I was around cwb area and wanted to satisfy my macaron cravings so decided to give Fauchon a try. I had the praline chocolate and chocolate (obviously I love chocolate). I picked the praline one because of the shiny shimmery coating on top of the macaron. I thought that was interesting. My first thought on both of the macarons r just very crunchy compared to other shops. Also the texture isn't as smooth, so u can feel the small grinded up pieces of almonds. 馬卡龍熱潮持續,我倆絕不是什麼甜魔,但偏偏愛上馬卡龍這法式甜點純純個人喜好,在試過的品牌中,首選Jean Paul Hevin Chocolatier(也是全港最貴的),還有Paul Lafayet,LGB,Hami和Laduree的也不錯是日試的,是來自法國的百年老店Fauchon記得數月前曾到過希慎廣場地庫的Jasons,那裡已有Fauchon的馬卡龍發售是日Fauchon在海港城的Chocolate Trail佔了其中一個Pop-up store,再遇這百年老店,趁還未是晚飯時間,便小試牛刀,買了其中兩款口味試試香草|開心果單看裙邊,賣相十分不錯可是馬卡龍的表面卻不夠平滑,特別是開心果那款,較為粗糙先咬一小口,餘下的部份已盡裂開,脆身程度可想而知兩款餅底同樣做得太脆,失去了本身應有的煙韌口感餡料過甜,開心果味更是非常薄弱,質地和味道也挺令人失望表面平滑程度一般,餅有點脆口,但比起開心果味,仍可接受 香草味道芳香,以馬卡龍來說,甜度適中馬卡龍是對濕度相對較敏感的甜點,也許,店方應針對香港的天氣而作出改良我們知道,要做一個出色的馬卡龍並非易事除了吃盡各大名店,也上過數次馬卡龍製作班,

Tried Fauchon in Paris last year and although they weren't overly impressive - they were actually still above average. The HK Airport stall which I have tried were also decent.Come the CWB Jasons Place Fauchon - at the beginning all friends were saying the Macarons are unfresh and crunchy!! Tried Fauchon in Paris last year and although they weren't overly impressive - they were actually still above average.

The HK Airport stall which I have tried were also decent.

Come the CWB Jasons Place Fauchon - at the beginning all friends were saying the Macarons are unfresh and crunchy!! I waited a few months before trying it recently and sorry to say.... They were really dry and hard.

On the positive side the Pistachio one had a good toasty pistachio taste. Salted Caramel was a little too subtle.

In the end I chose Pistachio. I was pleased the staff actually knew which ones were the sweetest and which one was the least sweetest.
I was tempted to try the lemon but it was risky because i do not like artificial lemon flavours.

The pistachio was delicious and fragrant too!
It literally melts in your melt into liquid!
The sweetness was just right.

, 以優惠價錢一次過將各種味道都嚐真, 但這陣子吃得太多甜, 不得不略為節制一下, 先買四個好了。 只見個裝的方式也有規定, 像4個的話用上普通的紙袋裝著, 五個則是底部闊身的膠袋, 無奈地紙袋的承托力真不夠好, 回去時才驚現有粒被壓歪了。

見天氣未算太熱, 就這樣放在室溫下。 四色交雜, 拍出來的效果特別好看。 每粒表面很是平滑, 那條小裙邊亦相當迷人。 原以為只是味道上的差別, 沒料到濕潤度跟鬆脆度都不一樣。

朱古力餅皮香軟, 較其他的脆弱, 回去時才驚現早已碎裂。 偏啡紅的用色, 有幾分像莓果。 外皮相對其他的薄身, 有點黏濕, 內層的朱古力夾心注得很滿, 細滑如絲, 慢慢在口中溶化, 純度不低, 滲著些微的甘苦, 不太甜, 只是那陣餘韻未算太悠長, 還是喜歡La maison的多一點。

每吃macaron, 對果仁一類的興趣總比果味多, 開心果沒太螢光的感覺, 綠得較自然。 吃起來既薄且鬆脆, 但由頭至尾都是單一的口感, 只脆口, 沒外脆內軟綿之感, 稍欠點煙韌, 乾乾的, 開心醬有點黏挺, 果仁味始終較弱, 沒太多個性, 普普通通。

榛子果仁糖味道該是最豐富的一款, 渾圓的餅身滿佈碎果仁脆粒, 令咬感增加不少, 外鬆裡頭算是柔軟, 比其他的潤澤, 滲出果仁的甘香, 內餡稍薄, 比例上還是吃到皮層居高, 夾心軟軟的很綿滑, 難得榛子的味道很實在
, 很容易嚐出, 最得我歡心。

以這樣的高價, 我會覺得坊間有不少相等甚至低價的較它好, 雖然macaron之行沒令我有太大驚喜, 但見它的朱古力和餅食也蠻討好, 說不定會再來的。

感覺厚身一點, 中間的醬也較多. 咬下去好脆但餅身完全沒有鬆軟煙韌, 不太輕且有點硬實, 像吃夾心餅的感覺. 中間的開心果醬好厚, 但味道又不太突出, 只是甜度較高. 相比之下杏仁糖的那款夾心味道濃一點, 也覺香口一點. 不過甜度仍是很單一. 老實說我不大愛吃馬卡龍, 不過也有嚐過好幾家法國甜品店的出品, 這裡的口感跟坊間的著實有點不同, 似吃餅乾多過馬卡龍.

另外試的朱古力每粒HKD$21, 店員說可以單買一粒也OK. 不過看到朱古力的盒子蠻漂亮的, 而且也想多試幾款, 最後索性一口氣買9粒裝的盒子. (HKD$178/9PCS)

小小的一個黑色禮盒, 上面套了張深粉紅的紙卡, 看起來幾高貴, 送禮也得體.
一小盒子剛好放上9顆朱古力, 內裡的都可以自選口味.
朱古力全部都是半圓形狀, 有些口味印有數字, 有些只印了個''F''字母, 其實不吃入口的話都幾難認是何種口味.

我選了其中8款味道:
70%檸檬純黑巧克力 - 這款在半圓的底部有著點點檸檬醬. 中間是純朱古力軟心, 吃起來很幼滑, 帶著點點純朱古力的甘味, 不過檸檬味就不太突出了.
奶油牛奶巧克力 - 這款外層跟內裡軟心同樣都是用牛奶朱古力做, 吃起來是最滑, 奶味亦最重的. 不錯.
開心果牛奶巧克力 - 其實內裡沒有開心果粒的, 中間只是開心果的軟心醬, 不過吃起來帶著點點果醬味, 開心果味不突出.
幼細榛果牛奶巧克力 - 這款的榛子味就十分突出了, 中間軟軟的榛子醬又滑又香, 加上外層的牛奶朱古力配合, 十分不錯的一款口味.
香脆牛奶巧克力 - 這款以為內裡全是CRUNCH來的, 原來只是中間的軟心混入了超細的脆米, 吃起來很細膩的味道, 不會有太多脆米的口感, 不黏牙, 也是另一款比較欣賞的口味.
70%果味純黑巧克力 - 果味就不太突出, 但吃下去除了有黑朱古力的甘味, 也帶著點點果醬的甜味, 不多, 但都幾夾的.
焦糖牛奶巧克力 - 這款焦糖味十分重, 中間的焦糖漿是這麼多款之中最甜的. 不過入口又幾香, 但甜度確是高了一點.
70%薰草純黑巧克力 - 這款也是用黑朱古力做, 薰草味也不太能嘗到, 吃起來就像普通黑朱古力.

總結這裡的馬卡龍水準不太行, 但朱古力大致都不錯, 尤其內裡的軟心半溶狀態下吃起來很順喉, 味道又香又甜的.
價格偏貴一點, 不過這裡的包裝確是幾得體又漂亮, 我想用想送禮會比較好.

As a macaron lover,I am always excited to try out new macarons. Personally, I like macarons from Paul Lafayet the most. They offer many favours that other shops don't have. e.g. Sesame, Jasmine, Rose etc. They even have a giant macaron and macaron birthday cake. ( I've tried both, both are very very nice and delicious~ ) Besides Paul Lafayet, I also like the one from Jean Paul Hevin which offers a really strong chocolate taste, not matter what the favour is. Today I went to B2/F Jason of Hysan Place aiming to buy sushi for my lunch. But was immediately attracted by the maracons in refrigrator next to Urban Living Bakery. $188 a box / 8 pieces. That's not cheap for macarons that stored in refrigerator. (Personally, I always think that those freeze macarons are undoubtly inferior to those that sold at shops.) I definitly won't prefer to buy those freezed one with similar price. unless it is quite cheap or I am so craving for macarons at that moment)

Besides macarons, you can find a variety of products inside the Fauchon session such as tea leafs, (gift boxes too), jam, chocolate bar, chocolates etc. None of them are of low prices. I think the most cheapest can be found in counter. The cheapest: one piece of macarons ($22) and the 2nd cheapest a mini bar of chocolate (smaller than an iPhone) ($58).

When I walked pass by the urban bakery living, I was so excited to see a Fauchon counter serving fresh macaron. Oh my god. I must give it a try. I bought 2 macarons:

(1) Pistachio: my all time favourite ingredients for all desserts. Taste doesn't impress me a lot. Only a light taste of pistachio.

(2) Hazalnut with nuts: all I can taste is the hazalnut filling at the centre of the maracon. Nuts are on the surface of the macaron??? Doesn't impress me a lot too. But it tastes not bad anyway, as I think Hazalnut just simply can't taste too bad...


Overall comment: The crust of the macaron is super crispy. (Like biscuit
) I am a macaron lover, but not a macaron expert. I don't know what a good macaron supposed to be. But what I can say is personally, I don't like a macaron with a crispy biscuit-like crust. I prefer those maracon crust with some moist, while a bit crispy. Kind of stick to your mouth when you eat it rather than those that are so crispy that will break up instantly after you bite it. Taste doesn't impress me a lot either.

Will try other macaron favours next time and give her a second chance. Besides, I was also attracted by her rose jam. ($98 a small bottle), I hope it is a cheaper version of Mandarin Oriental's one.

Other Info. : For most macarons I bought before, they usually use a small transparent plastic bag to pack them. I think this is the only time that a paper bag is used. In fact, it's not a problem at all. But I just think it's not so usual when i was holding a paper bag with macarons inside....(Haha! just my own feeling...) And the paper bag is not good looking too. hahahah!! (Sorry that I am a kind of person that eats (buy) the package)

之前曾在Open Rice讚賞機場Fauchon Paris的Madeleine,知道在銅鑼灣Hysan Place會開此專門店,萬分期待,隔天便到那兒看看開張了沒有。今天終於開幕了,滿心歡喜地查問有什麼口味的小貝殼蛋糕可選,怎料員工說沒有供應,因擺放期較短。雖然不明所以,因罐裝及獨立包裝的Madeleine怎也比放在凍櫃的Macaron或粒裝鮮製的朱古力放得久些吧?不過一場來到,也幫襯一些。買了兩個Macaron,分别是榛子果仁及檸檬,輕咬着杏仁餅面,整個小圓餅便裂開數十片,有些更掉落,也没有些微chewy感覺,應是水分流失得過多而變得太乾,不過夾心餡料也算鮮味可口!難道離開了Laduree,macaron就真的不再可口?

開心果
很失望呢!
法國,意大利非常盛行開心果味道的甜品和Gelato,我當然期望這法國老店的製作會是充滿濃濃果仁味,帶有香港罕見的異國風味

可惜,放進口中,結實甜膩的草綠色外殼,口感尤如吃糖霜
,外層非但不會塌下來,反而像餅乾般碎開,絲毫不存在macaron酥軟濕潤的巧妙質感
。內餡除了甜還是甜,吃完了只覺失望。
開心果的味道欠奉,家人甚至猜測是班蘭口味


紅莓
這漂亮的粉紅小東西的味道比前款合理。

雖然外殼依然結實,但總算能酸酸的同味果醬推斷它的口味。酸度恰好,但有點彷如在吃紅莓夾心餅的感覺


香草
我愛甜,所以縱使這香草口味的甜度可媲美白巧克力,我仍然認為它的當中較可口的一枚
。而且,或許它較前兩款來得新鮮,外殼較酥軟煙韌,還混合了大量小小的香草籽黑點,味道濃郁但甜到牙縫
,當下要配以微澀的綠茶緩衝才行。

咖啡
味道濃醇的咖啡口味是我最愛的一枚
。咖啡獨有的輕微苦澀味壓低了甜味。
內餡幼滑的咖啡醬味道甘甜,與酥化的外殼相得益彰


榛子
不值一提的一款,不是說它不好吃,只是它無論外表還是味道始終沒甚過人之處

它的外表較其他款來得肥厚粗糙
,卻仍然是結實脆口的質感,而內餡的榛子巧克力醬平板沒趣
,是較為單調保守的口味。

焦糖
這算是頗帶驚喜的味道
。煙韌的焦糖傾巢而出,似蜜糖的質感,不黏牙,而且甜點適中
,可惜由於其外殼不夠酥較,與La Maison du Chocolat的出品比較還是相形見絀

Maison du Chocolat的焦糖 macron同樣迷你,但滿溢、甘甜的焦糖醬味道更出色,所以整體來說口感更充實


檸檬
這鮮黃色的一款酸中帶甜
,味覺比想象來得淡,剛好迎合了偏好甜味的人

內餡細滑的檸檬醬份量有點少。太堅硬的外殼,配上吝嗇的檸檬醬,個人認為有點乾了

店員親切有禮
,沒有一些名店職員那種囂張跋扈的可笑態度。

個人認為欠缺酥軟質感的外殼,內餡味道的空洞,正是Fauchon的macaron的敗北之處

如果不是因為食譜如此,就是因為來得不新鮮了
。我在英國買laduree的出品時,店員說只能存放二天,但這裡反而說可存放五天,更建議我放進冰箱
。雖然我購買當晚即消滅了全部,但各款外殼質感的不均勻,恐怕就是因為在店內存放過久
。更討厭的是,由於我是同時買下各款口味,店員是從架上取來早以裝好的一盒….當下已經有不好的預感了
,果然,就是不新鮮了
。然而,用Fauchon這老字號的出品作為禮物的話,是絕對大方得體。
