農曆新年差不多來到的時候,就是要吃一些好意頭的菜式,旺角希爾頓花園酒店的粵菜餐廳鷹巢,就是以前中環希爾頓的鷹巢閣之繼承者,當然價錢更為相宜,因為酒店的定位也是如此。除了點心和燒味之外,也點了這裏的福建炒飯,比一般更矜貴,除了是濃厚湯汁加上瑤柱和花膠絲之外,在上枱前將湯汁和炒飯分開,不會直接淋上面頭,這樣的做法能夠保持炒飯的乾身,以及能讓食客調教湯汁的多少,從而在味道和飯的口感上作出改變。炒飯本身的金鑲銀效果做得相當不錯,也就是蛋汁完全黏在飯身上,外表金黃咬下去才會見到雪白的飯身,當然吃之前倒上湯汁,然後再撈起,也是在這節慶相當有儀式感的一件事。點心大件,即叫即做,蝦餃沒有什麼花巧,但是餃皮厚薄適中,內餡的蝦豬肉蓉加上少少豬油,自然風味也令本身口感更舒服。燒腩仔的蜜豆做得很不錯,沒有死甜,豆香也很吃得,腩肉層次分明,外面的脆皮微微帶焦,腩肉嫩滑,中間的脂肪層油香和厚道也是剛剛好,簡單的是做得好,有心思,自然要值得表揚。 continue reading
