座牛雜, 想黎個份量少少的晚飯 來一個牛雜小碗, 每樣部位都有兩三件, 這間店子只有三四個企位, 站在店子堂食很是擠迫, 每人也來去匆匆, 令我不期然也加快進食起來, 老實講, 牛雜不怎特別, 加上黃色的芥末和紅色的(甜醬?)味道只是一般, 牛雜是炆得夠淋, 但味道不夠濃香也不算入味, 價錢也偏貴, 連底部的兩舊蘿蔔也不索味, 當然不是難食, 但也不怎出色哦, 小小的一碗就要二十多元, 令我懷念起廟街的牛雜, 味精是多了點, 但分量十足, 還有地道的風味.....是十三座遠遠追不上的

食完西餐回家搭車時,竟然見到十三座牛雜,當然要買一碗試下.未賣牛雜之前,買了一串魚蛋,魚蛋是細粒的,最愛魚蛋唔會好淋好彈牙又夠魚味,十個好味.只是6元只得6粒,平均要1元1粒.今次是買30元的小碗.由於沒有一個部位是不吃的.所以全部要晒.牛肚,牛肺全部要晒.睇過飲食雜誌話牛雜是用新鮮的,並唔係用雪蔵的.食落又好似好味點,最愛牛肚夠淋.牛腸雖然肥肥地,只是個人覺得唔肥的話又唔夠好味道,牛肺本人略為粉了一點,我鐘意軟軟地又唔太粉.主角滷水汁唔太味夠,淡了少少唔夠鹹味.個人覺得送的辣醬和芥末醬,吃牛雜時可以不下,落了反為影響味道.這兒的好處是可以揀要食乜唔食乜,咁就真係太好,唔洗唔喜歡的部位也一定要吃啊

09.10.04 13座牛雜@灣仔從北角走到中環坐渡輪在灣仔某小巷發現一個大大的招牌 – 13座牛雜原來除了北角,灣仔也有分店而且店面很光鮮呢個人不喜歡吃牛腸及牛膀要了一串淨牛肺及肚店員把剪好的牛雜用竹籤串成以長鐵盤盛著,再淋上點滷汁在調味架上自行加上超多的黃芥末及甜醬這樣吃牛雜才是正點!牛肺跟肚都滷的香軟入味滷汁味道不算很濃郁,卻能帶起牛雜本身的牛味牛肺軟卻不失咬勁,也沒羶味是我吃過太子旺角等多家的牛雜中,滷得最好吃的!牛肚軟得入口即化但過軟的牛肚反而像在吃一坨不知道什麼東東似的這個反而爽脆一點會更好沒有座位,充滿街頭風味的立吃牛雜乾淨衛生卻又不失風味一串8塊,個人覺得很值得!詳細食評及照片請看:http://hk.myblog.yahoo.com/foodiebarbie/article?mid=1988

在灣仔某小巷發現一個大大的招牌 – 13座牛雜
原來除了北角,灣仔也有分店
而且店面很光鮮呢

個人不喜歡吃牛腸及牛膀
要了一串淨牛肺及肚
店員把剪好的牛雜用竹籤串成
以長鐵盤盛著,再淋上點滷汁
在調味架上自行加上超多的黃芥末及甜醬
這樣吃牛雜才是正點!

牛肺跟肚都滷的香軟入味
滷汁味道不算很濃郁,卻能帶起牛雜本身的牛味
牛肺軟卻不失咬勁,也沒羶味
是我吃過太子旺角等多家的牛雜中,滷得最好吃的!
牛肚軟得入口即化
但過軟的牛肚反而像在吃一坨不知道什麼東東似的
這個反而爽脆一點會更好

沒有座位,充滿街頭風味的立吃牛雜
乾淨衛生卻又不失風味
一串8塊,個人覺得很值得!

The texture was a bit like that of beef tendon (sinew). My favorite out of the five.

The sauce base is really strong; it smells like the Chinese five-spice.

An array of condiments are placed on the counter - mustard, chili sauce, sweet sauce and something else that I forgot

Takeout is available - the lady put the beef parts (or whatever you order) in a small plastic bag, enclosed by a bigger plastic bag with a wooden stick for your convenience.

A nice occasional treat - think it would be better paired with hot steaming white rice to balance out the rich flavors.

Had to get a snack and came to this place. Ordered1) 牛膀 - too spongy and soft, did not maintain any of its distinct texture.(2) 草肚 and 金錢肚 - similar texture as above. As it was early evening, they probably had the innards in for too long, so that they are becoming a cauldron mixed innards instead of retaining the separate pieces. Flavour-wise it was quite ok though. $8 a skewer is a bit steep for this kind of quality. Still, it did the job of giving my stomach something to do.

I never was going to review here just to add another score to my 'review' tally - but I found the quality of the 牛雜 in this Wanchai outlet varies too much compared to the Northpoint store. Ordered the $8.0 牛雜 twice before from this store and both times tasted slightly dissimilar yet too strong. I never was going to review here just to add another score to my 'review' tally
- but I found the quality of the 牛雜 in this Wanchai outlet varies too much compared to the Northpoint store. Ordered the $8.0 牛雜 twice before from this store and both times tasted slightly dissimilar yet too strong. Got the following on both visits -
草肚 - Due to sauce being too strong, this absorbed too much sauce.
大腸 - Overcooked, the exterior intestine coating was becoming soppy.
金錢肚 - Overcooked and over soaked. Texture was like a wet cardboard.
牛膀 - Overcooked, not crunchy anymore. Not good.
牛肺 - Original gamey flavour intact, unlike the ones I've had in Northpoint... but ultimately texture over cooked again.

I don't understand why the Northpoint store has much better consistency, nor why 2 chain stores run by 2 brothers (I think?) would have such variations, even if they need to top up the Master Stock once in a while, they should have someone do a taste test. And what is there no 牛柏葉 here? I can understand it in other stalls or restaurants, but for someone selling 牛雜 they should have the full deal. I want to eat all 4 parts of the cow's stomach haha!



On a side note, it was funny to have the lady customer standing next to me query one of the staff what each organ was on her plate - and the staff made a bit of a silly blooper by pointing out the 草肚 as 金錢肚, after the lady had already eaten the 金錢肚 as her 1st piece already. If I as the customer can't work it out, its fine as its not my specialty, therefore I'm entitled to ask questions to clarify - but I ought to think the staff should know about it


Low-mid '3' for here twice personally.
Northpoint store = mid '4' - low '5'.

一直無留意這裡有間十三座,原來已經有半年歷史了。在附近買了些材料,有點餓,聽到剪牛雜聲,忍不住口買串來「立食」,靚姐很「謹慎」落刀,等了好一會才有得吃,牛膀炆得粉軟、牛肚有微微彈性有淡淡滷水香、牛肺腍而不腥、牛腸已去膏很健康但不好吃,出品與北角的質素不相上下,是「中央」出品的好處。

「味道」大滿足,但「聲效」則有點失色,因為傳統牛雜檔的招牌較剪鏗鏘聲沒有出現,那種雖然手中沒牛雜,但較剪仍然鏗鏘作響的「5.1聲效」,絕對是牛雜檔給顧客的另類娛樂。

是日收工經過灣仔,也路過吃一吃此人氣牛雜店。其實在以往的食評也提過,本人對牛肝牛膀是不大感興趣的,主修的都是消化道的部份,所以今天來了一串牛腸及牛肚。在等候其間,也拍下為人所熟悉的剪牛雜影片,那鉸剪的交錯相碰的聲音簡直就是牛雜店的商標,而且在份量上每個部份也下適當的控制,下得很均衡的,而鹵水的香味在此時已進攻着我的嗅覺了。我點的牛腸及牛肚有得吃了,八元一串,腸肚各有一點,但腸好像少了一點,只有兩段,但它們也是被濃濃的鹵水泡製過,非常入味,而吃下的口感是牛肚爽爽的,而牛腸的表面煙韌無比,加上在其內的牛脂,咬下是很好吃的,另外加了芥辣及辣油,更好吃。好吃是好吃的,但唯一的疑問,是為何每次的牛雜也只是暖暖的,而不是熱騰騰的呢?

可能一輩子也提不起興趣食牛雜,但仍會有興趣寫寫它的食評。 Angelini飽餐後,肚子飽得不得了,會合到的龍卻仍然空虛;在灣仔睇完帖,首先就是來了這裡陪他醫肚。一早提醒他這裡的牛雜很好吃,一吃之下他仍然look大了眼,反應一如年多前首遇肥姐;這種驚艷的感覺,值一個笑臉真是錯不了的。 不過也一如肥姐,這是我雖知美味,也不會去試的食店。反而很有興趣去隔壁的豪華咖啡茶廳,食多士及紅豆冰...今次太飽了,下次吧!

路經灣仔,當然要去試一試牛雜。看見之前食評有人寫話大多女生都不吃內,覺得幾有趣,唔明點解d人覺得食內臟好核突。我一點都唔覺核突,好味就得啦!不單是女生不食,就連一些男生也覺核突!核突得過男仔鍾意食嘅雞子!十三座牛雜好就好在可以任揀部位。我就要了膀同肺。人生一大享受也!$8一串實在唔貴。牛肺入味,無異味,而且仲帶點爽口。牛膀更勝一籌,入味之餘,仲已經炆到好淋好粉,好正!如果有機會會試埋其他部位!

apr 17, 09,喺呢頭附近逗留,帶埋友人嚟"篤"番串 : 1) 淨金$$$肚 (@hk$8)-友人望咗店員剪吓剪吓1陣,決定食淨肚,仲要求要腍d-望落都幾唔錯吓喎-因友人食得比較偏淡,所以就會兼鹹咗少少-佢話都夠腍同幾好味 2) 牛雜 (@hk$8)-我就因為想嘜都試吓,所以就叫咗雜-嘩,個樣都幾醜惡喎,莫非隔離飯香,都喺覺得友人嗰串好樣d喎-有膀,腸,草肚,沙瓜同疑似肺掛??-膀比較粉,非個人之喜好,所以下次1定飛起佢-腸都幾肥吓,有1舊中間仲滿佈肥膏,我平時唔多會食,但都照擺入口啦,好在又無我想像中咁油膩喎-呢個草肚就比較薄身,所以無咩口感,食完都唔覺-沙瓜就厚身d-整體幾入味,我就唔覺得過鹹喎,反而可以再濃味d,會惹味d,全部都好腍- 喺度等緊買之時,見有店員好專業..........向我前面嘅客介紹邊舊沙瓜帶腍,邊舊就會帶爽.........邊舊正d,都喺好少賣牛雜會咁有耐性同你解釋- 其實佢哋個工場喺大坑.........有次經過,由出氣喉位飄出嚟嘅香氣..........真喺好想即場買串嚟食,但當然比可能啦,hahaha

不用落北角都有得食了.8蚊串, 每一串都包含每款一舊, 都食得過.都算入味, 但可再濃味點就更好.牛肚正, 加d 芥辣, 一流~一串唔係咁夠喉, 下次買20蚊一兜.
