在未接觸過印度菜時,我對印度菜的觀念,只覺得是一堆印度香料配上肉類再烤焗,橙橙紅紅的顏色,辛辛辣辣的味道;又或是咖哩孜然玉桂等聚在一起,總之要令到食材和濃烈的味道,聚首一堂而已。自從一年前女兒帶了我到尖沙咀一印度餐廳,嚐過人生第一餐的印度菜之後,我就起了對這國家菜式之好感,原來深層次的印度菜,有如此的精彩繽紛。Chaiwala 是我光顧的第二間印度餐廳。今天晚上,她帶我來到中環雲咸街,再次嚐到正宗由印度人以新派手法去演繹的印度菜。餐廳地方闊落,滿有地方色彩的擺設滿有印度氣氛,我們一坐下,被套餐的餐牌所吸引,價錢也算合理就點了。套餐裡有頭盤、主菜和印度餐的主角咖哩及甜品。前菜以印度文 Chaats 命名, 意思是“舔”,是將碟上最後的印度美食也舔盡落肚的意思。Street Food Chaats 有這店的 signature 是必嚐的 - Pani Puri with Jal-Jeera 這是一啖一口的空心脆米球,内裡有薯蓉與鷹嘴豆蓉作餡料,倒進帶酸味的孜然醬汁,是開胃前菜。Sakarkandhi Chaat 是煎香了的紅薯,加了紫洋蔥和鷹嘴豆等,再灑上酸辣醬、薄荷酸乳酪,又是酸酸甜甜的一味開胃前菜。Seafood Chaat 是有點像沙律的前菜,海鮮有大蝦和帶子,蔬菜有小蕃茄、羽衣甘藍和經過玉桂醃製的紅菜頭粒,以蜜糖芥末和masala作這沙律的醬汁,為跟著來的印度濃烈味道,作的頭盤。A taste from classic Tandoors,tandoors 是一個印度土窯爐。用這種爐來烤制肉類,今次就選了 Tandoori Lamp Chops 和 Chicken Tikka。烤羊沒羊騷味,外焦內嫩確是驚喜,而那香料烤雞是厚切,原先以為必會柴皮,但並不是,烤得仍然是嫩滑,是與土窯爐的火力陰柔有關吧。Classic Curry served along Rice & Naan。先來的是Railway Mutton Curry 綿羊肉燉飯,米餐廳當然是用印度香米,basmati rice是一種帶濃郁香味的長米,頗為特別之處是與我們日常吃的米有很大的分別。這燉飯不算太辣羊肉也嫩滑,印度香料帶出整個飯的霸氣。咖哩還有選了 Goan Fish Curry 和 Old Delhi Butter Chicken, 是純印度地區口味的咖哩,是剛剛好不太辣的咖哩,魚比較實肉而雞肉也是嫩滑配上牛油更加香味,是伴naan 和米飯一起吃的完美配搭。甜品有玉桂印度拉茶,茶味不太甜但我覺得港式奶茶濃味高一些,印度奶茶總算試過了,還是港式的好。Rasmalai, 是一種很有印度特色的甜品,將芝士奶球浸泡在甜牛奶中,加入了荳蔻,完全是印度風味一試無妨。另一個甜品是Mango Penna Coyta 即是心型的芒果布甸,味道淡淡以芒果甜醬配搭也算美味。總括這餐印度美食算合香港人口味,味道不算過份濃烈和辛辣,也合乎香港人脆弱的腸胃。

這次我終於揭開了中環雲咸街那座藍色磚牆和紅色門後的秘密,進入了一間充滿異國風情的印度餐廳。餐廳內每個角落都適合打卡,特別是那張懸掛乾燥花的長桌,氣氛熱鬧。Weekend Brunch 體驗我們選擇了全新限定餐牌,每位 $368,包含:- 三個小食- 一個 Tandoor Tower- 每位主菜- Naan 和 Biryani- 2小時無限暢飲(酒精飲品及 Lassi)小食Pani Puri with Jal-Jeera :外脆內軟,搭配酸醬,開胃不錯。Aloo Tikka Chaat :微辣的薯餅,內含鷹嘴豆和酸奶,讓我一試成主顧。Bombay Fried Chicken :酥脆無骨雞腿,香料味十足。Tandoor TowerChicken Tikka:經典烤雞,不油膩,超美味。Pink Salt Salmon:用喜馬拉雅鹽烤制,肉質細緻多汁,比 Chicken Tikka 更出色。Tandoori Gobi :外酥內嫩的烤椰菜花,意外好吃。主菜Old Delhi Butter Chicken:奶油醬汁順滑帶甜,搭配 naan,讓人一口接一口。Gosht Kofta Curry:辣味咖喱牛肉丸,肉質彈牙,風味獨特。Naan 餐後蒜香四溢,Biryani 飯粒分明,低脂健康。無限暢飲的 Lassi 有 Classic 和 Mango 兩種口味,簡直是我的心頭好,只可惜因為吃得太飽,未能嘗試香蕉口味。甜品:雪糕、乳酪同印度湯丸為這個豐富午餐畫上接近完美句號。

我不嬲都勁鍾意食印度嘢,呢間餐廳更加係之前想去過幾次,但係次次預早訂位都已經話俾人book晒,所以就算開咗咁耐,今日都係第一次真正嚟食,見到佢哋有全新登場嘅限定餐牌,就諗都唔諗就嗌咗!呢樣嘢就係佢哋個陶土鍋,其實佢嘅歷史,就係當印度喺英治時期,鐵路上嘅其中一款經典美味,都幾值得大家品嚐吓。呢個餐點其實平日嘅中午或者晚餐都會食到,基本上就係印度式嘅煲仔飯,加埋濃厚嘅咖喱味,呢啲咁凍嘅天氣食真係一流!而且我哋今日叫咗個羊,都真係整得好好食,羊肉整得滑嫩,而且好夠味。之後都叫咗個二人廚師發辦餐,基本上就係一個3 course meal,廚師幫我哋決定食乜嘢。我覺得最好食就係個chaat sald同pani puri,口感超級豐富!當然個fish curry都好正啦,美味辣味,食得出好明顯用咗好多唔同嘅香料去製造,味道好有層次感!至於飲品方面,嚟得印度餐廳,點可以唔叫mango lassi,呢度呢杯唔會太甜,而且口感濃密,更加用上矜貴嘅saffron做裝飾。
