💞整體來講
食物質素絕對冇令我失望,雖然唔係大玩菜式配搭/新奇獨特,但絕對能夠呈現甚至昇華各種原食物。不過無論係arcane/ cornerstone嘅菜色都令我覺得有少少西班牙中東影子,呢點令作為中東菜迷嘅我更加喜歡🥰

I don’t usually like artichokes but they made it easy to chew. The pie-like thing filled with mushrooms has a strong umami flavor.

2️⃣ Pan seared bavette with marjoram gremolata, baby carrot and spinach compote ⭐⭐⭐⭐⭐

Again, they used this pie crust element and it complements the rich and tender beef perfectly. The mashed potatoes add to the tender texture of this dish.

3️⃣ Morbier with pear chutney and lavoche ⭐⭐⭐⭐

Not a strong cheese but has enough flavor for cheese lovers like me. First time having pear chutney and it reminds me a bit of honeycomb.

So I’ve been to Moxie and cornerstone serval times, and I really like them. Decidedly to give It a try here for another experience. Well, we def had an amazing experience! Good food, good service, good accompany.The highlight of the meal were homebrew kombucha, Sautéed potato gnocchi with shiitake and the potato mille-feuille (details in below) omg Delectable!! P爺選了一份前菜,兩份主菜及一支香檳:
北海道帶子佐鮮芥榛子果仁醬,每啖也有不同變化。

香煎鰆魚配黑蒜醬, 鰆魚香脆可口,黑蒜醬香濃刺激。

炭燒和牛配露筍青醬,和牛牛脂飽滿入口鬆軟,配露筍醬口感千變萬化,由舌頭至口腔,再送進喉嚨也可深深感受,慢慢享受食材帶來的衝擊。

二人埋單也只是$2000元,高水平的驚喜。

I booked this restaurant before but canceled it as the menu was not attractive. Unfortunately despite the National Day Holiday the menu remains unattractive. They can ask for a surcharge for steak but my fault, I should have double checked before I came or left without ordering any food. A lesson to learn. There is no choice of bread. The waiter has only left a piece of bread on my plate which is not the standard of a Michelin starred restaurant😔My husband said that the butter is good though. Ar

My main course came- being 2 pieces of decent sized chicken breast, covered in bits of sweet corn and some charred cabbage. On the side were 2 flat quiche-like triangles, which were crispy on the outside. Loved the chicken breast- very tender, went well with the jus gras (translates as "fatty juice"), being the dripping and gravy in the bottom of a roasting tin. Cabbage tasted a bit charred for me tho.

Friend’s main course was the roasted cauliflower with chickpeas, kale and imam bayildi. Imam bayildi is a Turkish dish consisting of whole eggplant stuffed with onion, garlic and tomatoes, and simmered in olive oil. Very wholesome.

We came here for dinner to celebrate for one of my good friend's birthday.  I was excited when the birthday girl told us she wanted to try this 1 Michelin 🌟 restaurant. Perfect, it was obviously on my list too! 

 
Upon entering the restaurant, I could already see Chef Osborn and his team busy at work in the open kitchen. My attention was focused in that direction the entire night. Watching the chef preparing our culinary experience in real life was surreal!  
 

We were so lucky that we got to meet him and chat with him in person too when the night was less busy! 
 Big fan girl night for me for sure.

All four of us ordered the 5-course Dinner Tasting Menu.  It included Tomato & Olives appetizer, Ceviche, Gnocchi, Wagyu beef and Desserts.   Everything was so delicious!! 
 We ordered all the different types of desserts to share and particularly loved the Apple Tarte Tartin. 

What a delightful evening with great food and company! We all highly recommend this place!

我相信好多人都會食11Westside同Arcane
前者食完好開心 仲再encore左2次
但呢間就真係1次就夠

最後,我並唔係要負評,只係覺得唔岩我口味,道道菜都好濃味,成個Tasting menu 由頭到尾無起承轉合,食唔到誠意。如果Tasting menu 係代表一間餐廳同廚師,我覺得真係要微調一下,唔好浪費優質食材同客人嘅時間。可能我唔識欣賞,但哩個價錢,大概$1700 一位,絕對有其他選擇。

Ultimately, it comes down to a willingness to keep taking risks to be able to spot the small handful of serious kitchens and catering teams that consistently strive to deliver a solid experience with originality, even if that effort isn’t profit-maximizing for the restaurants in the most direct way.

After our first visit to Cornerstone, we continued to lunch there once a week on four consecutive weeks despite a menu that never changed. How could we, then, not pay Arcane—also with Chef Shane Osborn behind it—a visit? It turned out to be a more than decent find. Though it was somewhat on the pricier side, I thought it offered something refreshing from repetitious and uninspired menus.

The generous use of herbs and vegetables and bold ventures in mix-and-matching cross-cultural cooking styles are a prominent theme that runs through the various options on the menu. Many a high-end restaurant experimenting with their version of nouvelle cuisine have descriptions of dishes showcasing a range of uncommon ingredients to impress, but at Arcane, I was surprised by how well they actually turned out. The flavors are lively and vibrant. Seasoning is light and playful. Plating is, naturally, carefully considered for maximum aesthetic pleasure.

While the kitchen is more or less open, tables are generally placed away from it and one would probably hesitate to walk up and enjoy the action. Nevertheless, being the only table served during the first half of our meal, and with dishes taking longer than usual, our restlessness was spotted by one of the chefs who kept looking in our direction to check on our status and it was evident that he was moving as quickly as he could to ensure a less painful wait for our hungry tummies. I very much appreciated that.

Hospitality was solid. Servers were amiable and polite. With a 10% service charge, tap water and hot water are freely available. The ambience was more or less formal with a touch of casualness that would suit most occasions. The terrace also offers a few tables for those who prefer dining outdoors.

This was my perfect kind of starter: lightly seasoned seafood, ideally raw. But it also looked gorgeous, and had a number of delightful ingredients. The lovage gave the fish a pretty unique flavor and the charred lettuce and broccoflower were a great companion for the delicate rainbow trout—sweet and crunchy. Horseradish and smoked dashi lent the dish an extra depth that was memorable.

These scallops were more tropically flavored with a bit of spice and zest. Coconut and coriander cream gave the meaty scallops an even fuller and more pleasurable mouthfeel. It made me feel like summer.

I love the earthiness and firmness of venison (oh no, am I eating Bambi?) and as it doesn’t make a frequent appearance on menus in Hong Kong, I have to get it when it does. The loin was nicely wrapped in a coat of parsley crumbs, the flesh still moist and not the least bit dried out, and the bed of imam bayildi that I don’t dare indulge in (due to its incredible calorie density) was dreamily scrumptious. I didn’t think I needed the dollops of yoghurt, but the whole make-up of the dish did seem to be a conscious adaptation of Middle Eastern flavors which, I thought, was a welcome attempt.

This dish was somewhat less of a star, but the short ribs were still meltingly tender, accompanied by an intense jus and generous helpings of vegetables. I would like to think that a non-wagyu cut would be more flavorful, as braised ribs are going to be very tender anyway. But the dish was satisfying enough in any case.
