昨晚到了這間在鰂魚湧的人氣高級粉麵店見識見識。原來地點是在屋台屋的隔鄰。環境像西餐館,食物卻是中式粉麵,都幾有趣。以撈麵、甜品作主打,撈麵供應五種粉麵(幼麵、粗麵、河粉、米粉及油麵)、七種醬料(峇拉醬、鹹魚醬、雞汁蝦子、雞汁大地魚、麻辣醬、冬蔭醬)及十多種材料(例如:魚片頭、牛坑腩、羊腩、牛脷、蝦球、等),任客人自由配搭。雞汁大地魚牛根腩撈粗麵($50),牛根腩看得出是好貨色,撈麵的麵條乾身爽彈,每一條麵條都撈得入味,好味,加上撈麵的清湯也很美味,絕對值得一試。雞汁蝦子魚片頭撈粗麵($42),魚片頭有魚味而且亦帶有一點的脆口,與一般坊間的魚片頭不同,魚味更濃,可惜只得三件。芝麻糕($20/3件),超濃厚的黑芝麻味,既沒有炒濃的味道,又不是太甜。

以撈麵、甜品作主打,撈麵供應五種粉麵(幼麵、粗麵、河粉、米粉及油麵)、七種醬料(峇拉醬、鹹魚醬、雞汁蝦子、雞汁大地魚、麻辣醬、冬蔭醬)及十多種材料(例如:魚片頭、牛坑腩、羊腩、牛脷、蝦球、等),任客人自由配搭。

雞汁大地魚牛根腩撈粗麵($50),牛根腩看得出是好貨色,撈麵的麵條乾身爽彈,每一條麵條都撈得入味,好味,加上撈麵的清湯也很美味,絕對值得一試。

雞汁蝦子魚片頭撈粗麵($42),魚片頭有魚味而且亦帶有一點的脆口,與一般坊間的魚片頭不同,魚味更濃,可惜只得三件。

芝麻糕($20/3件),超濃厚的黑芝麻味,既沒有炒濃的味道,又不是太甜。

朋友食新鮮牛坑腩 + 魚片頭撈幼麵配鹹魚醬... 試了一件坑腩, 肉味香濃, 質地亦爽, 好食; 又試了點魚片頭, 魚味十足, 不過如常勁厚切
, 食多兩啖都幾膩.

鹹魚醬菜心: 菜心夠嫩, 淥得腍甜, 而面頭的鹹魚醬就夠晒鹹香惹味, 不過亦帶幾濃薑味, 個人唔算好喜歡.

甜品揀了朋友 C 推介的「荔枝雪餅」... 荔枝味算清香, 不過荔枝肉冰凍實淨得結冰一樣
, 而「雪餅」其他部分就帶淡淡呍呢嗱味, 不過質地似足雪得太硬的木糠布甸, 食落 sok sok 聲, 整體麻麻哋好食.

食物繼續不錯, 配套亦然, 每人 $100 埋單都合理的. 有機會再試試花雕鵝肝吧.

花鵰鵝肝差不多成$100一客,鵝肝件頭極大,好像一塊扒.既然用得這個價錢,就當然不是來自法蘭西的靚貨,這個鵝肝來自匈牙利,匈牙利除了出產價錢經濟又好喝的餐酒之外,也是盛產鵝肝的地方.價錢比法國平一截,此店的鵝肝,不是用煎來處理,而是用花鵰浸之,以這樣來處理鵝肝,除酒香在鵝肝上盡情發揮之外,而且將鵝肝本身溶化,每一口是花雕的酒香,鵝肝質感細膩香滑,但這種質感加上酒香,完全不像吃鵝肝,感覺更像吃著腐乳,如果手上有幾塊多士,便可來個酒香鵝肝多士呢.

是夜主食,我要了本地新鮮牛坑腩撈粗麵.撈麵同坑腩分開上,嚴格來講是兩個不同個體,先說個牛坑腩,每一件也帶有肥膏,女友見到都怕怕.牛坑腩的筋膜位彈牙,連著的肥膏充滿油脂的甘香,瘦肉位入口鬆化,三種不同的感覺一次過.坑腩下的蘿蔔很爽甜,入口沒有渣.湯底雖不及九記,但也清甜.撈麵除用豉油之外,面頭更加上峇拉醬,歌神許冠傑說過,做人最忌就係"瀨野",最爽就係撈粗野,麵創坊的粗麵條質素好,完全沒有鹼水味.吃落去果然爽.但豉油味道則不夠濃,峇拉醬味道濃惹,有點點似XO醬.

女友的蝦球湯麵,麵條是幼麵,蝦球爽甜,麵條也是沒有討厭的鹼水味在內,質感柔韌亦帶彈牙.湯底有幾款可選,女友選了大地魚湯底,除了喝得出用大地魚煲出來的清鮮之外,亦帶有一點點馬拉盞味.始終主理人之前主打南洋菜式,自然在麵食上,滲進一點點南洋影子.

個人不是古墓派,也樂於接受新派事物,大前題當然要做得好.而這間借身還魂的麵創坊,做出來的麵食果然有水準.但是最大問題,就是同小勁健的意見一樣,價錢方面比較貴.一個在麵店,賣三十顏的撈麵.在此要成六十幾銀才有交易,叫個炒麵便要過百.同坊間的麵店價錢嚴重脫勾.

或者,此店的主力食客對象,是住在這一帶的"藍籌"級大型屋苑住客,單是做康怡花園居民生意,也足夠維持.好像我這些跨區過來的食客,已是Bonus.

朋友多次推薦過,今天終於有空光顧。早上落住毛毛雨,11:45去到,才知道是開12點,店員禮貌叫我地先入去坐坐,免得在門外等候dup雨,讚!點了【牛坑腩魚片頭撈面】,牛腩好霖,面夠彈牙,好味!但份量小了點,大碟少少就更好。店長推介了【花鵰鵝肝】,好創新的食法,果然好味。芝麻醬豆腐,芝麻糕也不錯。坐在近𥦬邊的座位,感覺良好。店內整體環境好舒服,在這樣的環境下,食物都會加分!另外必提的是洗手間非常清潔,有人話過,品評一間食店的優劣,她的洗手間清潔程度更為重要!個人認為評價食店「值唔值」比「貴唔貴」更重要。這店「值」得一試!

蝦湯鮮蝦掺掺麵 – 很有新加坡喇沙feel,幾隻以酒醃過的蝦球放在粗、幼麵上非常爽口彈牙,富有鮮味,吃起來很有酒香,湯有少許辣,不過可以接受,也很有海鮮的甜味。

花雕醉雞翼 – 很有酒香,雞肉也很滑,不過酒醃過久,以致很澀。

日本芝麻豆腐 – 很香的芝麻,放在滑滑冷凍豆腐面上,清新可喜。

荔枝雪餅 – 與其說是雪餅,我認為應該易名為冰餅會更為貼切。所謂雪餅其實是被弄成外形像切件蛋糕的荔枝雪糕,內面有兩層凍成冰狀的荔枝果肉。如果不是過度冰凍,以致很難在室溫下,享受那種將茶匙一匙一匙地沉入半溶的雪糕,再舀入口中那種感覺,而是要很用力去將沒有那麼硬的外層逐層刮出來吃。這樣吃來縱使這個甜品再美味,食客也難以充分享受箇中美味。整體來說,雪糕的荔枝味是很香的,而且有真果肉襯裏,外面灑上好立克,很是特別。

整體來說,服務一般,然而食物算是不錯。如果份量可以加大一點更好。值得一讚的是,雖然喝了許多湯,但是一點口渴感覺都沒有,就算有味精,也不會困擾食客。此店絕對可以試試。

兩個人大概8點去到得番大枱要平排坐, 感覺已經唔太好. 之後好快有細枱(4人枱)埋單, 第一次我地問可唔可以轉枱, 有個似乎係老闆娘嘅人話有另一枱嘅人等緊轉枱同埋佢地係3位嘅, 咁無計啦. 不過坐咗成晚都係得兩個人坐係度囉!再之後又有細枱埋單, 那個似乎係老闆娘嘅人又話有其人等緊唔轉得, 但係個張枱之後成晚都冇人坐囉! 今時今日咁嘅服務態度真係唔得囉!講番d嘢食, 點咗兩個撈麵, 等咗超過半小時都冇嘢食就更加嬲. 六十幾蚊個撈麵唔算平, 份量小, 味道一般啦. 一句講哂, 冇下次!

食友阿蝗在FB的一句說話,便令我決定動身前往,在地點上未算太方便,但如總算由家出發會有一輛巴士直接抵達。這間位於鰂魚涌的新店子名為「創麵坊」。中午時分到達,人客不多,找了個角落位置坐下。起初一看餐牌感覺有點複雜,要細心再看一次便明白如何配搭。分別點了雞汁大地魚牛脷撈粗麵($40.00)、醉酒牛脷托($20.00)、餐飲熱奶茶,本地新鮮牛坑腩大地魚河粉($58.00)、日本芝麻凍豆腐($20.00)、餐飲黃綠相配檸茶。先來兩款小食,醉酒牛脷托的酒味濃郁,牛脷托有咬口,牛脷味亦夠濃,份量亦多,吃得過。日本芝麻凍豆腐應該只是用本地貨,但其實現在的本地貨水準也不差,就算是主打日式火鍋店也是用本地「百記」豆腐,其實水準也不錯。豆腐夠滑,只是豆味不濃,麻醬的鹹味調得剛好,凍豆腐的隔水亦足,不會因而令味道變淡或稀。雞汁大地魚牛脷撈粗麵的賣相不錯,牛脷一片一片排得齊齊整整,伴著一碗應該是雞汁大地魚的湯,呷了一口,帶點清甜味道,是否有雞汁在其中,著實不知。再吃一片牛脷,切得厚身的牛脷令口感豐滿,牛脷自身的味道濃郁,又富有彈性,十分不錯。撈麵已被豉油撈勻,色水較淡所以味道亦然。麵質帶點彈,鹼水味不重,合格

雞汁大地魚牛脷撈粗麵的賣相不錯,牛脷一片一片排得齊齊整整,伴著一碗應該是雞汁大地魚的湯,呷了一口,帶點清甜味道,是否有雞汁在其中,著實不知。再吃一片牛脷,切得厚身的牛脷令口感豐滿,牛脷自身的味道濃郁,又富有彈性,十分不錯。撈麵已被豉油撈勻,色水較淡所以味道亦然。麵質帶點彈,鹼水味不重,合格。

本地新鮮牛坑腩大地魚河粉無論是坑腩、配菜蘿蔔或是河粉,份量同樣是很多。大地魚湯夠清,但其實與加了雞汁的分別不大,蘿蔔雖嫩但不甜,有形無實。河粉屬粗身彈牙,主角坑腩牛味濃郁有嚼勁,整體上屬中上之作。飲品方面,熱奶茶尚算不錯,有茶香亦夠滑,而另一杯飲品黃綠相配檸茶不屬於我,但聽來評價不錯。

整體上食物質素在中上,絕對是吃得過,但價錢則有點偏高。由於店內的裝飾與餐具也定在有品味路線,價錢亦要相應地提高。店子面積不算大,要盡用空間之下便唯有用窗細小的桌子。但餐具卻精緻地選用不同形狀的設計,在頗狹窄的桌子上擺放,便會顯得格外擠迫。

席間便出現顧客與服務員,因地方狹小而出現投訴的場面,最後雖然沒有甚麼不愉快事情發生,但服務員卻因為不想再為那些顧客服務,而叫另一位服務員負責該招待,這樣的安排令我覺得有點兒奇怪。由於服務員就在我的前方細聲地談論此事,令我將一切聽入耳裡。

老闆將平民食物化妝後,將其放在中檔路線的店子內,感覺是不錯的,但如果可以保持食物的水準,但用較平民化的麵食包裝,讓更多普羅大眾可以品嚐,或許我對它的評價將會更高。始終花六十多元吃一碗麵,未必人人願意花或是花得起。

一行兩人去試新店,同樣點了坑腩片頭大魚湯底,一份撈粗,另一份糝糝(即米粉混油麵)。另加醉酒牛脷托和雞翼小食。各方面都不過不失,坑腩都爽,麵也彈口,湯底的蘿蔔反而特別出色,應該是湯底夠味。環境其實不錯,但不知為什麼硬迫我們坐張二人單邊檯,當時全店只得幾個客。只於價錢,會覺得偏貴!去東大街安利食一半價錢便可以!

湯底就同羊腩的一樣 (應該都係同一煲來的吧?), 不過呢個就梗係少一份羊味啦, 哈哈.

飲品叫了招牌「創坊奶茶」: 賣相好滑, 飲落亦然, 不過只有奶香, 茶味好薄, 唔太喜歡.

食完麵餐勁飽, 今次註定同朋友 C 介紹的荔枝雪餅無緣了.

食物不錯, 環境亦乾淨企理, 可惜我哋坐的 2 人檯幾窄, 仲要坐喺 4 人坐 6 人檯, 但又勁 "ngah zah" 的隔嚟檯, 都咪話唔辛苦.

埋單每人約 $75, 唔算好貴, 雖然食物並非無敵, 不過嚟開喺呢頭都值得試試的.

套餐的小食選了蒜泥小黃瓜, 蒜味原來也頗強勁, 又是香口膠出動的時候了。
黃綠相配檸茶 (原價 $15) [是不是給醫生喝的?!] 是檸檬加青檸, 特色是多了青檸的獨特清香, 是不錯的賣點。

除了麵食之外, 甜品也有水準, 馬蹄杞子糕 ($18/3 件) 有手造的家庭式風味, 而一直想吃的芝麻糕 ($18/3 件) 要了一客外賣, 芝麻味香濃而不膩。

其馳名的花雕醉酒鵝肝和雪餅還未試呢, 反正現在有得儲印仔, 價位雖不便宜也可以再來的。

In fact, I had deliberately written about my experiences at 九記牛腩 & 壹碗麵@灣仔 1st, before writing this finally as a comparison.

牛坑腩 + 魚片頭 + Belachan 撈粗麵 -
There are 2 types of 牛腩麵 options available in this shop. The other 根腩 bowl version is said to use US albeit frozen beef. The version I ordered is locally sourced fresh HK beef - it definitely tasted like it!
Although this dish was advertised as 牛坑腩, in fact it also came with a little bit of 根腩 & 爽腩. The 坑腩 was quite tender and fresh tasty, the 根腩 spot on with cooking retaining its half-crunchy half-fatty texture - it couldn't have been better! 爽腩 on the other hand was also perfectly cooked, I simply cannot rememeber this part of the beef being cooked so spot-on in any shop I've been to. Not even 華姐.

The Noodles although 交來貨 are sourced from a famous noodles supplier in HK - you can taste the difference. The thick noodles have been mixed with a sesame and spring onion plus soy sauce mixture - its aromatic, tasty, and beats 安利 & others hands down without that annoying bitterness in background. 魚片頭 is around 70-80% fish, you can really see plus taste it. And did I mention that the Belachan sauce is home-made by Chef 鍾樹棠, its pretty good too!


牛脷 + 大地魚撈粗麵 -
Another pretty good dish! The Ox Tongue is tender and although not grilled, still full of natural tongue flavours - I don't think it'll suit everyone but its great for what it is! The 大地魚 seemed slightly bitter but nevertheless quite good. This 粗麵 came pre-mixed with clear chicken stock rather than the above slightly more soy-saltier rendition.

牛湯 -
This soup comes free with above 2 noodles dishes. Its a Clear Soup type with Medicinal properties, though different altogether from 九記's version. Here, its less fatty but seemed a bit healthier without the floating fat scums!: apart from the usual suspects such as 花椒, 甘草, 八角, 蘿白, etc, its also boiled for a long time with 肉參, 紅棗, 牛骨頭, etc. A very thoughtful soup-base with a lot of depth, comparable to 九記 but in a different way! Reminded slightly of Vietnamese pho broth though!

葱油新鮮雞 -
Its not easy to find fresh chicken in smaller establishments, as fresh chicken is much more expensive to source. The fact that the owner & chef here have chosen to go down this path is testament that they're very serious about their food, rather than looking purely at profit margins. Unlike many other places also boasting of serving Fresh Chicken, I actually found that there was good chicken taste here for a change! The sauce is pretty good, full of spring onion essence though a bit oily. Meat is a little bit stringy however, probably due to rigor mortis problems, but at least it was chewable and not as tough as the ones I ate twice at Sai Wan's 新鮮雞飯店 ages ago or 悅香. $48 for this quality is very reasonable.

鹹魚醬菜心 -
The 鹹魚醬 might not be home-made, but its pretty good. The 菜心 seemed slightly under-cooked but retained their original flavours, which I treasure as I love that vegies fresh taste!

OVERALL - THIS IS ONE OF THE BEST NEW NOODLE SHOPS AROUND THAT I HAVE ENCOUNTERED LATELY. SERVICE WAS ULTRA-FRIENDLY BY EVERY SINGLE STAFF MEMBER, NONE OF THAT PUSHY & COCKY ATTITUDE SHOWN @ OLD SCHOOL PLACES LIKE 九記 OR 麥奀雲吞麵.... A MAJOR TURN OFF, PLUS THE QUALITY HERE IS HIGHER OVERALL.

EVEN THE FAMOUS CAKE HERE, ARE SUPPOSEDLY MADE FROM FRENCH NORMANDIE IMPORTED CREAM - YOU COULD CALL IT EXPENSIVE AT $30, BUT HOW MANY PEOPLE BOTHER TO USE A SPECIALLY IMPORTED
'CREME' JUST TO MAKE THEIR CAKES, WHAT, IN A HK NOODLE'S SHOP? I CAN'T FIND ANY REASON NOT TO GIVE THIS PLACE A '5' - BUT I GUESS IT CAN STILL BE IMPROVED SLIGHTLY! ^o^'

The texture was like ice-cream, that melts in your mouth, and without the oilyness as it was not pan-fried.

Overall, this place is good, but depends what time you go, as it can get rather noisy and the staff can't hear what you want to order.
But then Hong Kong is limited in floor place, and owners are more concerned on closely packed tables rather than spacious relaxed dining.

行過兩次, 昨晚終於一嘗滋味.主菜 : 牛坑腩大地魚摻摻甜品 : 荔枝雪餅牛坑腩口感ok; 大地魚湯底比較突出, 清得黎味道夠濃. 以$58價錢而且質素常可. 反而荔枝雪餅有驚喜, 味道清爽每一水口都食到荔枝肉, 足料!!!
