早兩天,特地和兩個朋友去到粉嶺聯和墟,這間性格拉麵店,是性格拉麵店原因,是他們一個月試營業20天,而每天最多營業五小時,他們的下單方式也很有性格,就是埋單後不可追加飲可食物。。。知道這間食店的老闆是一個日本人,現在已有女兒接手,這間店的面積很小,逼得不能夠用舒服來形容,只是快餐店模式。食物方面,我們點了味噌湯底,加叉燒拉麵。 湯底味道相對較淡,我覺得麵質軟硬度十分適中,烹調的時間恰到好處,而叉燒肉質嫩滑, 肯定不是普通拉麵店的一般貨色。整體的味道我覺得不錯, 但下次都是順路才會過來。。。

湯底味道相對較淡,我覺得麵質軟硬度十分適中,烹調的時間恰到好處,而叉燒肉質嫩滑, 肯定不是普通拉麵店的一般貨色。
整體的味道我覺得不錯, 但下次都是順路才會過來。。。

平日對拉面興趣不大總是覺得不值得花上百元吃一碗面來到聯和墟覓食走著走著選擇了爵士拉面星期日晚上六時許已有人龍排了十數分鐘才可入座店員算是有禮不如其他食評所言般"霸氣"然而這裡逢星期一二休息、只限落單一次霸氣的反而是店鋪本身。點了雜錦拉面(味噌湯)和叉燒拉面(醬油湯)雜錦拉面配料普通,味噌也不甚特別反倒是麵條相當出眾彈牙有口感的麵條再加上很重的麵味很多大店也做不到叉燒拉麵用料也充足叉燒的份量很多味道嘛...不太懂形容未必會每個人也覺得很好吃重點在於醬油湯清淡不油,但充滿醬油香與其他打著濃厚湯底旗號的店鋪相比又是另一種風格這間店的麵和醬油湯底確實做得不錯有機會一定會再試

星期日晚上六時許已有人龍
排了十數分鐘才可入座

店員算是有禮
不如其他食評所言般"霸氣"

雜錦拉面配料普通,
味噌也不甚特別
反倒是麵條相當出眾
彈牙有口感的麵條
再加上很重的麵味
很多大店也做不到

叉燒拉麵用料也充足
叉燒的份量很多
味道嘛...不太懂形容
未必會每個人也覺得很好吃

重點在於醬油湯
清淡不油,但充滿醬油香
與其他打著濃厚湯底旗號的店鋪相比
又是另一種風格

這間店的麵和醬油湯底確實做得不錯
有機會一定會再試

I came in just around 12pm, it was not so full, about 30%, as one person I sat at the 'bar' table lining the kitchen area. I found the noodles tasty and better than the usual thing at shopping mall food courts or chain restaurants like Ajisen ramen. I even had a few spoons of the soup, which was not as over-salted and over-spiced as in many other cases. I ordered the 'middle' size bowl (they only have two options: small or middle, no big), which was just about  right for me, but if I was really hungry, it could have been bigger. Also, comparing the size to the price, it is not that cheap. Maybe a bit better quality.

I enjoyed the atmosphere of the restaurant, which had a kind of homey feel compared to the overcrowded chain restaurant atmosphere. It seemed that it is run by a family - there was an older guy, two older ladies and one younger lady as a waiter. There was a bookshelf/library with japanse comics for decoration, and they really played jazz music, which was a nice change. I can imagine that my impression could have been quite different if the restaurant was packed with people, but it wasn't ... so I can recommend it, if you don't mind the slightly higher price.

好耐冇寫食評,今日忍不住要讚一下這食店,實在做得很好食。如果覺得一風堂好食的食友,真要來比較一下。麵是最出色的賣點,麵身夠爽,夠彈牙 (不是夠硬) ,很久未遇到如此出色的麵。湯淡少少更可口 (我一向不喜歡濃味食品),我旁邊的兩個食客將湯喝盡,真犀利。叉燒做得非常好,肥瘦比例合宜 (其實幾瘦--arm我口味),很有肉味,實淨又大片,淋滑不"un"。炸豆腐老了一點,有少少嚡。另一出色的是芝士餃子,從未食過噤好食的。餡料很滑,滿有芝士香和質感,餃子皮和煎功都是上乘之作。如果餡料內加dd塩釣味,應該更絕妙。(因mozzarella有d淡口)在自己試過的拉麵店中,只有橫綱可與她相比;除食物以外,覺得橫綱好d,因為在市區,多d選擇,相對平dd,同埋營業時間友善得多,但食物質素則爵士全勝。

周末下午,來到人生路不熟的粉嶺,從港鐵站出來,走上天橋穿過隧道,再經過學校區和附近的遊樂場,花了近二十分鐘腳程,終於來到聯和墟一帶,為的竟是一碗「性格拉麵」。我們的目的地是爵士拉麵,說其有性格,絕對沒有誇張,店子五天工作,逢周一二例休,而每日亦只做兩個時段,分別為 12pm - 2pm 和 6pm - 9pm。由於爵士不設訂座服務,遇上人多時要乖乖的在店外排隊守候,即使能順利入座,仍然有一系列的規矩要遵守,例如客人只可以點菜一次,隨即付款,其後亦不能加單或改單,所以大家記緊要考慮清楚才落單。餐牌上的選擇不多,但由於個別湯底、配料需分項收費,計價錢時又的確有點複雜,我們的配搭如下:中量肥牛拉麵 ($65) + 中辛味噌湯底 ($3) +日式醬油蛋 ($8) = $76小量叉燒拉麵 ($50) + 小辛味噌湯底 ($3) + 粟米 ($8) = $61***在此先提議大家務必要加選配料,因為原設定的蔥/海草/芽菜/粟米的份量均少得可憐,如果叫的是叉燒拉麵,送上來的就真的只有叉燒和拉麵,感覺非常單調。***店主小村先生來自北海道,煮出來的自然就是札幌風味的拉麵,而這天試的辛味噌湯底味道濃郁

店主小村先生來自北海道,煮出來的自然就是札幌風味的拉麵,而這天試的辛味噌湯底味道濃郁而不油膩,中辛程度比小辛的刺激得多,連同曲爽的麵條一啜入口,感覺相當頂癮,喜歡嗜辣的朋友應該不會失望。

肥牛是拉麵店少見的配搭,食落感覺十分「吉野家」,片得薄薄的,入口滑溜不韌,兼帶點 Sukiyaki 牛肉鍋的甜味,很不錯。

連同兩位茶錢,買單 $164,論價錢不見便宜,論環境三分像日本、七分像鄉郊,論質素更不能與豚王、一風堂相比,但這裡就是一份難以筆墨形容的的吸引力,只要你不介意山長水遠來聯和墟走一趟,不妨考慮試試。
