午飯時段12時半已看到店外擠滿了上班族,門外的巨型神虎紅燈籠很有氣勢,想不到這間新開的小小拉麵店如此受歡迎,等了大約半小時,還未能入座,只能瑟縮在門外靠店內傳來的陣陣豬骨香味充飢和增加温暖感。好不容易等到1 時20分終於能坐下了。第一次光顧理所當然叫了最正宗的神虎拉麵,另加12元要來一大碗白飯,店裏的介紹說是可吃完麵後把豬骨湯加進飯中吃。起初還擔心到時湯不知是否還夠熱弄湯飯,原來都是過慮了。麵來了,先呷一口豬骨濃湯,有一點肥膩,還可接受的。點麵時可選粗或幼麵,或如我般揀了由廚子選配。結果來的是幼身麵,吸盡了湯汁,每一口麵也充滿豬骨濃湯味,而且湯的熱度保存得很好,即使快吃完整碗麵,湯還是熱熱的,想必跟那個厚厚的大碗子有關。溏心蛋是原隻放在麵中的,這種一口咬下去蛋黃汁便露出來的吃法很有趣,也增添了口感。一大片的叉燒肉肥瘦均勻,頗軟腍。整體感覺是這裏的湯底頗純正,沒有味精或其他複雜的材料味。除了專注吃拉麵,也不忘嚐嚐這裏的辣芽菜和醃菜,而且這裏像橫綱拉麵一樣有白芝麻,原本是放在拉麵裏的,我想起日式超市也有佐飯的芝麻紫菜,於是試著自己製作了一款芝麻醃菜湯飯。味道也不錯呢﹗另外店子亦提供放有檸檬

除了專注吃拉麵,也不忘嚐嚐這裏的辣芽菜和醃菜,而且這裏像橫綱拉麵一樣有白芝麻,原本是放在拉麵裏的,我想起日式超市也有佐飯的芝麻紫菜,於是試著自己製作了一款芝麻醃菜湯飯。味道也不錯呢﹗另外店子亦提供放有檸檬的凍水,且不設加一服務費,可說十分體貼客人的需要。比較欣賞這裏的拉麵師父的賣力和幹勁,即使手裏忙著工作,還不忘向每一位客人說歡迎和多謝,端麵給客人時還會說不好意思讓你等那麼久。希望這鼓勁和待客的熱誠能一直保持著。

Although this broth was very thick and rich as well, it wasn't as strong and flavourful tastewise. I could not taste the black garlic at all. 
 Also, towards the bottom, the broth got very grainy. As for the noodles, the noodles weren't as firm as I had expected them to be. The texture was lacking somehow. Also, the noodles soaked up quite a bit of broth as half way done, I had more noodles than broth.

Now, to the toppings. The fungus was good because it had a fresh crunch. The best thing was the char siu though. It was cut thick like a slice of roast beef and was not fatty at all!! 
 Even with no fat, it was unbelievably tender. 
 I've never had char siu quite like this before! Thumbs up! The half boiled egg was okay. The yolk was creamy, but somehow I didn't find it to be super amazing.

The sides were pickled veggies,  bean sprouts and ginger. I couldn't get enough of the bean sprouts. 
 I could really taste the chilli powder. Although quite spicy, they were good.

Service:
Service was good, bit if I really had to find something to pick on, it would be that they weren't quite ready at 1800, as it was more like 5-10 mins after before they allowed us in.

去個廁所之後再坐多陣,我碗拉麵就到喇!香噴噴,聞落好有豬骨嘅味道,湯嘅份量都浸過啲配料。當我諗住唔客氣,一野「不」啖湯黎飲嘅時候,一碟五件嘅餃子亦都上黎。注意,因為我係坐吧枱,所以食物係要由同個頭一樣高嘅枱拎落黎。但係非常心急嘅我,懶型咁一野拎碟餃子同醬油落黎,呢個時候啲醬油就抵受唔住地心吸力同萬有引力嘅引誘,掃射我張枱、件褸、同我碗拉麵…連隔離位西裝友都瞄左一眼……媽呀,對唔住,下次我唔扮有型喇……

用左好多張猶如一縷輕煙嘅面紙紙清理好案發現場之後,我終於可以品嚐我面前等左我好耐嘅拉麵同餃子喇!拉麵湯頭唔係太油膩,油膩度喺接受範圍。青蔥好後生,但好似少左啲。加左十蚊嘅荀係我嘅飛佛,爽脆得黎又鮮味。叉燒略嫌肥瘦有啲唔均匀,有啲好似肥叉,但有啲就好似煲湯廋肉,但以佢呢舊叉燒嘅厚度都做到入口鬆化,都好值得再幫襯。拉麵硬度揀左廚師推介,我諗我食嘅係幼麵,得返少少彈牙,我諗我處理現場嘅時間令佢進化到咁……糖心蛋建議都唔好放咁耐,因為熱湯會浸熟入面嘅蛋黃,做唔到流心嘅感覺。

嗰五隻餃子係我食過咁多拉麵鋪之中做得最好嘅一間。大小方面,每一隻都好豐滿,唔會好似淘X餃子咁嘅攝牙罅size。一咬第一啖,肉汁喺口腔爆發,有小籠包三份一咁juicy。而得返丁屎咁多嘅醬油,相信有啲麻油同豉油,好香,將餃子可以將肉味帶去另一個層次……

食左半個鐘,終於KO哂兩樣野。好對唔住師傅,我真係太飽飲唔哂啲湯……唯有下次再幫襯過啦!

習慣先喝一口湯,味道很湯的豬骨湯底,只要放耐一點點,上層的湯便會凝固。
叉燒跟湯底也不錯,但是這個味道好像不太特別,好像跟附近的「幸亭」差不多。

這個是當晚繼糖心蛋後的推介! 餃子的皮很薄,裡面卻能保存一點點的肉汁,不會太乾身。
我跟男友都讚這個餃子!

總結
配角的煎餃子跟糖心蛋最好吃,反而主角不太突出,同屬灣仔區的「幸亭」剛巧那裡也有豬骨湯跟黑蒜蓉湯,感覺好像差不多...
跟「魂」有點距離呢! 那裡的湯底更有個性更特別,這店要再加油哦。

住在灣仔的為食鴨其實在本區也有很多餐廳還沒有試過的,今天想起這小區剛新開了拉麵店,便慕名而來了。晚上六時多的時候,已經有不少人在門外等候,在毛毛細雨的天氣下在門外排隊真的不好受;幸好餐廳的位置比一般的拉麵鋪為大,不算等太久也已經可以進內;他們也有派等候的票,客人可以先到旁邊的小店走走才回去。為自己點了一神虎拉麵,說穿了就是鎮店而又是最普通的拉麵。跟別的拉麵店無異,也是用獨有的秘方配合大量的豬骨去煮。麵到來的時候的確是香味四溢的,不過可能是我點了香油,香油的味道蓋過了應有的豬骨味道,亦比較油膩,連平日愛喝拉麵湯的我這次也卻步了。麵條方面我點了幼的,煮得剛好,不太硬亦不太腍。叉燒是最叫人失望的一環,雖然侍應已經早跟我們說今天的叉燒煮得腍了一點,一夾便散(我已經感到奇怪),但吃下去的時候是感覺在吃煲湯的瘦肉般,叉燒很瘦而又不太入味,還是半肥瘦的叉燒是最好的。令人讚好的是那溏沁蛋,要自己切開的,流心效果佳而蛋白也充滿醬油的香味,為拉麵添回不少的分數。另外我也點了這裡的煎餃子,是不是他們自家制便不得而知,不過它餡料的份量也算多,咬下去是充滿肉汁又口感豐富的。味道方面反而有點似港式的餃子,調味足夠

總括而言,這裡的食物質數不過不失,銅鑼灣雖會有更好的;不過如果你要到灣仔區找一間拉麵鋪,神虎也是值得一試的。

其實不知道這兒開了一間新的拉麵店,只是那天剛好有事而無意地走進此街又剛巧店在開晚市,可以說一切也是緣份。門口與店名超有氣勢,照字面地解說就知道一定不簡單。 店內環境尚算寬廣,一邊長L型台圍著師傅的地方另一邊就放滿桌椅,不過個人喜歡貼著師傅所以選坐了L台,而L台放著醬料餐牌和檸檬冰水等很方便。餐廳跟一蘭 豚王的差不多可自由選擇配料和麵的硬度及追加物品等,最後點選了這兒的主打神虎拉麵另外點了白虎拉麵,而寫到那麼出名的餃子當然不能不試:神虎拉麵: 湯上帶著所謂的背脂,湯入口非常的濃熱豚骨味也很夠但鮮甜略嫌不足,而中間的紅色醬料混入後味道更見升華,算是非常不錯的湯底。餐紙上選了隨師傅選擇因為相信他的專業,麵身硬而挺很有咬感但可惜沒什麼麵香,不過麵的掛湯能力卻很不錯。至於叉燒可算失敗作,瘦小得像吃柴皮的感覺帶著渣般,如此的湯底應配比較肥美的。而木耳絲就只是帶著爽口的感覺沒有明顯的突出。流心蛋也不得不說,中間的黃貼著蛋白邊的已經熟透以致流心度不足,需作出改善。白虎拉麵: 比起神虎,湯的濃厚度差不多更多了一層鮮鹹味,如果不愛單純豚骨濃湯可作考慮。自製餃子: 一邊吃麵一邊看到師傅用心的包著餃子,體型比

門口與店名超有氣勢,照字面地解說就知道一定不簡單。 店內環境尚算寬廣,一邊長L型台圍著師傅的地方另一邊就放滿桌椅,不過個人喜歡貼著師傅所以選坐了L台,而L台放著醬料餐牌和檸檬冰水等很方便。

餐廳跟一蘭 豚王的差不多可自由選擇配料和麵的硬度及追加物品等,最後點選了這兒的主打神虎拉麵另外點了白虎拉麵,而寫到那麼出名的餃子當然不能不試:

神虎拉麵: 湯上帶著所謂的背脂,湯入口非常的濃熱豚骨味也很夠但鮮甜略嫌不足,而中間的紅色醬料混入後味道更見升華,算是非常不錯的湯底。

餐紙上選了隨師傅選擇因為相信他的專業,麵身硬而挺很有咬感但可惜沒什麼麵香,不過麵的掛湯能力卻很不錯。

至於叉燒可算失敗作,瘦小得像吃柴皮的感覺帶著渣般,如此的湯底應配比較肥美的。
而木耳絲就只是帶著爽口的感覺沒有明顯的突出。

自製餃子: 一邊吃麵一邊看到師傅用心的包著餃子,體型比一般店的大而內裡真的非常多肉汁。 不過煎的功夫應該加以控制,今次的皮邊不夠香脆。

至於服務就感覺不夠殷勤,要知道日本人很講究禮儀,而當天店內無論入店時及走後都缺少招呼,而進食時店員不停的隔著食客大聲閒談,應作出改進。

現在的拉麵店就像走入戰國時代一樣,不過以今天所試的神虎確實有其獨特之處,如果水準能保持要在拉麵界生存應該不成問題!

There was a menu with detailed descriptions of the 5 types of ramen they offer. They are known for their specialty soup which is prepared with pork bones and fresh vegetables for over 12 hours. Since it was my first time here, I went with the standard #1 Kamitora.

The ordering form was similar to other ramen restaurants where you circle your choices. You can customize your noodles, soup, and toppings. I made the mistake of ordering the half boiled egg without realizing that it was already included in the ramen. Luckily, the staff informed me of that fact when he collected my form.

I made sure to taste the broth first before mixing in the spicy miso paste. The broth was amazingly gratifying with rich flavors of pork bones, seafood and vegetables. The seafood and vegetables definitely provided an extra zing over regular tonkotsu broth. Even though bits of fat floated on top of the broth, it was not oily or fatty at all. The spicy miso paste was not all that spicy though as it did nothing to enhance the soup.

Overall, the quality of ramen was high at Kamitora while the value for money was great too as many ramen shops charge extra for half-boiled egg. This place is definitely on my list of favorite ramen shops along with Butao and Ichiran. Next time, I would love to try the Red Tora with the super spicy broth!

看到有人在神虎拉麵的Facebook專頁寫下餃子好吃的評價, 身為餃子迷, 自然不會錯過。餃子皮是又薄而滑, 餡料也是菜多肉少, 味道頗佳。只是外皮煎得不夠脆, 熱度也差了一點點。

總的來說我幾喜歡神虎拉麵的出品。有那麼一點點初嚐豚王時的歡喜之感! 吃的時候是2月18日人氣未見;到今天出文之日, 神虎已經爬上了openrice的餐廳排行榜亞軍之位! 變成排隊店也是指日可待的事吧。

如果不怕辣,把那一小辣醬和湯再混在一起,在湯多辣少的情況下,其實不會變辣很多,但湯多了微微的辣,味道會更為豐富。

神虎的叉燒看上去很瘦,但入口卻沒有太韌的感覺,叉燒筋膜位多,所以做到入口即散,這瘦叉燒看來是有心用來配搭那不太油膩的湯的吧。

神虎的麵條可選粗或幼,今次我選了幼的,也一如以往要求硬一點,方便我拍照過後也不會吃到太腍的麵。麵條在我拍照過後仍能保持硬度,值得一讚,雖然掛湯能力是有的,不過麵香未見突出,麵條應該是神虎較弱的一環吧。

水準非常高的一碗拉麵,雖未至完美,但在灣仔區這個拉麵沙漠應該罕逢敵手。把湯喝完,就會看到店名「神虎」二字,這是值得記著的名字。

我會再回來,試試黑虎拉麵和自慢餃子的!

As usual, I picked the original ramen on my first visit. I circled every optional item and added half piece of egg as I thought it’s the same as Ichiran that egg was not included in the standard ramen. I thanked the wait staff who took my order and reminded me that an egg would also be included in my ramen.

I was sitting by the bar table so the chef passed me my ramen across the table. The soup first caught my eyesight. It was thick and with rich flavour of pork bone on my first sip. However, the noodles were of ordinary thickness and not springy as I expected. There were two pieces of medium size char-siu in the bowl, from two separate cuts as the first one was a bit dry and tough while the second piece was much tender.

在下不是坐吧台位而是坐在旁邊的桌,這桌有兩大問題,第一空間極少,大家看圖可見四個人吃實在太逼。如果全店都是這樣擠倒是認命,但明明旁邊有舒適的空吧台位,讓在下感覺有點屈就。

先看看湯頭,有明顯的背脂,入口是中度濃厚,在下這個愛重口味拉麵愛好者也認為足夠,和中間的醬料混合後,豚骨味道與魚介及蔬菜的平衡度不俗,濃香中帶甜和鮮。「豚骨魚介」是現時日本很多地方的拉麵主打口味,香港很多拉麵店只做到「有豚骨無魚介」的味道,這裡的湯總算是帶來突破,個人頗欣賞。

麵方面在下選了粗麵,大家覺得和幼麵相差多遠?說穿了根本是點菜紙的誤導,紙上「粗麵」下方寫的是「Medium」,在日本神虎本店,可選的麵是「中細」和「極細」,即中幼麵及極幼麵,何來粗麵?在下因為寫慣拉麵食評可以理解,但一般香港人恐怕會覺得是「說是粗又不粗」的誤導,看來店方需要考慮修改一下。
從麵條屈曲度可以看到的確是硬麵,不過嚼勁和麵香等方面就未見突出,個人覺得是中等水平而已。

叉燒方面在下的特選有四大塊,是有肉味但肉質偏瘦,幸好是薄切所以入口尚可未有韌的感覺,以這個拉麵的濃厚度來說,肥美度更高的叉燒會是更平衡的組合。

半熟蛋的流心度是在下近期吃過拉麵中的No.1,蛋香濃厚,醬油也頗入味,可說是整個麵最令人印象深刻的配料。
至於在下一直喜歡的筍乾,首先份量多已有好感,入口爽脆無渣也味道也足夠,浸到最後才吃也沒有浸得過軟,是有水準之作。
話說在下光顧之前有做功課,知道神虎大阪本店對於餃子方面「自信滿滿」,所以我們二人點了一客。在下的拉麵吃得差不多時仍未上菜,當時還心想這店的服務不錯,會等客人先吃完以免桌面太擠,但到最後發現只是純粹的漏單……
店員也知錯即時叫停其他單先做我們的餃子,結果在下吃完麵連湯都飲完後5分鐘餃子才出現。賣相令人皺眉,凌亂的擺放及焦黑的邊皮難言吸引,必須加以改善。

然而入口卻是另一回事,皮薄餡多不在話下,肉汁豐富到咬下去時有小籠包式噴汁效果,不計賣相的話,可說是香港拉麵店吃過的餃子中最高水準之一。不過餃子既然有這樣強大的肉汁,與其伴醬油不如效法日本神虎那樣以岩鹽代替。
這裡沒有加一,不過售價方面值得討論。日本本店的「神虎拉麵」賣650圓 (HK$49),香港賣$83比日本貴70%,打破了一蘭比日本貴50%的紀錄,和近期另一新店「博多一幸舍」相比更差得遠。就當你不知日本價,這裡的「特製拉麵」比普通版多了三塊叉燒三塊紫菜及筍條,要另外收多$40有點貴,特別是這裡的叉燒不算好吃,加$30會是比較合理的價錢。
雖然此店的環境服務有問題,但拉麵和餃子有水準是事實,所以我們之後也主動和店員聊天,知道原來日本的主廚剛於早一天回日本,來自大阪分店的木村先生將會長駐香港分店。因為拉麵有水準師傅值得尊敬,在下直接開口請木村店長給在下拍照,回家細看照片,雖然他不似木村拓哉,但和搞笑藝人木村祐一倒有幾分像。

整體來說,這間「神虎」的問題應該是因為試業中未上軌道而出現,這些涉及服務管理的事應該能夠慢慢變好。雖然此店開在沒什麼人流的橫街,但因為基本的拉麵和餃子有水準,只要保持質量,可以期待成為灣仔區的拉麵之王。
最後要讚讚他們的Facebook專頁,只要你貼圖及Tag他們的店,他們就會在專頁上轉發,重點是在下相當直接批評的發文,他們都照轉發,認真聽取客人正反意見的做法值得支持,且看此店日後如何發展。

過江龍日式拉麵店開完一間又一間, 今次這間新開的店子是來自大阪的神虎拉麵。店內簡潔雅致, 座位不會太迫, 還播放著日本歌, 讓食客吃得舒適。拉麵有其超牌神虎, 此外還有黑虎、白虎及赤虎, 貪心的小人點了一客甚麼都有的「神虎特選拉麵」。拉麵上桌速度極快, 甫上枱, 香味直衝而上。湯底是以豬骨及各種蔬菜經十二小時熬煮而成, 果然清濃不膩, 入口醇滑, 上品~~~博多麵條甚有嚼勁, 一點不糊; 超大塊的义燒帶少許肥, 只是硬了一點, 若然腍些便更好。青蔥十分的香, 令整碗拉麵的香氣進一步提升, 味付荀和木耳都很爽口。而配料中最精彩的莫過於那顆味付溏心蛋! 放在湯裡的蛋毫不起眼, 然而當弄開之後, 蛋黃直溢出來, 一口吃下, 充滿蛋香, 一流!  ^_^不能不提的是店方提供的辣芽菜及高菜皆相當美味爽口, 些微的辣意配合拉麵吃真是絕配!意想不到的好味, 只是在想這碗特選拉麵是否足夠一個大胃王吃呢? 可能太美味, 小人轉眼便吃光了! >v<
