放了一個長假之後~~~就為大家的開Sem飯來個華麗的序幕~~決定帶大家到棉登徑吃一頓正宗日本人餐廳的和食~~大家聞此都立即推掉手頭上的工作~抽出午飯的兩小時跟來~~幸好最後都齊人 =]早一晚訂位~七位也輕鬆有位~始終午膳的座位不會太緊張~~入座後每人自選喜愛的定食~上一趟來的時候已經試過了懷石~今次就試試汁煮獅魚鮫~~魚鮫這個游水位是個人較為喜歡吃的一個部份~有幼嫩也有肌肉的結實感而不會粗鞋~而朋友們都各自選了不同的定食~懷石便當等先來每人一客烏冬~粗粗的而帶煙韌黏黏的感覺~鰹魚湯底清澈加上淡淡香氣釋出不斷~~前菜從前是逐碟上~但現在就似快餐店的整盤連主食同上~~個人覺得從前的做法較為討好~~除了蘿蔔漬物~還有菠菜與蒜芯章魚~~第一次吃蒜芯就在這裡~自此以後都經常買蒜芯自已煮~~~今天再吃~~水準依舊小比的汁煮魚鮫份量頗多~~~即使分了給朋友每人一口~自已都吃不完~~魚肉入味夠嫩~汁底甜而濃是上好的作品~~~同場還有同樣索味的白蘿蔔和海草~~淨吃煮魚已夠填滿小比的雀仔胃~~~麵豉湯始終不是自已興趣範圍內~No Comment~~~~但總不能吃得十成飽~~因為雪糕的選擇除了較為土氣的朱古

先來每人一客烏冬~粗粗的而帶煙韌黏黏的感覺~鰹魚湯底清澈加上淡淡香氣釋出不斷~~前菜從前是逐碟上~但現在就似快餐店的整盤連主食同上~~個人覺得從前的做法較為討好~~除了蘿蔔漬物~還有菠菜與蒜芯章魚~~第一次吃蒜芯就在這裡~自此以後都經常買蒜芯自已煮~~~今天再吃~~水準依舊

小比的汁煮魚鮫份量頗多~~~即使分了給朋友每人一口~自已都吃不完~~魚肉入味夠嫩~汁底甜而濃是上好的作品~~~同場還有同樣索味的白蘿蔔和海草~~淨吃煮魚已夠填滿小比的雀仔胃~~~麵豉湯始終不是自已興趣範圍內~No Comment~~~~但總不能吃得十成飽~~因為雪糕的選擇除了較為土氣的朱古力外~還有鹽味雪糕~當然不能放過~~~~可惜眾人的評價都認為奶味濃濃地蓋過了點到即止的鹽味~~雖然after taste仍有咸味留在舌頭上~~~但算不上出色

朋友們其他魚生飯~鹽燒魚~吞拿魚腩蓉和懷石等都有不錯的評價~~但相比起年前的光顧~~明顯是港化了~~食物選擇多了~waitress的服務態度也相當悔氣~~拿著日文的帳單來~我們自已就在猜猜那個那個是甚麼~~waitress無氣地站在一旁~~呢個xxx~加埋ten之後咪幾多幾多~~逐個講~愈講愈悔氣~~好似睇唔起一班朋友來吃要AA咁~這是全餐最要命的扣分位~~棉登徑幾間都吃過了~~再想吃日本午餐~~不會再來了

旬菜用上蕃茄和無花果配上煙三文魚,師傅把那青菜,蕃茄,無花果以及煙三文魚按次序放好,配放了少許橄欖油,簡單的前菜,蕃茄來得清新,無花果則是甜口,比前者來得更好,煙三文魚幸好不欺場,簡單的味道,簡單的用碟,做得不錯的旬菜.

吸物用上土瓶所裝著.不禁回想在灘萬那個吸物,都是用上土瓶,這回材料有松茸,はも以及三葉,雖然只有三種食材,但松茸和はも都是較高級食材,はも則夏天旬魚,,在最高的位置放了青檸,用青檸汁放進湯內.看都湯水猶如清如水,明如鏡.但其實一向是非常濃味,飲落口反觀比灘萬所飲的淡口一點,但屬濃味之列,還有松茸的香味,但熱力十足,做得不錯的吸物,愈來愈愛上這種吸物.

刺身早在日本料理中不可分割的一部份.因為數款刺身就可以擺放了一幅優美的圖案.今回用上呑拿魚,金目鯛.赤貝,魷魚,甘海老,油甘魚,池魚.單看種類來得多.不是什麼大大件.每件切得幼細,用上蘿白絲,昆布,青瓜等開始砌成令我有驚喜的賣相.雖然是小師傅所切造的刺身,但大師傅在旁邊看管,品質來得有水準.這裏的山葵香而清新.淨吃山葵都不輸給刺身,這裏處理刺身做得不錯.用上三,四個盤盛著.以金目鯛以及池魚最為欣賞.但沒有忽略在旁邊的青瓜.

夏天代表當然不得不及鰻魚.燒物則用上宮崎鰻魚用上蒲燒.燒鰻魚所考的功夫不給天婦羅和壽司為低,當然用上的品質也重要,二片放在碟上,燒的質素還可以,,只因由小師傅來控制火候.肉質來得鬆化,那點汁還用白飯來伴著吃.這款菜式是合格的.

煮物則是帆立貝黃金煮配獅子唐,石川小芋.帆立貝熟食比生吃來得更美味,靠那軟化的肉質早勝過刺身,不過這款菜式略為失望,因為雖然用雞蛋佈上表面,味道雖為清淡,但忽顯不出那種層次感,味道略為單薄,反觀石川小芋比它還吸引,賣相來得好.來得[粉].

揚物單看賣相給煮物為佳,一隻長碟分開四款不同的炸物,由蠔以及蝦混合的炸球,南瓜,青椒各一,南瓜,青椒都不俗,用上蠔和蝦,口感來得多重感覺,吃得出蝦和蠔的鮮美,不過自己略嫌大件過頭,吃得有點狼狽.美味不錯的,但份量可以作出少許調整.

酢物則是用上小青瓜切片,放上酸汁,清新口腔.青瓜來得爽口,令人感到開胃,送啤酒不錯.

吃了多款菜式後,食事作為熟食的最後一站.也是整晚最出色.那就是三文子,海膽炆飯.,一個炆飯有二碗的份量,師傅給我看看內部,對辦後侍應則在旁邊把那海膽.三文子,和飯混合在一起,侍應說三文魚要弄爆,把那汁流中飯內,再品嚐那飯焦,飯內有那三文魚子的咸鮮味.飯的濕控制得非常好.還有那飯焦,海膽當然身在其中,那種感覺後給了一個評價,做得出色.值得再吃一碗.漬物都不錯.飲了最後的麵豉湯.慢慢品嚐雪糕作結.

這裏的師傅對徒弟來得嚴格,不斷話徒弟.在吧枱前便看得一清二楚.當然師傅對食物執著令人佩服,侍應來得專業,清整枱面,介紹食物等,做得十足,但如果小店的服務最好莫過於櫻日本料理店.吃完一頓飯才飲完一支啤酒,埋單七百六十元,單看價錢貴的,但食這類型的,算是便宜了,解開前一晚的痛苦.

The dinner began with wasabi漬物. Much spicier than wasabi root, but very refreshing especially for the staring a big meal.

For this special dinner we ordered,

金目鯛sashimi - The texture of the fish is always nice. A little bit chewy with a good bite. Not always come across fresh 金目鯛魚. That's why I was very happy to see it is in the menu.

Sashimi Set with 9 assorted items, include sweet prawn, scallop, tuna, hamachi and a few more. The freshness and quality of the sashimi are all very nice. Yet, there were not much surprises to the set. For similar value, 湖舟's sashimi set would have better selections on the cuts/fishes.

Sweet tomato - it is served with cucumber and lightly salted. It is the first time I tried a simple dish with tomato prepared this way~ The chef must be very confident in the tomato quality. As proven with the dish, the tomato are super sweet. The salt enhanced the sweetness in the tomato. My frd almost mistaken the tomato are been seasoned with sugar. It was a great dish. I would go back to Tomi for just this tomato dish.


Vegetable strew - simple strew, but the soup base is sweet and well seasoned. Simple, but nice & refreshing.


帆立貝海膽燒 - the look was nice, but I felt that the scallop was a bit over cooked. It would be sweeter if it is not too fully cooked.

carb & prawn tempura cake - this dish was nicely done. the tempura was not heavy or oily at all. Light, airy with strong flavour. I should thank the waitress for suggesting this dish.

Had dinner in this restaurant before, and it was quite nice although pricy. So my family came again today to try their lunch. We all ordered set lunch of various types, on the whole standard of food/cooking was acceptable but definitely not outstanding. Decoration is simple while elegant, but service was only average. However, most disappointing was portion size which is 10~20% smaller than those of "Kenjo" across the street, but price is 10~20% higher Kenjo. Think we won't come here again

2008年12月每當覺得心靈需要 pamper, 好自然會想起幾間餐廳, 這裡就是其中一間 !!好多時想唔到食甚麼, 黎到最好都係點 omakase !!當晚刺身癮發作, 所以都係單點一個assorted deluex 刺身, 分量比我地想像多, 2人食真係有點點漏, 3人剛好, 4人就會覺得lam lam 咀 !! 當然質素亦非常好 !! 始終我喜歡付出多一點點, 食好一點點 , 係值得既 , 而且能不斷提升自己味覺, 都可以話係一種既進步!!正值冬季, 毛蟹當做, waitress介紹我地食毛蟹鍋, 哈哈, 最喜歡不時不食的我, 當然不會錯過啦, 就來一鍋啦 !! 食完刺身後, waitress 來問要唔要稍為休閒一會, 先來蟹鍋, 當然好啦, 正合我心 !! 這日本餐廳永遠是客人所需行先 !! 蟹鍋黎到, 師傅逐一張蔬菜豆腐蟹放入鍋內, 蟹腳已起半殼, 正合我的另一半心意 !! 先試湯, 不過鹹, 湯帶甜鮮不過濃, 而蟹肉結實亦保留蟹鮮甜, 湯頭煮過後蟹後亦不被麵豉湯蓋過蟹味 ~~~好味, 真好味 !!一年一次既新年菜, 今年就係哩度食啦 !! 又期待 !!

又回到世界美食project,今次是喬小妞牛一,盧大爺做東,指明挑一間日本餐廳,本來想去『道』,不巧該日休息,于是又回到這間鋪子。盧大爺至情至性,不改本色,叫了熱氣的吉列蝦;我呢,就貪心一點,來一份刺身定食吧。照例打頭陣的是烏冬,愛極那粗身黏韌的口感及魚鮮滿溢的湯底,只恨一小碗意猶未盡。幾款前菜中最愛相中的海草莖,從前不知是何物,初遇即被其柔軟鮮香深深吸引,多謝食友相告其名。刺身擺得幾靚,每款都是新鮮貨,但最美味的要屬初次嘗試的鯖魚,肉質肥美,最特別是帶點海水腥,配上海帶是味蕾的豐富享受。而盧大爺的吉列蝦則炸得爽脆,炸粉薄而香口,蝦肉嫩身彈牙,雖非厚質咬口的大蝦,但似乎更適合做吉列。吃過主角,又輪到雪糕,今次趕上抹茶口味,老實說這間的雪糕向來不夠出色,奶味甜味偏重,抹茶卻淡得很,但末尾有雪糕食總是不錯的。與盧大爺的友誼朝朝暮暮,又豈在食!漫漫求學四年得此知己,實為無憾也!

無論叫哪一款套餐,侍者都會先端來一小碗湯烏冬。不要小看這碗看來很平凡的烏冬,吃進口卻是乖乖不得了 --- 湯清味鮮,有很重的鰹魚味;烏冬質地煙韌適中,再加上有不少的豆卜絲及大葱放在湯內,喝落自然是甜上加甜。夾一箸烏冬吃,喝一口清湯,吃着吃着,不知不覺就將整碗烏冬連湯一次過KO

很久沒有吃過山芋蓉,對它那黏黏的口感很是難忘,想不到竟在這裡的前吃找到。這加上了山芋蓉的青瓜蕃茄沙律,口味挺清新,青瓜很爽口,日式蕃茄當然是既甜又新鮮,再加上山芋獨有的既黏又帶黐的感覺,吃落很有趣。失色的是附加上的日式芝蔴汁醬不是真的很"芝蔴",香味頓然稍遜一籌了

懷石便當一分為四格,有味較清的刺身五併及燒馬頭魚,亦有味濃一點的炸忌亷薯餅及帆立貝牛油燒。刺身雖是較為大路的貨色如吞拿、赤貝及甜蝦等,但每樣也極新鮮。吞拿的肌理分明,肉質吃落並不腍散,入口有些即溶之感;甜蝦帶點糯口而鮮甜;魷魚很"膠口"而帶軟熟。最普通的是赤貝及油甘,赤貝不算很爽身,油甘亦只是一味的厚切,沒有甚麼過人之處....
馬頭魚肉質細膩,魚味亦濃,不過可惜的是皮燒得不夠脆而且太鹹,下鹽的功夫好像差了一些。最吸引小弟的反而是作為伴菜小吃的日本紫色甜蕃薯,味甜得真的像在吃糖
,質地"粉粉"的,好吃....
忌廉薯餅熱得盪手,裏頭的忌亷滑得來很順喉,口感細滑。蟹肉挺鮮甜,外皮也炸得鬆脆,另一出色之作...
帆立貝味鮮得很,不過汁稍嫌有點過稀,不夠牛油香,有點浪費了那樣高質素的帆立貝...
太座的鰻魚飯定食索價差不多至一百八十大洋,比我那個懷石便當還要貴,真要吃吃來看是否有如此能耐收得這般價錢。很可惜的,吃過後覺得是不太值得。鰻魚皮燒得帶些脆,而蒲燒汁亦調得頗合道,不過份的死甜,但肉質給人的感覺是很"削"很"散"。老實說,吃起來比起全盛時期的小店三河屋還要遜色得多。三河屋賣的只是約五六十左右一碗連餐的,這裡卻是貴了一倍不只,那未免有些物非所值了....
特別一提是伴菜中那份用上甜麵豉醃製的冬瓜。麵豉醬弄得又香又甜,配上本身味清的冬瓜,很美味
....
太座不能吃冷東西,一口氣吃了所有的餐後甜品
不要吃驚,所謂"所有"的只是豆腐及草莓雪糕各一小杯而已
相對上覺得後者較佳,草莓味的確夠濃,相反豆腐就真的一點味道也吃不出來
...
下一站到哪裏 ? 應該輪到旁邊的利久庵吧
...

小弟看了OR多年,從未有衝動要寫食評,,看了那麼多對旬菜富讚嘗的食評,今天終去了試試。點了三文魚籽海膽飯 (本人應為壽司飯最好的配撘) ,可惜....三文魚籽....不要說有沒有魚油味了!真係超超超咸!!!!! 吃一啖魚籽起碼要吃回三大口飯!! 係我吃過的三文魚籽中最最最難吃的!!! 海膽....不要說是否鮮甜! 我只吃到滿口坑渠水味!!!!不知是我黑仔還是什麼,吃到的與看到的食評相距甚遠!小弟吃過最好的三文魚籽海膽飯是在鮨久,無論海膽三文魚籽及飯底也是那樣出色! 即使孝勢及利久庵的丼也做得比佢好! 可讚的只有服務態度不錯!! 要是請我再吃都不會再光顧了!
