上環摩羅上街最近新開了一間爐端燒店「仟穆」,主要以串燒美食為主,餐牌上有琳瑯滿目的串燒品項,有中文及日文字,空間和燈光比較昏暗,感覺好像去了日本的居酒屋。這裡除了可單點串燒外,亦有廚師發辦,廚師發辦(HKD680/1位) 包括沙律、串燒8串、雞湯烏冬及甜品。當晚每款串燒味道都很不錯,師傅在拿捏火力上相當到位。黑豚肉腸是必點之選,外脆內爆汁,有滿滿的油脂。黃油雞肉串外皮帶微微焦香,軟嫩多汁。雞皮串不是烤得酥脆的那種,帶有Q嫩感。我還蠻喜歡白鱔串,肉質紮實豐彈性,還保留到肉汁。免治雞肉棒混入刴碎了的雞軟骨,沾上醬汁及蛋漿一起吃,口感更幼滑。他們家的雞湯烏冬湯頭熬製了8小時,難怪湯色很白,濃郁厚稠帶有鮮味。廚師發辦份量真的可以吃到超飽, 推薦愛吃串燒的朋友來試看看。
