經朋友推薦,呢間餐廳專做法國生蠔,甘岩今日同朋友相約上環傾野,順便一行4人 黎到試試。我地叫左8隻生蠔,生蠔賣相雪白飽滿,入口鮮甜,略帶小小海水咸味,非常新鮮。令我記得前年去法國巴黎食既生蠔,味道回憶全部返曬黎。另外我地還叫左Fish & chips ,牛扒和蟹肉沙律等,每一道菜都好出色。特別Fish & chips 值得一試,皮脆魚肉嫩滑多汁。其他菜式吾再多講,都好出色可以試試。唯一系地點與地鐵站有段距離,地鐵A出口,行8-10分鐘。隱世生蠔店。掂啊

I ama  fellow tourist from Singapore and honestly, I went in with zero expectations. But boy was I blown away. we never thought that we would experience such nice Western food in Hong Kong, as the usual suspects are typically your dim sum and Chinese meals. I ordered the fish and chips. Both dishes tasted so nice that its even nicer than the ones I eat in Perth. We had the luxury to taste their oysters though we are not a big fan of oysters, highly recommend as it tasted so fresh.

Other Info. : Location was in a quaint neighbourhood and I was surprised. The location in the evening was quiet but the restaurant had a lovely and warm ambience with the impeccable service. The owner even prepared a special anniversary surprise for me and my boyfriend. Thank you.

Should have done this review a few months back to introduce this place but have been busy.Food to die for, extremely fresh oysters are a must-have , the rest of the menu changes to keep their customers coming back for more.A must-go place each time I am in Hong Kong. This is my 2nd visit and won’t be the last.

我follow了八蠔吧一段时间了,但是都都没机会到现场去尝试。昨天终于有机会到八蠔吧(因为刚好到深圳香港出差)。八蠔吧的店虽然不大,但是环境很不错,即适合公司部门聚餐(24人以下)也适合情侣用餐。这里的生蚝非常新鲜,每天从法国空运到店里。昨晚有四种:Roland Lambert, Ostra Regal, Majestic, Gillardeal. 其中我个人最喜欢Majestic。在这里吃生蚝,还可以学到很多关于生蚝的知识。 这是因为生蚝吧的老板Chris在我用餐的时候,一边教我吃生蚝的正确方法和每一种生蚝的由来。这里除了生蚝,还有其他好吃的食物。我个人最喜欢是澳洲青口配叻沙汤、黑毛猪扒和蘑菇黒松露长通粉。我一定会再回来…………

另一樣主菜我簡了焗燒伊比利亞西班牙黑毛豬扒 ,豬扒燒得恰到好處,肉質鬆軟不會燒得到太乾以致有嚡口既感覺


旁邊提供兩種不同的醬汁,分別是芥末沙律醬跟蒜蓉汁,我個人較喜歡後者,沙律菜很新鮮,別以為紅紅的小番茄只是擔當伴碟的角色 🍅 番茄仔超級甜同清新,食完豬扒再食番茄完全可以解去食肉的膩感🍖

抹茶奶凍的綠茶味不太濃,連不愛抹茶的朋友都接受到,而我則欣賞這個甜品不太甜,淡淡抹茶的餘甘,可能想襯托放在面頭的車厘子醬跟焦糖脆脆,而且奶凍好香滑,入口滑溜😋

這個橙味朱古力布朗尼賣相絕對是滿分💯 布朗尼甜而不膩,食落微暖帶橙味,厭太單一可以沾上幼滑的白朱古力慕絲,加上紅桑莓同香脆的開心果籽,口感層次更豐富,今餐大家都「甜絲絲」了☺️


八蠔吧除左生蠔不錯,小食、主菜甚至甜品都做得細緻出色,店員態度親切,不時幫忙換碟、加水、更主動調較冷氣,不怪得地方稍稍隔涉都差不多滿座,更有不少外國人來光顧Chill一下,推薦比正為選有質素西餐而煩惱的你💁🏻‍♀️

同事Last day,人少少放工去了八蠔吧farewell。以為是小店,想不到人氣都強勁!7點半已經坐滿了人。 小店餐牌選擇簡而精,我們點了個生蠔搆一拼盤、海鮮炒飯、巴馬火腿密瓜、炸魷魚圈、肉眼扒及黑毛豬扒。 這裏的蠔是新鮮即開的,所以見到蠔吧師傅忙得不停。不說不知,原來這位John是香港第一代開蠔聖手,很多名人都專誠來吃他開的蠔。他的開蠔經驗可謂十分老到! 看他手起蠔落,不消幾秒便開好一隻蠔,而且他最後還會將蠔反過來,確保生蠔沒有變壞,有別一般的方法。 點了3款生蠔,KYS Marine 口感爽脆,入口帶陣陣海水味,清甜香氣隨著咸味而突顯!Ostra Regal也是爽脆路線,海水味的持久度感覺沒KYS那麼長,反而是甜度留在口腔耐一點。三文魚子生蠔則口感最豐富。 我最欣賞是John開蠔時把帶子位也切斷,這是貼心至極的做法!!!蒜蓉多士大大個,最驚喜係中間有厚厚的半溶芝士,拉絲的效果令人興奮。麵包香脆,最啱配芝士食。蟹肉青蘋果沙律夠清新,啖啖蟹肉配墨汁脆脆,伴上三文魚子及青蘋果沙律,咸咸地又甜甜地,夠開胃。 足料,大大隻虎蝦、青口、魷魚、魚塊等,顏色

點了3款生蠔,KYS Marine 口感爽脆,入口帶陣陣海水味,清甜香氣隨著咸味而突顯!Ostra Regal也是爽脆路線,海水味的持久度感覺沒KYS那麼長,反而是甜度留在口腔耐一點。三文魚子生蠔則口感最豐富。

我最欣賞是John開蠔時把帶子位也切斷,這是貼心至極的做法!!!蒜蓉多士大大個,最驚喜係中間有厚厚的半溶芝士,拉絲的效果令人興奮。麵包香脆,最啱配芝士食。蟹肉青蘋果沙律夠清新,啖啖蟹肉配墨汁脆脆,伴上三文魚子及青蘋果沙律,咸咸地又甜甜地,夠開胃。

扒是我的最愛,所以必點。西班牙黑毛豬扒肉厚,燒得金黃,配上燒汁或芥末醬,肉感豐富。焗燒美國頂級肉眼則肉嫩多汁,因為同行有人不喜見血,所以我們要求稍熟,想不到出來的效果仍這麼JUICY,加上旁邊的番茄仔能去膩,所以食完好滿足。

餐廳定位係蠔吧,主理人也大膽寫下「The World is my Oyster」;諗深一層,較「The Oyster is my World」更大口氣 ⋯⋯ 皆因餐廳的蠔吧話事人係 John Srewart。筆者並非食蠔達人,對 John 的威水史認識唔深,但餐廳的玻璃門面貼滿雜誌專欄介紹。原來 John 有30多年開蠔經驗,亦曾經遊走多國、及曾在香港多間著名海鮮餐廳執掌蠓吧,難怪可以如此大口氣。甚至這間小餐廳,亦是與一位由10多年前的熟客而變成朋友的星加坡人 Chris 一拍即合、合資經營。

餐廳始終並非大集團背景,每日供應的生蠔款式有限,不似得其他大蠔吧或進口商直營餐廳,可以陳列10多20款生蠔在冰槽。但 John Srewart 始終在行內薄有名聲,與法國多個家族經營蠔場也有良好關係(餐廳內貼上了不少 John 與蠔場經營者的合照),所以每日可以取得幾款質素特佳的生蠔,今晚就有 Poget、KYS Marine 及 Ostra Regal。另一方面來看,可能也是一個優點,正如餐廳的年輕經理說,取貨較少可以確保生蟓每日清貨,不似得某些蠔吧可能會將賣剩的生蠔低溫儲存留待隔天再售

「Raw Bar no. 8」的目的,當然是欣賞本地蠔王 John Srewart 的技巧。雖然 John 可以秒速開蠔,但始終只是 gimmick 及宣傳罷了;真真正正開蠔給客人品嚐,當然要小心保持生蠔完整、檢查生蠔狀態及清洗乾淨、以及添加特色配料。雖然說是慢工開蠔,但手勢極純熟快捷,尤其是切斷緊緊繫著蠔殻的貝柱肉腱、然後再反轉蠔肉那一下,乾淨俐落,蠔身完全沒有破損。

筆者喜歡生蠔,老公喜歡焗蠔,各點所愛。今晚共有三款法國蠔,John 建議 Poget,層次豐富、口味回甘;於是點了兩隻生蠔,另外點了兩款有 topping 的生蠔。首先品嚐沒有topping 的 poget($55),印象中的法國蠔細隻,但這款法國蠔 poget 肉厚,甚有口感;入口海水味重,蠔味濃郁,鮮甜中帶些金屬味。

Tomato, chili, finger lime salsa 莎莎醬生蠔($65);新鮮生蠔上放滿 Tomato, chili, finger lime,切細粒,配料新鮮、味道清新,又沒有蓋過生蠔的味道。相反這些 topping 為生蠔賣相加分不少,味道及口感令生蠔味道更上一層樓。另外一款就是 Salmon Caviar & sour cream, dill 三文魚子生蠔($75),topping 換上三文魚子及 sour cream,味道比莎莎醬生蠔濃郁,三文魚子帶咸香、sour cream 帶微酸 ⋯⋯ 出乎意料與生蠔互相配合。

另外有兩款口味焗蠔各 $65/隻。其他餐廳一般也不會寫明焗蠔採用甚麼品種,但今晚就肯定係 Poget(望住阿 John 開蠔)。不過,焗蠔一般七至八成熟,很多個別品種原本獨有的味道及質感已經消失,只餘下蠔的鮮味,所以,即使用 Poget 也不會有太大分別,只不過成本可能高了一些。Kirkpatrick baked with bacon, cheese & Worcestershire sauce 煙肉芝士焗蠔($65),Oyster Kirkpatrick 是源自英國的經典焗蠔食譜,全因一款源自英國的經典調味醬汁 Worcestershire sauce;未聽過?如果講出中文名稱及經典品牌「李派林(Lea & Perrins) 喼汁」,應該聽過吧?煙肉香脆、芝士香濃,配上味道酸辣鹹兼備的喼汁,加上爽口、鮮味蠔肉,好食。

以前對醃魚有點抗拒,直至一次在某鮨店食過非常好味道的醋漬鯖魚壽司才改觀過來。今晚就揀了 Seabass Ceviche 醃魚 ($158)試試,除了橘醋漬鱸魚粒之外,還加入了 tomato, chilli, coriander, lime(應該是西柚肉), shallots, avocado(牛油果)及 corn chips。最聰明就是加入了粟米片 corn chips,將每款食材放一點在粟米片上,不正正就是墨西哥 taco?雖然很乾身、但脆卜卜,咀嚼下來又有點點粟米香甜,無論配上任何重口味配料(尤以酸或辣最佳)皆非常好吃;半生熟醃魚、蕃茄及西柚肉正正非常合適。

好味的 Chowder 應該用濃郁隔渣魚湯作為湯底,然後加入西芹薯仔甘筍熬煮以增添蔬菜清甜,最後以忌廉、牛奶及麵粉拌勻至挺身;Clam Chowder 會加入新鮮蜆肉,Oyster Chowder 則會加入原隻蠔肉。「Raw Bar no. 8」Oyster Chowder 周打蠔湯($82)炮製方法類似,但湯底太稠、麵粉糊太多兼未完全拌勻,蔬菜太多,魚湯鮮味亦不夠濃,唯一可取之處是用上新鮮大大隻法國生蠔 ⋯⋯ 覺得有點浪費了那隻法國生蠔。

10 oz USDA Prime grade striploin 焗燒美國頂級嫰腰牛眼扒($288)配 Watercress salad 及 roast cherry tomatoes and chimichurri sauce。牛扒味道當然不會差,採用USDA 最高級別牛肉,雖然肉味可能及不上 ribeye,但 beef cut 位置較接近 sirloin 及 tenderloin,所以肉質又較 ribeye 鬆軟;striploin 可以兼具 ribeye 及 sirloin 兩者的優點。較為可惜開放式廚房的設施不太足夠,廚師只能夠用一個小鐵板煎扒,缺少了明火烤爐的火力,未能夠做到牛扒表面焦燶香脆的效果;火喉控制方面也較難掌握,未能做到稱心如意,本來要求六至七成熟,但過了火喉。

「八蠔吧」雖然細細間,生蠔款式亦及不上其他大型海鮮餐廳,但勝在貨源頂級;其他各種頭盤、沙律、主菜的選擇雖然唔算多,但份量足、選材用料亦相當好,水準亦在中上。亦由於餐廳細細間,服務顯得特別殷勤,由餐廳經理廚師以至蠔吧掌舵人 John 皆非常願意與客人溝通,形成一種親切的氣氛 ⋯⋯ 絕對值得捧場。

真的是慕名而來生蠔界達人蠔吧,蠔王John Stewart在此助陣,開蠔手勢一流,更有30多年經驗。開放式的開蠔過程讓您一目瞭然,即開即食,確保干淨衛生。食蠔也有講究,師傅已將成隻蠔和蠔売分離,我們只需要將叉把蠔向口里推就可以了。今次叫了3款蠔,全部來自法國,KYS MARINE蠔海水味較濃,蠔身爽口POGET蠔,配上醬汁,反而食唔到蠔本身味道,但就突出鮮味OSTRA REGAL蠔好CREAMY,幾款蠔的海水味都好濃郁,好新鮮伊比利亞西班牙火腿配蜜瓜近來呢種火腿係香港都算大熱,火腿份量十足,切片後有透視感、脂肪均勻,帶有雲石紋理,食落好香,配上蜜瓜中和。法國青口同一般以往餐廳食的size不一樣,呢個細細隻,但有好多隻,配上餐廳秘制醬汁,口感好濃郁惹味,每隻青口吸收醬汁。一間穩世餐廳真的值得推薦,雖然離地鐵站有點遠,但如果喜歡食蠔,喜歡高質素的食家們,真的是值得的

食蠔也有講究,師傅已將成隻蠔和蠔売分離,我們只需要將叉把蠔向口里推就可以了。
今次叫了3款蠔,全部來自法國,
KYS MARINE蠔海水味較濃,蠔身爽口
POGET蠔,配上醬汁,反而食唔到蠔本身味道,但就突出鮮味
OSTRA REGAL蠔好CREAMY,幾款蠔的海水味都好濃郁,好新鮮

伊比利亞西班牙火腿配蜜瓜
近來呢種火腿係香港都算大熱,火腿份量十足,切片後有透視感、脂肪均勻,帶有雲石紋理,食落好香,配上蜜瓜中和。

法國青口
同一般以往餐廳食的size不一樣,呢個細細隻,但有好多隻,配上餐廳秘制醬汁,口感好濃郁惹味,每隻青口吸收醬汁。
一間穩世餐廳真的值得推薦,雖然離地鐵站有點遠,但如果喜歡食蠔,喜歡高質素的食家們,真的是值得的

見到好多報章媒體都曾採訪過呢間位於上環的蠔吧,但住新界區的我一直未「越洋」嘗試⋯⋯直到約到係港島區返工的舊同學出黎聚下舊,我就有借口去到咁遠食蠔啦!由上環行去餐廳要8分鐘到,話近唔近,話遠唔遠,不過唔行開港島的我,係有少少難揾的。餐廳除左有新鮮的靚蠔食外,仲有個蠔界的「風雲人物」John!擁有30+年開蠔的經驗的佢,世界多位名人更會請佢上門開蠔,認真誇張!佢除左開蠔夠快夠pro外,仲非常細心!同佢傾左兩句,佢話其實好多時大家食蠔中毒係因為蠔肉下有污水泡泡,食客用叉一吉爆左就會污染生蠔。因為John每次都好細心咁將蠔肉反轉,確保乾淨先比食客享用。餐廳主打法國蠔,是日除了較少有的Posie外,更有法國KYS marine及Ostra Regal。係三種蠔中,我自己就比較鍾意食KYS Marine。來自法國的KYS Marine,口感比較爽脆,滿滿蠔水的生蠔入口有陣陣鮮甜海水味,之後就係清甜感。特別一提,呢款蠔曾獲得法國Médaille D'or Paris的金獎,難怪特別好食。身為香港第一代開蠔手John更於開蠔時,將帶子位一併切斷,方便大家食個時,可以輕易將整隻蠔叉起。如果大家唔夠喉的話

如果大家唔夠喉的話,更可以試埋特色生蠔⋯莎莎醬生蠔加了蕃茄及辣椒粒及青檸汁,整體食落更Fresh!三文魚子生蠔則加了三文魚子及酸忌廉,一小點的酸忌廉及三文魚令到口感更提鮮。

身為蒜蓉迷的我,叫左一客焗蒜蓉包!360度零死角地搽上蒜蓉牛肉,加上半溶芝士,香味滿分。入口時面包仲係暖暖的,加上烘得剛剛好,保留到脆口的口感。

食得飽飽的大家,當然唔會放過食甜品的機會啦!我們叫了一份Brownie黎Share,本身我不太鍾意橙味朱古力,不過呢個Brownie有橙香,但又不會蓋過朱古力的味,加上個蛋糕仲係暖暖地,又幾好食wor!係Brownie下面舖住層White chocolate Mousse,味道剛剛好唔算好甜,加埋烤過的開心果,令口感提昇。

整體餐廳都非常好食,服務又好好,難怪隔離枱係美國飛黎香港,其中一個指定要黎食!只係價格比較高,我黎講會係Special Occasion先會黎,不過絶對值得試下!
