The ramen was served in a warm bowl, which I really appreciated. The broth was very thick, rich and slightly greasy. So divine that I finished all the broth but left over some noodles.

The charsiu was honestly too small. The one in slow cooker was like the cooked ham we put in a sandwich, especially with the pepper rind. The seared pork belly had a balanced fat and meat layers, but too thinly sliced that I couldn't enjoy the texture of it. Would be better if they could combine the two pieces into one. The egg was nicely marinated and very jammy.

One thing I didn't like was the air-conditioning. Too cold that cooled off the food so quickly.

既有傳統日式拉麵小店的開放式廚房及拉麵吧檯座位,又有新派拉麵店的裝修風格及小餐枱。以本地拉麵店來講,用餐環境也算舒適。更加估唔到嘅,小店雖小,只有20號座位左右,但竟然有四位廚房員工(包括老闆兼拉麵店大師傅)及三位服務員,人手足夠有餘。

店員端上拉麵後,熱辣辣的香氣已經撲鼻而來。賣相同餐牌上的照片接近一模一樣,做到了日本拉麵店一絲不苟的認真及堅持,抵讚!這一份認真,很多本地小店固然未能做到;甚至某些來自日本的過江龍拉麵連鎖店也未必做得到!

有別於其他拉麵店的原片乾紫菜,改為加入一大撮紫菜碎,每啖湯、甚至每啖麵條也可沾上紫菜。湯底濃稠適中,表面凝固了一層薄薄膠原脂肪;入口味道濃郁、少少黏口,只稍為偏鹹了一點點。除了豚骨及醬油味道之外,滲入了魚介鮮甜,魚鮮味突出;比起其他拉麵名店的豚骨魚介醬油湯底,絲毫未見輸蝕。

火炙叉燒採用豬腩肉先捲紥、再浸煮制作而成。切成片後每片叉燒肥瘦相間,放上拉麵碗前再經過火炙處理以引出脂肪香氣。入口同慢煮豬肩肉完全不同,既有軟滑豚脂,又有鬆化豚肉。不容錯過放在火炙叉燒上面的一丁點秘製辣醬,香辣惹味、辣香濃郁,配合同樣重口味的火炙豬腩肉,一絕!

拉麵出品確實值得稱讚、很好味,亦很有日本拉麵小店風味,無論湯底及叉燒也做到了自家特色,兩款叉燒同樣好味道。估唔到中途出家、人到中年才學煮拉麵的老闆,竟然做得相當成功。雖然價錢並不便宜,同不少出名過江龍拉麵店不相伯仲,但作為本地小店,絕對值得支持!

試晒妹の選択同弟の選択兩者分別一個係慢煮豬肩肉一個係火炙豬腩肉店內湯底一樣都係濃豬骨魚介醬油拉麵菜單選擇唔多只得三款拉麵而拉麵裏面嘅細項改動性都不大咁就試試麵匠最自豪嘅拉麵湯底唔似純豬骨湯咁厚重加左魚介感覺又清爽少少拉麵軟硬度適中火炙豬腩肉比較香口但慢煮豬肩肉感覺較特別似食火腿😂而家比豬腩肉多一片佢上枱時有一碟紫菜碎可以再外加上拉麵另外如果唔想食太辣可以請佢辣醬另上咁就唔怕會太辣而且仲可以試真啲個辣醬佢個醬幾香口食到香辛味一提佢呢度服務唔錯斟水超勤見到長髮女仕仲會主動offer橡根俾你紮起頭髮添!

湯底唔似純豬骨湯咁厚重
加左魚介感覺又清爽少少
拉麵軟硬度適中
火炙豬腩肉比較香口
但慢煮豬肩肉感覺較特別
似食火腿😂
而家比豬腩肉多一片


佢上枱時有一碟紫菜碎
可以再外加上拉麵

我只係想見多你幾「麵」🍜之前疫情最嚴重期間 呢間拉麵店曾經休業 當時曾經有諗過如果佢哋唔開返都有可能 咁就冇咗間好食嘅拉麵店🥲 好彩而家疫情回落 佢哋又可以同大家見面麵処一家係位於尖沙咀厚福街入面嘅一間拉麵店 主打濃厚豚骨魚介醬油湯底拉麵 選擇並不多 主要有妹の選択 弟の選択 同料理長の選択 分別係在於選擇慢煮豬肩肉 火炙豬腩肉 定係兩樣要哂 今日我就食咗阿細佬嘅推介😂 首先湯底方面 鮮濃豚骨魚介湯底呈金黃色 飲落好濃稠但唔鹹 之後唔會頸渴 麵條彈牙 掛湯力不俗 而兩片火炙豬腩肉帶點微焦肉邊 再加上一點微辣作為點綴 非常香口 而本人十分欣賞佢哋將啲紫菜剪碎上 口感比較特別 另外強烈建議要加$10糖心蛋 師傅火候掌握得好 蛋黃可以呈流心狀態 其實日本菜(甚至其他料理)出色嘅地方就係因為佢哋嘅專業 唔需要太多花巧 選擇唔需要好多 甚至可以話係獨沽一味 你哋喜歡就去 就係咁先至可以令到廚師專心去做好一樣嘢👍

其實日本菜(甚至其他料理)出色嘅地方就係因為佢哋嘅專業 唔需要太多花巧 選擇唔需要好多 甚至可以話係獨沽一味 你哋喜歡就去 就係咁先至可以令到廚師專心去做好一樣嘢👍

厚福街多嘢食個個都知,成日行入去都會見到有條隊,好多時都係排緊呢間。舖頭細細的拉麵店係拉麵關注組都幾受歡迎,間唔中都見到有人介紹。星期日早小小大概12點半去到剛好入埋舖頭的最後2個未,出返來已經要等一陣啦🫣 呢間舖頭非常專一,只做一款湯底的拉麵,證明店家對佢地的出品好有信心!

呢款招牌入面有2種肉,慢煮豬肩肉同火炙豬腩肉。慢煮豬肩肉味較濃,肉的部份多啲,肉質都夠腍😬 火炙豬腩香氣十足,肉同肥膏的層次分明,上枱前新鮮燒起,特別吸引😚 肉質比較軟同入口會有d油膩😆 麵條用左日本的幼身麵條,有咬口,麵質爽身,同個湯好夾。

幾有驚喜的拉麵,湯底好有特色,濃而不膩,豚骨味得來帶魚介的清香。叉燒都係用心烹調。經過想食拉麵但唔想太油膩的一定要試😝
