是日還推介大蝦,只限推介串燒方法.因後期師傅不知是偷懶原故還是什麼原因..把大蝦直接置於爐上燒,蝦被燒得乾乾爭爭,殼"痴"住蝦身.....no good

免治雞肉雞軟骨又是我的最愛,我一共吃了3條!! 好飽肚呀............

這裏的魚類都是強項,所以燒鯖魚,多春魚都是不俗之選.....
同場另有天婦羅蝦,魚生,烏冬,炸豆腐, 炸南瓜餅,麵豉湯,炒雜菜.......但只屬一般貨式.天婦羅蝦粉太厚,烏冬又唔彈牙!!

整體來說是很滿意的一餐,食物全是即叫即製,全都是燙口架....更不會有漏單情況.(其實即使漏單,你都可以直接同師傅講,因為坐counter 位,全程望住師傅製作

順帶一提,抽風系統相當好,即使坐COUNTER, 都不會有半點油煙味伴隨衣履

自從成為海逸酒店的會員後,便經常留意他們旗下集團餐廳食府的推廣。上周六與太太曾到過紅磡海逸酒店吃過自助午餐,順道拿了一張酒店餐廳的簡介,大致內容是可以價值310元的價錢,去吃一頓相撲手任食自助午餐,對我來說是相當超值的,尤其爐端燒以入選為2009年米芝蓮精選食肆,單是食名氣以值回票價,其怪為何今年以來只得一個食評? 這十年也只得十九個食評就這麼多?爐端燒的任食自助餐時段於中午十二時展開,我和太太準時到達,居酒屋門外近落地玻璃窗位置放上數盞印有「爐端燒」字樣的紅燈籠。侍應安排我倆坐近爐頭位置,本來心想位置貼近牆壁不覺開揚,但後來發覺可與師博直接對話及輕易傳遞食物,頓覺位置也不遜於正前方,除可直接近距離看見師傅即席烹調食物外,亦可嗅到從煙霧裊裊中氾濫著陣陣香噴噴的燒烤味道呢!餐廳的室內設計也依足日本傳統的爐端燒店格局,店內設置大型的方形敞口式火爐,由坐在正中位置的師傅用木製長槳將燒物奉送到食客的跟前。用木槳送遞的原因,原來也有一段古。話說日本皇帝當出巡時到訪民間小店如爐端燒等店子時,皇帝甘願屈尊降貴,百姓們也不敢正面瞻視尊貴的皇帝,於是只好透過木槳遞遞食物給他。坐下來後,待應便隨即告訴我們

坐下來後,待應便隨即告訴我們,相撲手任食午餐是包括一杯免費飲品。飲品有鮮果汁、蘇打及汽水可供選擇。我倆選擇了提子蘇打。結果還是覺得提子蘇打欠缺了基本的酸甜味道,尤其甜味。像健怡可樂與傳統可樂的分別。隨後,侍應遞上了任食放題紙,給我們選擇食物,放題紙內所能選擇的食物種類不算多,但卻能選擇到一般基本燒物放題的爐端燒食材。

廚師沒有即席使出洋人愛看的"花腎"表演,但卻以純熟的烹調技巧及時間的精確掌握,在爐端上發輝出能保持其肉汁水準的各種食材。所有食材全都是即點即燒,當廚師收到柯打後,便彎下身子地向前方位置,用木盤盛著所拿取新鮮的食材即席放在爐端裡燒。見廚師好像習慣了爬前爬後地貼近火爐拿取食物,實在驚險萬分,莫非那套廚師制服是用防火布做的嗎? 左翻右撥的純熟手勢,令人更覺以專注務實的烹調技巧更勝過"花腎"表演。

很多女性最怕油膩感,放在格層網上的燒物如牛肉等,用猛火封存其內裹的肉汁,因此燒完亦不會有油膩感。那些較易乾固的燒物便插在格網之上方位置

爐端燒的所有燒物包括日本魚蛋卷、翠玉瓜、生銀杏鹽燒、雞腎、墨魚丸、免治雞肉串燒、雞冀、多春魚、魚餅、露筍、金菇、雞頸肉、骨腸、冬菇、雞肉燒、栗米、蝦、銀鱈西京燒、鯖鹽燒 (花鮫魚)、魷魚、牛肉網燒及本菇

以下是我所點選的燒物:

刺身:赤貝、三文魚、鯛魚及鮪魚: 三種魚生全部都很新鮮,並且色澤鮮明。

海老天婦羅: 由於天婦羅只是搭單形式,故此不會有很高的要求,整體尚算脆口。

味噌湯: 味道濃郁,入口熱燙燙的,麵豉味倍覺濃郁。

烏冬麵: 烏東麵不單沒有煙韌度,還易於截斷。是全日最不濟的食物。

冬菇: 薄薄的冬菇片看來很乾身,吃下卻未至於乾巴巴

魚餅: 經過慢烤的魚餅變得熱烘烘軟稔稔,點一點醬汁來吃是佐酒的佳品

多春魚: 最愛吃多春魚,因為喜歡咬開時那索索聱的口感。多春魚的魚春粒粒飽滿,填滿整條魚身。灑點鹽更覺惹味

牛肉網燒: 說到牛肉的肉質本來應是不錯的,向侍應示意烤至四成熟,結果還是燒得過了點火喉,雖然是這樣,牛的肉汁仍然得以封存。要是柯打兩成熟的牛肉網燒,可能燒出來的效果會更好。

生銀杏鹽燒: 廚師灑了點鹽於銀杏面,可能沒有挑空銀杏內裡的那條心,因此吃時有些微的苦澀味,但銀杏俱備防止老人癡呆症的效果,苦澀有樂於去吃呢!

砂肝雞腎: 燒得一點也不乾身,燒出來沒半點腥味,而且比較平時所吃到的雞腎更濃味。咸香爽口的雞腎,伴以佐酒小吃簡直一流。

栗米: 粗粗的栗米放在烤爐上慢烤,配上略帶小鹹的牛油,但仍掩不著栗米散發出來的甜味。吃過很多燒栗米,但多是乾身的。此店能燒到仍能保留栗米的汁液實屬難得。有少許焦了的味道,加上相當甜的栗米汁液,令席上人要了多次。廚師非常細心地為小朋友切成一小"舊"的小栗米,好得他的小嘴巴能輕易咬下每個栗米粒。

鹽燒海老蝦: 熱烘烘的海老經烤爐直接燒烤後,香氣四溢,鹽燒過的蝦殼,黏著一層惹味的鹽燒味道。 而蝦肉不算非常爽口彈牙,但就是很有鹽燒過的蝦味,緊記著要掏空蝦頭內的蝦膏啊! 那是精華所在。廚師只灑上少許鹽,便能帶出海老蝦肉的原汁原味。

銀鱈西京燒: 銀鱈魚的油脂甘香肥美,見到銀鱈魚不是放在格網直接近距離用火燒,而是插著火爐中間位烘著來燒,油份逐少滴下,燒完亦不會太油膩 。經過烤爐的高溫非直接燒烤,加上秘製甜醬汁,令銀鱈魚的味道推向更好層次,其魚肉濕潤嫩滑非常,魚皮口感特別,在脆口的同時亦感受到一點點的軟滑,好吃非常。單是銀鱈西京燒以吃了五條之多,平日散叫也要125塊錢,吃五條以足夠回本呢!

本菇: 秋意濃濃,正是吃本菇的最佳時候。廚師採用的是日本入口的本菇,並加入一少"舊"牛油於本菇內,再用錫紙包著來燒,因此燒過後打開,牛油的香氣樸鼻,份量剛好夠各席上人響用。本菇沾上了牛油的香氣,又保留本菇的原有菇菌味,等多久也值得

蘆筍: 只見師傅細心整理壁綠的蘆筍,加上牛油、檸檬及海鹽,再用錫紙包著,直接放在烤爐上燒,尤於蘆筍此等蔬菜類特別容易抽乾水份,因此需用錫紙包著放在燒爐的下層,就這樣燒出濕潤滋味的嫩蘆筍。蘆筍粗大,最前端的位置是最為香甜爽嫩的。

雲尼拿冰淇淋: 此乃是送贈的甜點,冰淇淋內外,發現極多的雲尼拿籽,相信是自家製的吧! 冰淇淋香濃幼滑,每一啖所包含的雲尼拿籽咬落"索索聲"呢!

要是主攻鯖鹽燒、銀鱈西京燒 、鹽燒海老蝦、牛肉網燒及貴價菜如露筍,那你便如我倆一樣很快回本了。更何況除了我們所持有海逸酒店的會員有八折優惠外,原來在OR的優惠券至2009年9月30日止亦有八折優惠。 一個價值310塊錢的相撲手任食自助午餐折了後,平均加埋一也只是二百七十多塊錢,以二百七十多塊錢去吃米芝蓮的精選食肆確實是很超值的。

The two of us arrived and were nicely greeted by the staff, after being seated we were given an order sheet which list out food available including Tempura, (shrimp & veggie) Sashimi (Tuna, salmon akakai, 鯖魚, saba,and a few more - Not fresh, the color of the fish are very dull) Udon, Soba, Miso soup, Deep fried Pork Chop, Dumplings. The Skewers were pretty good in comparison- although there is limited choice.

There were very limited choice available, it will be better if the restaurant considering cutting the tempura, sashimi and other food and concentrate on its skewers and to provide more choice. - (know that the restaurante may have to control its cost and would not provide pricy skewers, but it could consider providing more of other low cost skewers
eg. Garlic, eggplant, ox tongue etc)

Overall, it is a nice experience dinning in this restaurant, it also offer value for money as it dinner menu is much more expensive but given its limited choice i guess i won't be visiting this restaurant any time soon

Went on last Sunday, table set up are good, 2 chef in center & the guests are all surround the chef. Do have shusi, tempura & 爐端燒 !!

爐端燒 was the best if compared other shusi, sashimi, etc.

Must eat 爐端燒:

- beef steak (suggested order 三成, because a bit overcooked)
- cod fish (taste very good, think, size not small, juicy & fresh), i had almost 2 pieces
- 雞骨腸 (好好味)
- 脆玉瓜 / 蘆筍 (鮮甜)
- 雞肉軟骨串


* 一定要訂坐
* 不須太早到, 因十二點正才開門
* 現在海逸酒店做優惠, 買三送一, 加上 Compass credit card on top 有15% off, 算抵食 !

On saturday night, 2 of us went there for late dinner... the place was not busy at all ... only 1/4 of the biggest grill table with 2 chefs is occupied... the chef said it was one of the most unusual nights that day coz normally the whole place should be packed on saturday nights.. welll that's good for us so won't be crowded... we ordered alaska crab, ox tongue, goose liver, veggie, corn, salmon tummy, chicken joint, eel.... in general most of the things are not bad. but i would not say it's v

will go again but not very often..

適逢老媽子生日,去左恨左好耐既爐端燒.個價唔平家..之前都驚究竟可唔可以回本,d野又好唔好食..食完之後,四個字....物.有.所.值!基本甘,所有野都好好食!骨腸,雞翼,金菇同本菇....完完係另一個層次既食物栗米....完全令到我地全木台驚訝!!絕對未食過咁好食既栗米!!本身已經係一流既栗米,再加上師傅既手勢...超好食!!滑雞串....點解一樣好平凡既雞串都可以好食到咁..滑.香.雞肉味濃!!跟住出場既燒牛扒,又係無得彈,牛味濃,燒得香...救命呀!!大蝦...爽!同埋燒一燒之後奇香!!好食!!鯖魚...正到暈..魚本身都新鮮,燒完出黎極度好食,唔腥,最值得讚既地方係...師傅將魚皮燒到奇脆無比.!!夾落去o個下完全好似夾落張紙度咁卡卡聲!!仲有仲有...銀鱈魚西京燒....自己去feel下點好食啦...真係好食到唔識點形容!!!不過,食燒野好了,其他野食(大蝦天婦羅除外),如刺身,就可以不理.P.S.因為而家做緊買3送1既優惠,所以圍番都係255一位..抵好多!!

2. 銀鱈魚, 是我一生人吃過之中認為最美味的銀鱈魚! 魚肉滑溜得非文字能形容, 加上秘製醬汁, 將鮮魚味昇華, 師傳手藝高, 火喉掌握得恰到好處, 每人吃了2大塊亦嫌未夠喉!
3. 骨腸, 燒得極為香口, 外脆內軟, 肉鮮味甜。
4. 燒蝦, 生猛海蝦, 肉質鲜甜。
5. 蘆筍, 用錫紙包住新鮮蘆筍, 加入牛油, 海鹽作調味。 蘆筍香甜爽口!

雖然訂位時待應說明相撲手任食午餐供應時間為12 – 2 pm, 但我2:30才離開, 大部份食客依然繼續大快朶頭, 我亦沒有聽到待應來提醒食客last order。 我聽到食客問師傅午市幾點完? 師傳微笑答道: 做到你們不吃為止! 聽罷不禁在心裡為比師傅鼓掌

Last night was my first visit to Robatayaki. I’ve been anticipating my visit to this restaurant for a couple of months now and when I finally dined there I was satisfied from the first bite to the last.

The main layout of the restaurant was very comfortable with an open display of the available seafood, meats and vegetables. My BF & I started out with a Sashimi Mori ($550) ; an assortment of thickly cut sashimi. There Yellowtail belly, Sweet Shrimp, Salmon, Tuna, Squid, Geoduck (elephant trunk clam) and Heaven-in-your-mouth Toro. Every slice was full of umami flavor and had beautiful texture. This was simply the best sashimi I had ever had (even better than fresh sashimi from the Tokyo fish market).

The Gindara ; grilled cod ($110), a well-known must-have. It was tender, it was sweet, and it was succulent. The cod fulfilled my expectations and more! The strands of flaky fish melted as it combined with the kewpie mayonnaise and steamed rice. That was definitely a MUST-HAVE.

Then Mentaiko teba; Spicy Fish Roe ($65). Salty, not very spicy. Good with a bold chilled Sake.

Next up we ordered the Fuoagura; Foie Gras ($175). This genuine goose liver had a light smoky flavor from the dark sauce that complemented. The texture of the foie gras was soft and silky smooth beyond belief as it barely had veins. The sauce from the Fuoagura parcel was so blissful with steamed rice, I even ordered an extra rice to bring home with the sauce.

Teba saki; Grilled Chicken Wings ($15/pc). Can I say those were the best chicken wings ever? Yes I can. Chef slowly grilled our wings for 20 minutes till the skin was delicately crispy, not oily and the meat was oh so flavorful. Ogura; Grilled Okra ($55). Slowly grilling and light seasoning of salt is a great and simple way to bring out flavors to enjoy okra. Ramu; Lamb Chop ($50/pc), ordered medium rare, cooked to tender perfection. We asked the chef to not add the extra dark sauce to taste the true flavors of the meat. It was a well-built flavor and we believe that the meat was aged. Mmm.

And to top it off we ordered the homemade sesame ice-cream ($50) and grapefruit ice-cream ($50). The sesame I/C tasted alright, not too special and not really worth the $50. The grapefruit I/C had candied grapefruit peel and had a tantalizing creamy grapefruit flavor.

Our chef, Mr. Hui was very polite and was glad to answer any questions we had regarding the food. He also secretly revealed that the cod was marinated overnight in a miso-Sake mixture to give it the tender texture and incredible sweetness.

The bill came to a total of $1100 for two (and we had 20% off discount since I had the Harbour Plaza Dining Club Card). In conclusion, my first experience of Robatayaki was a truly positive one, the food is exquisite and I’m sure to go again.
