To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 【龍皇野菌腸】
原來不是這樣子的!
當年比賽是用新鮮斑腩起肉包在春卷皮油炸至金黃,再包米漿切件上碟。賣點說含有大量Omega3魚油健康元素。那時品嚐,外層米漿軟滑,中層春卷香脆,內層斑腩彈牙,魚油四溢,完全不需豉油增味。隨即詢問在旁老闆,用新鮮海斑入饌,豈不成本很高嗎?要賣多少錢才可回本呢?  現時版本改為加入冬菰野菌,反搶魚肉魚油鮮香。自己曾吃過最好的,現在容不下次一級的。還我原裝龍躉斑腩腸吧!!

【旋風奶皇包】
如果創作平平無奇的奶皇包又如何得獎呢?
各家工序全是一樣,都是將咸蛋黃加奶打漿冰凍切粒再包於麵團內蒸熟。但彩福就在外觀落墨,做麵團時中間夾一層竹炭粉,然後直切包餡。要每個奶皇包都成旋風狀,旋渦在包中心頂端,非常考驗點心師傅之紮實功力,講求手穩刀穩力準。看似簡單,但肯定市場上沒多間酒店酒樓可提供如此水準出品。餡料正常,剛出爐要立即食用,其餡仍在於溶液狀態。慢一點吃,便會受冷凝固失去流沙視覺享受。

今日諗住同兩老去飲茶。心諗依家多返人出嚟食飯,所以就大約十一點左右去攞位。去到已經有好多人等緊位,我攞飛要等成十幾張枱。大約半個鐘都只係入咗兩張枱。之後見到一家三口遲過我哋半個鐘嚟去櫃枱攞飛。嗰兩位明顯唔係本地人嘅夫婦同個仔不停喺櫃枱附近行嚟行去,不停用佢哋嘅鄉下話同櫃枱個阿姐傾計。之後佢哋就唔駛等就有枱。而我哋明明人數一樣,攞飛等位就要繼續等多十幾張枱。之後都有其他等緊位嘅客人投訴個櫃枱阿姐,因為好多人唔攞飛就直接入去見有位就坐低,或者好似頭先個一家三口咁,傾吓偈就有位。但係個櫃枱阿姐扮晒嘢話咩都唔知。之後有位婆婆同我哋講,話嗰啲熟客仔,成日俾利事,所以唔駛排隊。哦,咁不如唔好開門淨係做熟客仔/同鄉生意喇,或者同等緊嘅人講熟客優先,你哋慢慢等啦。最後我哋等咗一個多鐘左右先有位。

今年第一次吃彩福的過年紅棗年糕,味道不錯。紅棗年糕可以蒸來吃或煎來吃,我選的便是簡單和不需用油去煎的方法。糕經切片後便可放在碟上,隔水蒸一會兒便即可食用。蒸過的紅棗年糕是熱騰騰的,糕身軟熟而且微微煙韌,好有口感。味道清甜的紅棗糕又不會過甜,嚐到紅棗的味和香。

中秋造節晚飯預訂彩福,要先付訂金一律$500。這晚食客多,一半地方間了房間。晚飯只供節曰菜單牌,是方便廚房起菜使客人盡快吃完,造至少兩輪枱的生意。我們點了八款菜,其中值得推介反而是普通菜式。由於不想吃白飯,部長說厨房忙不接受散叫炒粉麵,只得楊州炒飯或瑤柱蛋白炒飯兩個選擇。最後選了楊州炒飯,賣相一般,不過吃後覺得炒得不錯,配料十足有蝦叉燒等,炒得粒粒飯香。柚子香茘蜜梅骨,梅骨有咬口但仍是腍,可能是走過油後使外面脆但裡面則不會實的的,包住梅骨的汁醬剛剛好,吃落有果香令人開胃。燒味拼盤叉燒倂燒腩仔,密汁叉燒夠腍有蜜味,燒腩皮脆有肉汁。

今天在炮台山工作,收工已是晚上八時多,於是到附近國都廣場內的彩福喜宴吃晚飯。彩福集團旗下分店遍布全港九新界,這間我還是第一次到訪。距離炮台上地鐵站只有數分鐘路程,酒樓入口設於商場三樓,客人在接待處確認安排座位後便可從樓梯上一層或從入口處旁乘搭電梯。大堂十分寬敞,枱與枱之間非常闊落,我們被安排坐在旁邊的四人枱,坐下來感覺舒適,不會與鄰座相近。環顧四周,原來大堂也劃分了不同區域,另一邊還有一個內廳。因樓底也高,故感覺開揚。這邊廂有魚蝦蟹水池,有專人負責,目測水池十分清潔,海鮮非常吸引。小菜款式不少,我們一行二人要了兩款小菜後,並要了一些海鮮。,松子沙汁蜜桃青瓜蝦球這樣道菜式十分醒胃,蝦球炸得微脆彈牙,混和沙拉醬及灑上松子點綴,配以清新口味的青瓜和蜜桃,值得一讚。南非十頭活鮑魚(果皮蒸)2隻眼見南非十頭活鮑魚才只是$38/隻,我們選擇了以果皮蒸的做法。鮑魚十分新鮮,彈牙有嚼口,連同果皮一起吃,又多添一份甘香味道。蒜蓉粉絲蒸大元貝(2隻)大大隻的元貝以蒜蓉舖面清蒸,粉絲吸收了海鮮味道,跟元貝一起吃非常入味。荷塘蔥菜南瓜蒸斑球廚師把厚切的班肉放在南瓜片上,下面鋪着一大片荷葉,再把薑蔥放上一起清蒸

有煲呢度啲相都一定見過呢隻性感脆皮南乳雞(半隻)
皮薄又夠脆,視覺上已經贏曬!肉嫩兼啖啖肉,真半隻雞非常足料,而且價錢仲好吸引。我們食唔曬打包第二日煎返都仲保持水準。
