用料大多不是什麼名貴食材,就是要夠地道夠新鮮,部份菜式更是工序繁多,吃的都是大廚們的心思手藝。九層塔香燜海蠣熱氣騰騰上桌,鍋蓋打開九層塔的香味撲鼻而來,有點像三杯雞,吃起多了海蠣的鮮味。九層塔獨特的香料風味,經過細火幹燜,完全滲入到每粒海蠣肉裡。福建海蠣煎滿滿的海蠣,新鮮甜美,加入韭菜去除了腥味,加入地瓜粉的蛋漿,外酥內嫩,鮮味十足。金牌脆皮蒜香雞(半隻)香蒜醃制而成,入口淡淡蒜香味,雞皮金黃脆薄,皮下脂肪極少,雞肉嫩滑。阿溜土筍凍晶瑩剔透,一條條形似小蚯蚓的星蟲在晶體中清晰可見,星蟲滑溜爽口,土筍凍軟軟的但有彈性,入口即化。芋香鴨外皮炸得好酥脆,裡面的芋泥綿軟,吸收了鴨肉的鹹鮮,口感很豐富,齒頰留香。
