偶然回家的路上发现新开了家煎饼店,号称是正宗的北京煎饼,也就是国内说的煎饼果子,大喜,因为馋了很久了,苦于香港一直都没有,于是赶紧去解解馋。进去最奇怪的就是发现一堆服务人员,远多过客人,且几乎每个都无事可做。开口点餐竟然没人讲中文,但眼一看,哦,不是越南就是菲律宾,心里立刻开始犹豫:连个会讲普通话的都没有,这煎饼能正宗吗?好在味道闻着香,缓解了我的担忧。明明店里没客人,而且有大约6-7个员工,煎饼却姗姗来迟。想起以前家门口的煎饼摊子,一个人收钱做饼外加要照顾不同客人加什么料不加什么料的要求,如果是这速度,早就关门大吉了。耐着性子等了半天,终于拿到我的,结果我发现我要求去掉的一样料还是被加在里面了,无语。煎饼口感不错,但是酱料就离正宗查了十万八千里,调的可能比较符合南方人和老外的口味,总是淡淡的有点甜。其实呢也不是说不能有创新,本地化适应香港人的口味,但是如果是这样,就不要打招牌说自己正宗了吗,可以说创新什么的不也挺好?一个基本的煎饼30港币,考虑到地点和人工真不能算贵,但是我想对于大陆的朋友们来说,估计存在回头客的机会不高了。话说我坐楼下一边吃的时候就一边不停在想,这间店能赚钱吗?煎饼

一个基本的煎饼30港币,考虑到地点和人工真不能算贵,但是我想对于大陆的朋友们来说,估计存在回头客的机会不高了。话说我坐楼下一边吃的时候就一边不停在想,这间店能赚钱吗?煎饼是薄利多销的生意,也没有太多的提高附加值的附带产品,租这么大一个店面,外带雇了这么多人,这么才能收回成本呢?算了,我也是替店主瞎操心,呵呵,做管理咨询的职业病啊。

This place used to be the Leaf Tea boutique which did not do as well as Teavers or SinMei.

After googling it I found out that they were Beijng style pancakes which I then considered whether to try it or not because it was Chinese food, but after watching the video of the pancakes by Mr.Bing in Beijing, they reminded me of the pancakes at Tai O because they also contain a piece of crispy cracker in it.

I have never been to Beijing before so I wouldnt know what the Beijng style street pancakes taste like.
I can only compare it to the one I tried at Tai O.

When it finally opened, I was compelled to try most of their pancakes because they had sweet and savoury style pancakes.

The savoury ones were jazzed up containing duck and cucumber like the China town ones and for the Sweet one Singa-bing they had my favourite Kaya and dessicated coconut.
There is a Sweet Hongkie crepe which has peanut butter and condensed milk which is not really my cup of tea but after trying the Singa-bing, the Hongkie style pancake may turn out good.

For the pancakes, there are a choice of different flour bases which are: green bean flour, millet flour and buckwheat.
The piece of crispy cracker in the pancake works wonders, not only does it add crunch to the pancake, it makes the pancake rigid and easier to eat especially if you are out and about or walking.

Every pancake is freshly made to order.

The kitchen is manned by some friendly Nepalese people but for some reason the locals think they are Philipinos.

This was a vegetarian pancake but it was packed with flavours.
It had my favourite tofu sauce (red beancurd sauce) and the lovely crispyness of the pancake along with cilantro and leek was delicious.

This was also nice too because of the cucumber, duck and duck sauce which taste as good as the pancakes with duck and cucumber in China town.
I did not think I would like the pickled ginger in the pancakes but they were better than anticipated because they were not the usual sweet ones, they were slightly sour and refreshing.

It was fun eating this because of the crunch in the middle. The taste was a good mix of kaya spread and dessicated coconut.

Overall, I loved the pancakes here because there were so many flavours and the crisp in the pancake made the floppy pancake rigid and easier to eat.
Compared to the Tai O pancakes, the Tai O one is softer and has more egg and cumin in the taste.
The only factor I did not like was the paper bag they used because it gave off a waxy smell.

Real Beijing Shop Version -
It was obvious to me that the base sauce here was too sweet and rose wine based compared to the original versions. I mean I still liked the mixture between crispiness and dough crepe texture enough, yet it could have been more eggy within. Customers need to pay extra for their eggs, it is just so wrong when you aren't providing enough in the 1st place at all..

Mouth Feel was great. But Taste wise after talking to the owner, please don't be so defensive but we know what we are saying even if HongKongers aren't part of Mainland China. Original Beijing bings are more rounder in shape and quite a lot more eggier, they are also less sweeter yo ! Here it has room for some further improvement but getting there

我要了與店名同名的老金煎餅,材料甚多,辣蘿蔔干,薄脆,雞蛋,京蔥,香菜,配以自家製的醬料,辣醬,南乳醬,統統包在一起。

整體上的口感卜卜脆,香菜與辣蘿蔔干的味道突出,還有辣醬,南乳醬撞在一起,既辣又香濃的香味,雖然門外只有十三,四度,一邊吃著,身體還是感到慶恰恰。

店員包括:香港人、北京人及亞裔人,看似菲律賓人之類...!語言方面不成問題,收銀的店員有時是北京人、有時是亞裔人,說英文就最穩陣!


無食客時較為清閒,女店員自動自覺地打掃廚房,保持衛生!


我玩自拍,另一女店員主動幫我影相!完全感到熱情的服務!


食客可以站在店內一旁進食,店子提供紙巾、膠匙、膠叉;可惜地庫仍是裝修中!此外,不停播放強勁的英文流行歌,相當吵耳!

等候期間,看著店員弄煎餅的過程,由倒上麵粉漿 > 加上雞蛋 > 店員趁煎餅仍是半熟狀態時,先灑上黑芝麻,讓黑芝麻可牢牢地黏上煎餅!
> 反轉另一面 > 掃上甜醬 > 加上再配料 > 摺疊 > 以煎刀壓一壓 > 把兩旁疊上面 = 完成
見證煎餅的誕生!不知幾興奮雀躍!

我們選擇一款沒有辣配料的煎餅!由於我們四人分食,要求店員幫忙切開四份!
饀料豐富!包括:子薑、雞蛋、烤鴨、烤鴨汁、京蔥、青瓜。
聽外籍店主講,綠豆粉是正宗口味!加入綠豆粉,煎餅表面呈微小的黑色一點點!質感軟熟,況且薄身而不覺油膩!
雖然沒有辣配料,但是一入口很有風味!
烤鴨煎餅自不然令我想到北京填鴨!烤鴨富肉香!肉質豐腴!
味道上比片皮鴨配煎薄餅精彩得多!
沒那麼油膩沒那麼鹹,應該是迎合香港人的口味和注重健康的原因吧!
