幾位滬籍和江浙籍老香港向我介紹過的家鄉菜心頭好,前北角城市花園「雪園飯店」班底開設,位於灣仔摩利臣山道南洋酒店地庫的「老雪園」,食物方面果然沒有令我們一班老友失望,脆鱔、馬蘭頭、清炒河蝦仁、油淋雞、賽螃蟹、小籠包和不屬於淮揚菜系列的水煮魚都是高水準之作。如果可以在樓面服務水平方面加些細緻和細心,此店定當可以更上一層樓!

北角雪園在灣仔重開改名為老雪園一直都想再去試試,今晚終於約了朋友一齊去食上海菜,餐廳位於南洋酒店的地庫裝潢格局時尚帶點中式品味。經典雪園生煎包包底煎得很香脆,面皮柔軟肉汁豐富不乾身,保持到水準。脆皮素鵝,外層炸到金黃色咬落口好香脆脆口內裡腐皮層次分明。外婆菜四季豆,用肉鬆欖菜和四季豆炒,火喉炒得啱啱好,四豆季爽口。津白肉絲炒年糕,色澤炒得均勻味道比較偏濃味,年糕口感煙煙韌韌,經典菜式。老字號餐廳都有番咁上下水準,都會再來幫襯的。

這是個手工菜,蝦仁每隻大概得一毫子般大小,所以剝殼會難搞,不如出街食。肉質爽彈,點淅醋吃,滋味。

坊間的炒鱔糊並非每間做得好,不少都衰在腥、有骨、油膩這三個地雷區。這個「韮黃炒鱔糊」$180 沒有這些問題,也沒有水汪汪:

包的塊頭較大,面質地鬆軟,底部焦脆;不是一咬爆汁那種,餡肉質地卻滑溜。我小時候,公公婆婆帶我去土瓜灣一帶食生煎包當早餐,就是這一種。一手拎包一手拎豆漿,開心。

現在一般香港人似乎被縱慣,覺得生煎包一定要細粒,爆湯汁,勁脆底。其實上海也有這種比較大件的,我兩款都鍾意,後者就多了童年回憶。

點了個「傳統芝麻大餅」$128,因為好奇,想知為甚麼一個餅可以賣咁貴?!點了才知原來是舖頭旳名物。

隔左兩星期同朋友有個飯局 , 咁啱朋友個個都係中西區人,就約呢間。差嘅服務又嚟!今次以為終於唔洗比人催走因為成間店好多吉檯,妄想啦!我地一行5人,佢比左張8-10人檯我地其實已經好奇怪,因為咁大張點傾偈?我有朋友唔食得快,所以慢慢食,傾下偈咁,食到最後一道豆腐松茸野菌煲,覺得松茸係酸嘅。我地就細細聲話比個侍應知道,亦無要求退左佢只希望唔好有其他客食左。呢個時候上次好大聲催我地走嘅女經理又嚟嘞。今次仲大聲話松茸本身係酸嘅,佢地每日賣好多,係咁樣酸嘅。我地都無拗因為我地都唔係日日食松茸,只係如果同豆腐一齊煮會好易以為豆腐酸左嗟,因為佢好大聲,我地亦咁啱撞到同事廢事鬧大就算數。今次野食的水準就比上幾次差左好多,樟茶鴨好鹹同乾,素鵝唔脆,脆鱔明顯係翻炸,個煲都唔好提。以為咁就完左我太天真了,10點正又有侍應嚟催我地埋單,埋左單我地影吓相咁,10:15分竟然有侍應嚟話我地張檯上面個冷氣要洗,我地要走。Seriously?!又真係咁啱我地張檯上面個冷氣要洗,真係勁。
我地就走啦,其實佢咁趕收工,趕接下一檯客,趕呢樣嗰樣,就唔好收呢個價錢比澳牛嘅服務人啦!真係對親戚對朋友幾唔好意思!

見仲有少少肚餓、有職員行過,就諗住叫個高力豆沙。點知個職員完全冇意思行過嚟, 只係企係兩米以外問我想食乜
我唯有對住空氣點菜



高力豆沙味道ok,食物整體上都勉強算中規中矩,但服務絕對有待改善⋯⋯我冇期望過五星級服務,但都未至於咁樣
環境同服務嘅評分我其實一粒星都唔想比,只不過冇呢個選擇



一句講晒,下次食上海野都係去返銅鑼灣雪園。

台灣旅遊時都有食過三杯雞,今日在此餐廳都可以品嚐到,台式的三杯雞肉味道都會特別甜膩,而且肉質都是較乾,但在老雪園的九層塔三杯雞 就有不同的一番滋味,雞肉用紹興酒、醬油、糖、蒜頭、九層塔及麻油等去煮,端上來時已經香氣撲鼻,肉質滑嫩之外,咬嚼時滲出的醬汁是濃郁醇厚的,醬汁味道鹹中帶甜,雞肉煮得真是非常入味,而且同時散發出九層塔獨有的香氣,另外補充雖然醬汁都好濃郁,但比起平時食台式的三杯雞,味道又不會太甜太膩,水準真是一流。

最後來多一份蜜汁火方(跟方餅)把帶有鹹香的金華火腿片、紫薯、南瓜肉放在方餅內,一口咬開時除了感到方餅的鬆軟及桂花蜜的甜美,也同時湧出金華火腿的鹹味甘香,再有紫薯及南瓜的清甜味道,兩者的味道在口腔中互相交替,紫薯帶軟糯又有火腿酥化的口感,鹹中帶重甜的味道,而且香而不膩,非常令人有驚喜 。
