I heard about this Michelin-Star restaurant from Japan from a friend of mine who used to live there and my expectations were quite high with this one. One thing is certain, the Hong-Kong version is really good and it does not disappoint. The soup especially is really tasty, it was one of the rare times where I actually drink it al the way at the end !!Located in IFC Mall, I think it makes for a great and necessary addition to the few affordable and good lunchtime options for those who work there

Located in IFC Mall, I think it makes for a great and necessary addition to the few affordable and good lunchtime options for those who work there. For those who don’t, they won’t regret their travel to this beautiful place !

總括嚟講,由聞👃到食👅呢碗拉麵🍜,overall都好有層次感,但可惜份量太少,以呢個價錢實在有啲唔值,加上摘星⭐️關係,自然對佢哋更有要求,所以如果下次唔使排隊,而你又係拉麵超級超級超級fans,咁都可以一試嘅,否則就留待下次去東京食本店啦!😛😛😛

東京好出名嘅拉麵店金色不如帰,我自己反而冇食過東京嗰間,一來就試呢間係香港嘅過江龍。當日5:30入去食完全唔使排隊,座位都唔算太逼。我哋兩個人叫咗佢哋最出名嗰兩款拉麵,貝汁鹽味拉麵同貝汁醬油拉麵,湯底好有海鮮味,但係唔油膩又唔漏,上面有少少黑松露醬,本身自己都鍾意黑松露味嘅,但總覺得同拉麵有啲唔係好夾,麵條聽聞係自家製唔係來貨,我幾鍾意佢個麵條質地, 彈牙清爽,叉燒係淋嘅但唔覺得有啲咩特別。佢碗麵無跟糖心蛋,要另外追加,糖心做得幾好好流心,但豉油同蛋味略嫌淡左啲。我哋仲帶叫咗碗叉燒飯,都好食嘅但係冇乜特別。想講一講餃子,佢啲肉切得好細粒又有啲散唔係好似平時食開嘅餃子,又唔係唔好食嘅,係有啲得意囉。最後仲叫多咗個炸雞,炸漿唔太厚幾好,但個炸漿同雞本身冇調味咁,要靠個沾醬喇。整體來講都好食,喺IFC來講唔想食到好貴,但又唔想食快餐,呢個算係幾唔錯嘅選擇。

今天特意去試一試以米芝蓮一星作主打的拉麵,早知道一IFC食野一定好多人,所以一早睇定有無得online 取票排隊,可惜門口說有,但App 中卻找不到,不知如果回事?中午12點正到門口,已經有約20在門口,要等太約6張2人枱,一個人來吃應該可以快點取到枱。鋪頭不算大,可以坐最多50餘人。等了約20分鐘就有位置,已經快過間好難食的kiki麵好多。我點了最出名的貝汁醬油拉麵和吉列芝士豚肉棒,點完不夠3分鐘就上菜。一來到就覺得麵很細碗,幸好叫了小食,不然一定不夠食。湯沒有照片般深色,將d醬同湯撈完之後,覺得有點油。不過如果鐘意濃味ge應該不會十分喜歡, 因為個湯都幾清,但不是十分鮮。麵煮得剛剛好,不會太軟,但我估有d人會嫌硬。吉列芝士豚肉棒就好大條,芝士味不是特別濃,好普通。我覺得伴碟個沙津菜仲好食。

Boyfriend ordered their Shoyu Hamaguri ramen ($128).  This was their signature. The ramen had  pork belly, slow cooked cha siu, porcini flakes with porcini oil and black truffle paste. The soup was their signature soup made of Hamaguri clams, sea bream fish and pork. Topped with spring onion and leeks. The soup was amazing.  A clear strong broth with an intense taste of clams. Boyfriend did not like how the truffle covered the soup though. He  found it too distracting. However, the cha siu was disappointing. Not much flavor at all. It just felt like it was boiled and not much else. The noodles were the worst. Just plain soggy.

I ordered the Shio Hamaguri ramen ($128). This included the same broth as above with the addition of slow cooked cha siu, pork belly, white truffle oil, porcini duxelles and pancetta chips. This was further topped with chopped herbs and leeks. The soup here was better than the signature one as the taste of truffle didn't distract from it at all.  Thi caused the taste of the clams to be even more intense in the soup. The cha siu again here was disappointing. No flavor and felt like it was just merely boiled meat.

The soup was definitley good. But everything else fell apart. The nail in the coffin was the noodles. Never had I had noodles that were so over cooked. At this price range, there are far better places in Hong Kong for ramen. For this place, I think I'll just stick to the one in Tokyo and never return to the Hong Kong branch.

另外我想講既係叉燒真係超薄的,同埋只係得兩塊,一塊低溫叉燒,一塊三層肉,如果真係唔夠喉既過要另加錢再追加。

聽朋友講想試日本黎既米芝蓮拉麵鋪,就試左呢間。我地五個人,walk in就等左大約半個鐘先有位。叫左佢地既signature拉麵,d麵質好似蕎麥麵,湯就好普通,唔係慣常既濃拉麵湯底,塊叉燒好薄好普通,除左讚刀功好都唔知講咩好,唯一值既應該就係個少少既松露同服務好。呢個價錢值唔值就真係見人見智。

整碗麵最得我心是這北海道產上乘特製小麥粉自家製成的拉麵,須是幼麵但咬口挺豐麥香亦濃,能索盡湯汁精華比光喝湯更為吸引!耐何是份量真的偏少如大胃點的女仕也不夠吃更遑論男仕!!

再點來自家製黑豚肉煎餃$68大家分享,餐牌寫了用上等西班牙杜洛克豚,配以筍絲、菇菌、蔬菜來製作,我覺得煎餃煎得未夠香口,內裡的餡料亦只能說正常沒多大的驚喜。

過百碗拉麵已經是常識吧!用過百蚊食碗肥米的拉麵也是最少門檻😀今日係平安夜有得放早唔使排隊等位就有得食因為未夠六點!要試就一定試貝汁醬油拉麵,不用等太久就來!嘩!香噴噴!一碗來的時候就香味直入鼻孔!又熱辣辣!再淺嘗一啖充滿有油份的湯、有松露、醬油在內實在芬芳撲鼻!麵身夠硬淨、冇糊口、冇沾身!五花腩肥瘦適中,肉質鮮嫩又鬆軟、只是比較簿身冋同細件,义燒相對比較入口甘香!但多喝兩口清湯就發現唔對路啦!係好鹹!

這裡也要稱讚一下金色不如帰廚房員工,他們分工專注處理,四個廚工,一名負責煮麵條,一名負責湯底,一名負責鋪置配料,一名負責出菜時最後把關,嚴謹專業。而我亦留意到近年香港拉麵界一個步驟,特別多在較高檔的拉麵館如金色不如帰、立体派及一幻等等,他們多在煮湯豉時常用鹽度計或濃度計檢測湯底的質素,甚至乎湯頭完成,厨師師傅甚至日本創辦人專程來訪,都會拿一小匙湯頭用舌頭測試,相比起單用指引或使用時間掣謹慎得多,當然,香港水質和日本比較,又是有點分別。

單看小食價錢也咋舌,雖說是小食,但價錢近乎一碟小菜,我在想吃什麽小食時,幸好我的吧檯座位看到厨房的出菜口,可以慢慢研究。叉燒小碗飯真的用小碗盛載,兩三口便吃完,賣相精緻,小姐們可以試試,但對於我這個嗜肉鬼就沒有吸引力,所以有機菜沙律及味噌豆腐也非我心頭好,那麽就剩下三款小食可能會選擇。黑豚肉餃子雖然是自家製作,但其他拉麵店也有此產品,我見到另外剩下的兩款小食名字特別,於是也放棄了煎餃子,把心一橫,貝汁鹽味拉麵份量僅僅到半飽,何不全叫芝士豚肉棒及唐揚?兩款小食價錢合起來價錢超過一碗貝汁醬油拉麵。

正如先前所說,一分錢一分貨,兩款小食都好食,但至於哪一款較好,我會表示吉列芝士豚肉棒較好,撇開味道,價錢豚肉棒比起唐揚較平,而且賣相很大碟,侍應會問客人是否需要分段切開豚肉棒,切開會有四至五小段,芝士汁會流出,味道大路濃味,外皮香脆,還伴有蔬菜沙律,點菜不久就有得吃。

相反唐揚博多華味鳥價錢較貴,又只是小碟內有四小球,出菜又等得相當時間,是否覺得選擇錯了? 我會表示這個唐揚可以一試,原因是口感特別,唐揚外層炸至金黄香口,有脆感但不會因牙咬鬆散四射,有點和豚肉棒的外層不同,肉質感覺較為新鮮細嫰,我認為並非雪藏冰箱九州雞肉,雞味淡淡存在而且僅僅入味,似乎是我點菜後才加調味料製作,另外最特别是咬下雞肉時會流出肉汁,加上蜜糖芥末醬,有點酸酸甜甜,雖然只得四小球,小食多滋味,我認為唐揚好味道過芝士䐁肉棒。

在金色不如帰其實只吃一碗麵已心滿意足,想儘興一點可以飲點酒或吃個小食,因為這是拉麵酒吧。至於是母公司直營還是有代理幫手經營,那就要再查册一下,但我察覺到的是,金色不如帰使用的等位攞飛系統,和觀塘神山麵屋所用的是相同款式。
