希慎新店相比別的多份低調, 得要摸到樓上去, 小小的舖位似乎只容下餅櫃, 也許時間尚早, 款式滿齊全的, 只見色彩相當多變, 不同的用色交錯在一起, 要吸引路人目光也不難。

見店員小心翼翼地用膠紙穩固好, 還附上冰袋, 不然大熱大時怎樣小心翼翼也沒用, 回去打開不埋怨自己才怪呢! 刻意不選濃味的朱古力, 只因剛才吃得太甜膩啦! 要盡量「節制」下。

飾面用上小粒棉花糖和朱古力片, 看似隨意然而又是精心舖排, 有趣有趣! 荔枝慕絲佔了近半的比例, 清甜怡人, 一嚐便認出是荔枝之香, 加上士多啤梨果茸, 這對酸甜配甚為出色
, 夾著底層的果仁脆糖, 一滑一軟, 幸福的味道頓時在口中綻放。

但凡餅櫃有拿破崙的存在, 都不想輕易錯過, 本身愛吃果仁又喜歡香口感覺, praline mille feuilles($40)自成了我的心水之選。 整件以榛子、果仁醬、朱古力、牛油酥皮層層相間, 分明細緻, 烘成焦黃色很是誘人。

酥皮可以再鬆脆一點, 沒沾到過多濕氣, 扎實且細密, 未感空洞, 牛油味以外還多份焦糖香, 有點甘甘的, 緊貼著香甜的果仁醬和軟朱古力, 夾雜不少碎果仁, 一層一層地排著, 充滿咬感

內裡藏著厚厚的士多啤梨慕絲, 輕柔細滑, 只嫌莓味不太出眾, 還以為只雲呢拿作主導, 得靠莓果夾心挽回些分數, 酸得清爽, 餅師似乎想在口感上營造強烈的對比, 底層既像曲奇餅, 但又頗黏牙, 不完全鬆脆, 是有點奇怪
, 個人覺得簡單的杏仁蛋糕底反而更合襯。

再次謝過友人的甜意, 連自己都覺得甜得太過份, 卻又這麼痛快. 偶爾的放鬆, 還是放縱, 也是對自己的一份寵愛。

雖然宅女不算是個甜人, 但有時耐不耐總想吃點點甜來滿足一下味蕾剛好來到希慎, 想都不想就走來了Paul Lafayet, 本來打算番吃燉蛋, 但突然又想來一點巧克力最後便選了這個朱古力慕絲 (HK$40)店內雖然地方細但仍有3,4個座位可以堂吃. 一杯份量其實不算很大, 但一個人吃完應該會很滿足.表面一層頗有厚度的朱古力, 質地都幾幼滑順喉而底下就全部都是朱古力慕絲, 入口濕潤度都幾重, 不算輕身, 但吃起來很實在, 而且朱古力味香濃, 甜度不太高, 吃完整杯都不覺好膩. 味道不錯, 也會再番吃.

The cake shop provide like 20 different kinds of artisanal pastry , wide range of selection is sometimes a difficulties for me to choose since I am a cake fetish ! At the end ,I bought 7 pieces in once , so let's take a group photo first ! Look at that array of delightful colors , all are exquisite gems for gourmands ! Berries and Macaron Tart filled up with fruity mixed berries , the raspberries and blueberries are still fresh and add a hit of sourness to the chocolate short - crust pastry bade . This dessert is an ephemeral work of art . The cake is decorated with finest ingredients, but the macarons is over sweet and lost it nutty crunch texture . Overall taste is above average , not too sweet with fruity sensation , however the general  texture is a bit soft and soggy .

Blueberry cheese cake are not impressed , ordinary but not traditional . Slow baking can't create it original texture and the cake is not in that dense cheesy flavors . The cake is more like sponge cake that it is not what a authentic cheese cake should be . I am disappointed with that extreme small portion in the price of 40 . From my point of view , this is certainly not a choice for cheese cake lovers !

Baileys Dome is really lovely with that mini macaron decoration . Look enchanting and tastes superb ! The Baileys Dome was set as the cake of the month by the server introduction .Chocolate brownie and Bailey's Creme brûlée were encased in a mouth -watering Bailey 's bavaroise . It's just so arousing and the texture surly moves you , all the ingredients strike a right balance , glazing in a refined architectural shape . A unique way to enjoy this soft delicious !

第二款是荔枝味的Macaron,外層餡餅一白一粉紅,是次這杏仁酥餅外殼跟之前的Poppy有丁點分別,吃起來就是較為黏牙,酥得來就是不夠化,雖然問題不是太嚴重,但這是吃得出的分別,而且內餡的荔枝味也不見得很突出,整個感覺被第一件比下去。

第三款的口味Banana Balsamic也如是 ,其外層的餡餅也是不及Poppy的鬆,濕得來有點黏牙就出事了,所以本人也特意問了店員這Macaron何時何地做出來,原來店家的Macaron是每日在香港人手做成,日日新鮮,不過香港夏天晚熱又潮濕,所以當中兩款可能被天氣影響了也是不足為奇。

說回這個香蕉黑醋口味,店家在香蕉打成的內餡當中混入了點黑醋,黑醋的酸味被香蕉的甜味平衡了,酸甜平衡,本是好事,不過好景不常的是,那股黑醋味在夾雜了其他味之後,予人就是一種不太自然的澀味,看來店家真的要細想這一個問題如何解決了。

試了店家數款新口味的馬卡龍餅,另外也試了它們的鎮店之寶,焦糖燉蛋及檸檬撻,檸檬撻其實不全然是檸檬撻,其實它的正名是Lemon Meringue Tart,用上了祖傳配方,使得檸檬餡酸甜平衡,但偏偏其檸檬味還是很濃郁,面層的忌廉更有如緩衝劑,潤滑了檸檬餡的酸性,使得入口就變得既香且滑,加上酥脆的撻皮,實在叫人吃得愉快。

店家也有一小件士多啤梨撻供大家品嚐,大大粒的草莓下,其實就只有吉士及撻皮,值得一讚是吉士、士多啤梨及撻皮的比例剛好,很多店子可能會放上過多的吉士,其實那怕是一比一比一,吉士的甜膩也會破壞了平衡感,所以吉士真的不用太多,因為它本身是夠甜夠膩,所以只要上一點點來襯托主角士多啤梨的鮮,配上酥脆的撻皮來吃,就已叫人滿足。

最後的那一件是Chocolate Craquelin,它有如一大件軟芯巧克力,這原因很簡單,皆因這一款蛋糕的賣點就是無麵粉,所以沒有發起來的感覺,其質地就變得很密很實,入口全然每一個空間都是味道香滑而濃厚的巧克力,在口中慢慢的待它融化,細味可可帶出一點點如杏香、如一點果酸的香氣,實在跟吃Truffle Cake有着異曲同工之妙。

最後就由法藉師傅親自出馬去為大家燒製焦糖燉蛋的焦糖了,店家將預先冷藏了的燉蛋先舖上一層薄薄的法國黃糖,然後用火槍燒焦表面的黃糖即成,也千萬不要以為這個動作很簡單,坦然如果大家只要求一層焦了的糖,不理其厚度及焦度,那當然是另作別論。

很快大家都有得吃了,這焦糖燉蛋面層的焦糖果真非常非常之薄,薄得是用匙羹輕輕一敲即破,吃起來只有甜甜的焦糖香味,絕對不會過焦,也沒有為牙齒成為負擔,而裡頭的燉蛋很嫩滑,而且帶有豐富蛋香,最重要就是喜歡它不過甜,坦然在香港也許很難會找到比它好的焦糖燉蛋了。

前後小試了此法國名牌的數款甜點,吃畢每次也有幸福感,而那個巧克力蛋糕就更加是濃郁得教人着呆,如果容我以濃情巧克力來形容這個蛋糕,本人都認為很是合適。

Chocolate Gold Dust Heart: I had no idea what to expect from this and thought that it would taste really artificial due to the red colouring. However, I WAS WRONG! This was my favourite!Surprisingly, the outside was crunchy and didn't taste sugary like how icing can be sometimes. Then, the chocolate mousse inside was rich and creamy. This heart truely got to my heart! 


Matcha Cremoso:  This one was smooth and creamy as well. Maybe because everything with matcha kinda tastes the same to me so this wasn't too exciting. Also, I thought it tasted alright but it had a weird aftertaste. This was my aunt's favourite. 

Bailey’s Dome: Can anything with Bailey's be bad? Ha! This one too had smooth, creamy mousse inside that sent you to heaven for a while. 
 You could definately taste the Bailey's so if you're a Bailey's fan, you'd like this for sure. This was my sister's favourite. 


Crème Brûlée: Last but not least, this came in a Paul Lafayet signature ramequin that you got to keep. Yeah! It's so pretty too and it looks well made! My sister said that the staff told her that this had to sit for 45 mins before eating. I wonder why though. Anyways, the custard was smooth but a little too sweet. Nonetheless, it was good!

Overall, everything was really good but they were all on the sweeter side. Also, maybe because they were all mousse cakes so they all had the same texture.

我的最愛,依然是清甜的「lychee 星星」,不但喜歡它的顏色,而且荔枝較熱氣,多吃會上火,不過多吃 lychee macaron 就不怕了。

黃拼灰的「earl grey 星星」 則有點失準,不知為何茶香比上次吃過的淡薄。

最後才吃 「passion fruit 星星」,因為覺得它跟「月亮」的分別不大,而事實上,兩者的味道確實很相似,但「passion fruit 星星」欠缺了芒果的香甜,所以酸味會較為突出。

很瘋狂呢 ~ 一次過 K.O. 了全部 macarons,但它們的保存期只有兩天,真的別無他法。。。 不過為了健康著想,真的要提醒自己這一個月內不準再碰 macarons 了!

最後,我們弄了兩款 macarons - 深綠色的 yuzu macaron 外脆內軟,帶點煙韌的質感,除了清新的柚子味,還有淡淡的杏仁香,不會過份甜膩,而且質感和味道都非常正宗,可媲美在法國吃過的 macaron。銀色的 earl grey macaron 則散發著清幽的茶香,更討人歡喜。

作為一間馬卡龍專門店,口味確是繁多,部份款式亦很創新,最後成為寵兒的款式分別有茘枝、茉莉花、開心果、焦糖、百利甜酒、意大利泡沫咖啡及朱古力,當然亦不少得芒果熱情果口味。擔心忘記所選款式?不用怕,因店方亦送上一張圖文並茂的單張簡介,比較後一目了然。各款馬卡龍小巧精緻,顏色鮮豔討好,咬下先有脆口感覺,接下來帶點煙韌,最內層釀有軟滑夾心,口感富層次。味道方面,甜度比預期輕,不會過漏,尤其是花香水果款式,酸甜口味更見平衡。個人較喜愛的口味分別有茘枝、朱古力及熱情果。

兩年前第一次在尖沙咀 K11 經過 Paul Lafayet,被那些精緻的甜品吸引,外賣了 Chocolate Mousse 和 Lychee Mousse Cake 一試難忘!今次經過希慎分店,雖然店內只有 8 個座位左右,但還是點了 “外賣便失真” 的 Apple Crumble 和 Crème Brûlée 堂食。Apple Crumble:大讚!!Crumble 面焗得好香脆,而蘋果肉饀又不會太甜,喜歡吃提子乾的我覺得加點 raisins 會更好味!Crème Brûlée:讚讚!!店完即場加上糖粉燒脆表面,而燉蛋非常看滑,這是堂食才能享受到的美味。

Apple Crumble:大讚!!
Crumble 面焗得好香脆,而蘋果肉饀又不會太甜,
喜歡吃提子乾的我覺得加點 raisins 會更好味!

店完即場加上糖粉燒脆表面,

吃完那個出色的Benedict甜胃仍不能得到滿足只好來到這個甜品大師的小舖吃三個甜品作為完美的終結吧首先便是出名的我之前還以為她是熱辣辣的可是原來只有上面的一層焦糖是熱的,下面是冷冰冰的燉蛋,可是仍不負所望,忌簾滑滑的質感,還有香濃的雲呢拿味,和什是突出的旦香!輕輕敲開面層的焦糖,看着下面一粒粒的雲呢拿籽,頓時感覺很滿足!Mixed berry tart這個甜品是三個之中最為失望的,是軟軟的裏面有着吉士醬,雖然上面的雜苺十分香甜和新鮮,但是厚厚的果膠,令人望而生畏上面開心果味的馬卡龍,口感煙煙銀銀,開心果味很濃,算是一點安慰吧!Poppy heart鮮紅色的表面艷麗非常,可是卻抵擋不住內裏的朱古力邪惡!狠心切下去,露出朱古力內餡,香軟幼滑,朱古力濃度剛好,是太甜也不是苦,難怪也是大師的高級作品!是晚吃得真的很高興,只是啲服務不太好,可以改善一下!
