嘩!觀塘區有米芝蓮,除了MIC Kitchen外,最近位於法國西南部鄰近巴斯克地區的BriKetenia最近在這裹設店!雖然還沒有受到香港米芝蓮的賞識,但就為了本來變得熱鬥的觀塘更加光芒四射。突然很喜歡觀塘區這個工業區,回顧這一年也開始走入這個工業區找吃的,有寫了出來的Bella Shine及Coffee Art Cafe,有沒有寫出來的K2 Kitchen及Genius,當然還有很多隱世美食沒吃得到,希望將來可以盡試美食。這一次BriKetenia主打摩登的法國餐,以米芝蓮的名氣在觀塘設店,價錢一定較大眾化,最便宜也只不過是三數百元,幾乎每一個人都能夠負擔得起。聖誕節氣氛濃厚,但這裹還沒有聖誕大餐可以選吃,所以還是吃他們的Set Dinner,Set Dinner也有特色,單看頭盤便略知一二。Set Dinner可以選擇點兩道菜,三道菜及四道菜,價錢由$288到$428不等,如果大家想點較名貴一點的食材如龍蝦湯及和牛肉眼扒可以再加錢點吃,無論兩道菜或四道菜Main Course跟Dessert都是固定,其實對於Dessert興趣不大的筆者其實想點三道菜,奈何這樣就要放棄Starter

Set Dinner可以選擇點兩道菜,三道菜及四道菜,價錢由$288到$428不等,如果大家想點較名貴一點的食材如龍蝦湯及和牛肉眼扒可以再加錢點吃,無論兩道菜或四道菜Main Course跟Dessert都是固定,其實對於Dessert興趣不大的筆者其實想點三道菜,奈何這樣就要放棄Starter或Soup其中一樣,或許這就是法國餐廳的特式吧。

先來的當然就是Starter頭盤,一行三人都選了這個溫泉蛋伴法國火腿 (63'C Egg with Bayonne Ham),賣相真的非常可人別緻,溫泉蛋煮得恰好,流心非常,蛋白不會太厚,配上蘑菇及蘑菇汁料,整個味道夠香又滑又可口。但所說的法國火腿份量很少味道也完全不重,這部分比較失色,相反表面的兩塊脆片很有口感不錯的吃。

之後來到餐湯,合共點了兩款餐湯,先來一下忌廉栗子湯 (Cream of Chestnut Soup),很少看到西餐廳用上了栗子做湯,大部份都是配上蘑菇或南瓜。而這一個忌廉栗子湯配合得出奇地佳,原以為會有帶一點中式,湯喝起來很香滑,表面有一點起泡,味道帶一點甘甜。

到主菜部份當然所有都不同,先來一個常在法國餐廳吃到的油封法國鴨腿配新鮮時蔬 (Confit Duck Leg with Baby Vegatables, +$30),這個鴨膩外皮成金黃色,內裹的肉非常粉嫩,有時怕吃到鴨腿火喉控制不好肉會很老很乾,但這一個火喉也控制不錯不會有很乾的感覺,整個菜式不會太油膩,再配上很軟滑的薯蓉好吃非常。

再來的是西班牙黑毛豬扒配薯茸 (Iberian Pork Chop with Mashed Potatoes, +$50),這個黑毛豬應是餐廳受歡迎菜式之一,筆者還未人齊的時候餐廳已跟筆者說只剩下一份問要不要為筆者留著,可見一班!平常很少點豬扒來吃,一來怕太乾太老,二來多數有雞和牛作為其他的選擇。這個西班牙的黑毛豬真的美味非常,份量不算多,豬扒帶有脂肪,而且不知怎樣煮得吃起來帶一點濕潤感覺,肉質鮮嫩得很,一咬下肉汁都跑出來,配菜有蘑菇,薯蓉及時蔬,怪不得這麼快便賣光。

最後是香煎帶子燴意大利飯配黑松露醬 (Pan Fried Scallop Risotto with Truffle Paste, +$30),這個意大利飯令筆者喜出望外,一向吃的意大利飯不會是這樣的,意大利飯像被壓平的一樣,原以為他們把意大利飯拿了去當蠔餅一樣去煎,但用器具一夾,飯帶上了很多的忌廉汁夾雜著黑松露的香味及味道跑出來,吃起來飯不硬非常可口,有很Creamy的感覺,整個飯非常討好開胃,香煎帶子有三顆,比一個五元港幣要大,不過重點目光都放了在意大利飯上,十分好吃。

最後來到甜品,是筆者覺得失色或不懂欣賞的地方,先來的是椰子忌廉配青蘋果雪葩 (Coconut Cream with Green Apple Sorbet),整個賣相都很花盡心思,由青蘋果絲而成,青蘋果吃起來頗酸的,但筆者還是能接受,可惜椰子忌廉及雪葩愈吃愈鬆散,原本已沒甚麼味道,質感更像一些正在溶化的忌廉一樣,並不討得筆者歡心。

最後的是拿破崙蛋糕配紅莓醬及雲尼拿雪糕 (Mille-Feuille with Vanilla Ice Cream),這個比之前的椰子忌廉配青蘋果雪葩好得多,或許這是比較大路的法國甜品蛋糕。拿破崙蛋糕吃起來還算脆,中間夾雜著五顆奶油,上方放置了雪糕及紅莓醬,甜中帶有不同的層次感。

Whenever we have some good news on the business front, we celebrate at a restaurant like Briketenia. We started with Oven Baked Scallops with Mushroom and Mornay Sauce. We started with Oven Baked Scallops with Mushroom and Mornay Sauce. The shells were of decent size and the taste and texture of the scallops complemented by the mushroom and Mornay sauce was sensational. It's a pity there were only two but hey, there was more to come.  

Slow Cooked Octopus Carpaccio with Crispy French Baguette and Green Salad was nice but not a smart choice on that specific day given the fact that the crispy and waverthin baguette slices was too heating (熱氣 yeet hay) for my mouth.   

Fish of the day was salmon which was baked to perfection and served with french beans and baby carrots as well as some potatoe puree. 

The Boston Lobster Linguine with Asparagus, Fennel and Lobster Bisque pleased us greatly and transported us to Mediterranean regions, while in fact we found ourselves in an old industrial area in Kwun Tong that rapidly being unindustrialized. 

We treated ourselves to two more desserts (not included in set lunch, HKD30 each), namely a coconut creme with cucumber and a crème brûlée. After all the custard puddings with a caramel experiment on top that did not deserve the name crème brûlée, this one at Briketenia was spot on. The creme was nice and creamy and it was tastefully contrasted by an ice-like layer of caramalized sugar.

最後我們還加了$30吃甜品,除了面頭那一塊脆餅覺得不錯外,其他就只是覺得甜甜的,不知道自己吃了什麼,也沒有特別深刻的印象。

機乎所有西餐都有麵麥包等提供,水準各有高低,先評一下呢三仲分別係薄身穀物脆包、麵包及麥包,全部高水準!應軟的鬆軟,該脆的薄包脆口,全部新鮮!特別要提下個麵包醬,以蛋黃醬及鯷魚為骨幹,再配以一些估計是燈籠椒嘅材料打成; 蛋黃醬嘅濃郁香滑加上咸鮮嘅鯷魚,佐以新鮮麵包,味道一流!午餐時段嘅麵包都可以無限添食,正宗西餐嘅serving custom ,好!再來一份。

前菜賣相好到!!!法國雞肉配鵝肝燉蛋伴鮮菜沙律,舊幾水嘅午餐竟然搞到件藝術品咁樣。中間黃色嘅法式蒸水蛋口感幾似custard , 雖無中式水蛋咁滑,但蛋味同鵝肝本身好夾,而鵝肝嘅厚重無疑係減低左水蛋滑漏,但整體而言味道口感係非常精緻。沙律菜非常新鮮脆口,如果可以俾多啲就好啦!特別要講一件事,當我食完餐飯走咗,睇翻影午餐餐牌張相,覺得有啲唔妥,明明叫左法國雞肉配鵝肝燉蛋配鮮菜沙律,但係点解冇雞肉嘅!!!拜神唔見雞就話正常遮,食法國餐冇多到舊魚不特止,仲冇埋舊雞!正所謂有圖有真相,下次去食一定有攞翻我應有嘅雞!

到上主菜啦,又係朋友嘅上先,法國藍青口配意粉及香草醬汁,馬上攞隻青口食,一食,不得了!嫩滑冇渣、鮮甜、爽口!用左白酒同羅勒去煮,絶配!藍青口食過好多次,口感普遍都係冇渣、鮮甜及爽口,但嫩滑就應該講唔上。咁香草汁意粉又點呢?意粉正宗Al Dente,粉深有一髮糸嘅部份未熟而外層軟滑。汁都應該係用羅勒造嘅,羅勒配海鮮、白肉同麵食(即好似薄餅同意粉之類好正),所以我住嘅村屋後院都種左盆,餣白肉就放幾片切碎嘅去提味,效果一流!

我個燴黑毛豬面肉到喇!賣相冇得彈,用紅酒燴嘅所以黑色,個人覺得望上去似牛面珠多過豬面珠,一切落去已經感受到果種焾滑,內裏充滿肉汁。食味方面,可能食完青口之後對呢個主菜有過份期望反射,沒有我想像中咁好!個人覺得黑毛豬肉本身肉味甘香甜美,用少量香料烹調最為味美,用紅酒煮反而會蓋過豬嘅肉味。燴嘅手法好好,肉塊外面唔鞋,肉心充滿肉汁,加番分。配菜薯蓉好正,充滿牛油香味,係我哋呢啲肥仔嘅欣物!

好戲在後頭,甜品時間!是日甜品係啤梨撻配啤梨雪皅。酥皮好鬆脆,中層饀料係啤梨醬,面層係用糖煮過嘅啤梨,兩層唔同酸度嘅啤梨同酥皮產生左微妙嘅化學作用,味道好豐富。面層上面嘅雪皅最有啤梨香氣,但味道最淡,一個梨撻有三個唔同嘅層次同味道,極品!最後要一提係條開心果曲奇條,用來當匙羹食雪皅,一啖食落口兩種享受,冇得彈!

總結: 地方清潔寬敞,食物質素性價比一百分!特別有一提係佢地嘅服務質素,依家香港地其實好多小餐館都有好出品,但侍應嘅質素好多都麻麻地,特別係如果問一啲有關菜式材料或者煮法嘅問題,都無言以對; 但喺呢度我分別問左一啲關於食材同煮法嘅問題,侍應哥哥都能一一應答如流,真係好值得加許!實在非常專業。

其實這個是重寫的食評,上次用餐後就upload過吃後評語,但石沈大海....今天收到餐廳的信息介紹新menu,主廚是有心人,決意再upload!第二次去光顧了,第一次是慕名而去的因為從雜誌看了他開這間餐廳的故事,那晚吃了他很多signature dish,雖未至很大驚喜但吃得出製作認真用料絕不馬虎,如此質素同價錢在同區不易找到,因為觀塘區時有新店,但好多時吃過一次以後就不會再去因為叫人失望的太多。第二次呢,是午餐時份,人不多,安排了我們一群人坐在open kitchen前的長枱,可一邊享用午餐一邊看廚房的忙碌情形,午餐的餐牌選擇很多,那天中午我們都吃得很開心,由頭盤主菜到甜品無論賣相與味道製作都很認真,也吃得出用料新鮮,而主廚"親自出馬"製作的部分也很多,這個情況不是常見的,最後還特地走過來問我們意見,親切的主廚Walter Lok確為這個愉快的週日午餐加了分。總括來說,Briketenia不是叫人驚喜的餐廳,但個人覺得能保持穩定的水準是留住客人的一個重要原素。

A happy friday lunch with my colleague, we called to reserve few days in advance and staff said they have dress code in smart causal. Then, we expected the restaurant is in high level in deluxe environment. We came on time and the indoor environment was under our expectation.

First of all, all chairs and decoration looked like a local Chinese restaurant but not a western style and it didn't have any luxury feel, just old decoration. Unbelievable we should have a dress code for this restaurant, not understandable.


Secondly, we ordered the same set lunch in french style mushroom and spanish omelette, but it came in chinese style pan-fried egg omelette. This is not a problem even in Chinese style, however, taste was really bad. The egg was not smooth and a bit salty, mushroom was like a can of mushroom to stir fried with the spanish and egg. Oh dear, how much this worth for $150 a set lunch for this.


The starter we chose chicken breast with green salad, this is even worse than what we thought. Green veggie wasn't sweet and perhaps not fresh. Lots of vinegar, it made the salad so sour and sour taste was too over. The breast chicken was harsh and no chicken taste at all.


We finally left the restaurant without ordering the drink as we wanted to try something nice on a happy Friday for lunch. We then went to somewhere instead. This is a regret lunch for me and my colleague. No next time.

Staff did ask us why didn't finish the dish, we did tell them the problem but that was. They didn't replace anything for us or explain why the starter or main course has those problem. Anyway, just not recommend to try. A Friday should treat ourselves nicely.

甜版的Creme Brulee吃得多,鹹版的則很少;這份則是用了foie gras來造的,頂層是脆脆的焦糖,而焦糖下的鵝肝醬則是很棒,質感creamy,肝味濃郁,怕太膩的可塗在脆包上伴吃,但我覺得就這樣吃就好了。

吃了這麼多後,看到這片厚厚的鵝肝真的有點膩呢,似乎我的食量細了很多呢。先說鵝肝,煎得不錯,不會很油,鵝肝味濃郁;而底下的牛柳則有點遜色,牛柳肉質是軟的,但這款牛柳點牛味欠奉呢。

最後當然要試試signature dessert,很美的賣相呢;那三粒是puff來的,中間夾著雲尼拿雪糕,那puff對我來說有點硬呢,如果用上有雲尼拿籽雪糕則會更棒呢。

在法國是星星餐廳,來到香港,始終未是主場,有些因素未能相對配合,在港未必能同樣得一星,但與友人來聚一聚還是不錯的,畢竟現在還是free corkage,所以記得帶酒來。

Lunch 食成咗真係有d 唔好意思,不過唔食甜品又點可以叫係食法國餐呢?跟餐加$30 蚊,但呢個檸檬tart 一d 都唔止$30蚊,好清新酸味好適中,加埋上面嘅Pear ice cream,兩個味道夾埋好refreshing。又係一個會食上引嘅甜品

The location and the decor of the restaurant are not advantageous, no juicy element at all, my first impression is that it's very "Can-teen" (used to be in IFC) style.  I understood that they would like to build a down-to-earth element in Kwun Tong area, but still, they should keep the hospitality as long as the restaurant named under Briketania.  Service is so-so as well, the waiter just can't wait to clean up the empty dishes on your table the minute you finish the course, quite annoying indeed. After all, it's not a Cafe De Coral

We made the right decision to bring our own wine.  Corkage is $200/bot and they will waive the corkage if you buy a bottle from their menu.  Honestly, the wine selection is lousy and very much over-priced.  Hence, we'd rather open our own bottle.

This is probably the most interesting dish in the tasting menu, at least the combination is a good match.  The half done egg would never fail anyone and it's delicious with the lobster sauce and wild mushroom.

I could only taste the blackcurrant dressing as the sweetness superceded the eel.  Suggest them to tone down the dressing a little bit in order to bring the original taste of the eel.

Beef tenderloin rossini, foie gras, truffle and bordelaise sauce
We wonder why noone asked us about how we would like for the tenderloin, they just came to our table in medium format.  The meat is very tender but lack of beefy taste whilst the foie gras is crispy outside yet not juicy centre.  What a disappointed main course!

Honestly, I really regret ordering the tasting menu coz they didn't include the signature dish of the restaurant.  I did something silly, i.e. ordered another dessert which is said to be their must-try item - French chocolate puff with vanilla ice-cream.  I couldn't believe that's the only dish that really impressed me that evening.  I suggest diners to order a-la-carte to be on the safe side since the tasting menu doesn't really worth the buck you spend.
