自從添好運一炮而紅之後,香港突然開了很多點心專門店.如果講到歷史悠久的,西環的叄去壹點心粉麵飯,絕對稱得上是點心店既始祖.在35年前的1978年,現任老闆從上一任老闆的手上接手點心店後,叄去壹點心粉麵飯成為了西環價廉物美的傳統點心專門店.講到點心,做法相當傳統.好像雞球大包,傳統的雞球大包以豬肉,鮮筍(或沙葛)等作主要餡料,其他餡料包括雞肉,菜碎,蒸雞蛋,冬菇和豬肉等,將釀好餡料的大包蒸製而成.12元4粒的蝦餃同樣都是皮薄餡靚,蝦餃皮做得非常爽口,蝦肉彈牙.蝦餃內還放了一粒肥豬肉,所以蝦餃充滿了肉汁.肥豬肉所流出來的豬油,令到蝦餃變得更為香口.叄去壹點心粉麵飯的馬拉糕是非常有雞蛋味,而且黃糖味充足,10元一個的馬拉糕絕對是超班作品,不但價廉物美,而且美味可口.

在35年前的1978年,現任老闆從上一任老闆的手上接手點心店後,叄去壹點心粉麵飯成為了西環價廉物美的傳統點心專門店.講到點心,做法相當傳統.好像雞球大包,傳統的雞球大包以豬肉,鮮筍(或沙葛)等作主要餡料,其他餡料包括雞肉,菜碎,蒸雞蛋,冬菇和豬肉等,將釀好餡料的大包蒸製而成.

12元4粒的蝦餃同樣都是皮薄餡靚,蝦餃皮做得非常爽口,蝦肉彈牙.
蝦餃內還放了一粒肥豬肉,所以蝦餃充滿了肉汁.肥豬肉所流出來的豬油,令到蝦餃變得更為香口.

叄去壹點心粉麵飯的馬拉糕是非常有雞蛋味,而且黃糖味充足,10元一個的馬拉糕絕對是超班作品,不但價廉物美,而且美味可口.

打牌有個名稱叫三決一,在西環有個好麻甩Feel既地方叫叁去壹。點解叫叁去壹,不少人聽到這個名,都好好奇,話說三十多年前,有三位中廚師傅合夥開茶居,其中一個合夥人因解籤佬說他不合做生意,結果轉番做打工。因為三個老闆少一個,故改名為叁去壹。在 OPENRICE 上見到有食評都OK的,所以便去試試看。下午約一時去到一坐下,人流不多也看不到女人,果然夠麻甩Feel,見到點心好似騰騰,於是便叫先叫了一個鳳爪。個點心佬個樣有點傲慢,施施然拿過來,放下來一看見個樣,心知不妙,鳳爪不熱,碟上的汁好像放了很久,D汁很杰很干,不理吧!吃了才算。放入口中,D醬汁真係好杰直頭好膠水般,一杰就會偏咸又吾夠熱,吾夠熱既點心,更好吃都打大折扣啦,可況一般貨仔呢。這一刻就好像別了一記悶棍,只好快快飲多兩淡水,快快吃完鳳爪。好!再吃多兩樣再試試看。一個馬拉糕,一碟潮洲粉果。這兩個相信不會太咸,懶野會太嚴重。先吃個潮洲粉果,大獲又來多一棍,呢棍仲應應地,吾夠熱已成定局,仲要係吾凍吾熱,個皮痴晒個口,花生仲係淋既,整個潮洲粉果個皮完全PAT在口內,餡料可能因為凍很腥呀,要飲幾茶才可沖走個D味。心驚膽跳之餘還留有餘饋,都不想

說賨話, 我得知此店都是從電視中得知, 而訪問中真是稱讚到上天有地下無, 而開飯網食評也不差, 所以我跟朋友決定平日中午到此嘗試一下。當天天氣也很熱, 杯茶也很熱, 不過還是很滿意他們的茶葉沖出來的茶, 絕對不是坊間的平貨。至於食物方面, 棉花雞就真係賣相同味道都另人失望, 蝦餃一般貨色, 無特別好/不好, 大包平均水準, 少少雞蛋黃, 但講到最差莫過於牛肉飯, D 牛肉好像是罐同牛肉, 爛碎不完整, 仲有不夾飯很難食 ..... 失敗之作, 平來叫馬拉糕的, 不過無貨。可能原先抱有太大期望, 結果反而另人失望, 我不見議專程去試, 因為誰一間都可以做到此質數

個日同同學去搵呢間店時行咗d冤枉路,不過終於都搵到,好開心!我同學問我點解要去d咁難搵既店去飲茶既?我就話,酒香不怕巷子深!呢間店都系做d街坊生意,出品唔使講,非常用心同價錢唔貴,而且品種都系最經典既點心,用料足同埋新鮮。最重要既系系呢度我可以搵到細個時同d大人去踎d古老茶居既回憶。就算宜家去d好高檔既食肆用餐,食物既味道再好,亦比唔上細個食到時既咁美味。但系系呢度可以搵得翻!

打算行上香港大學, 本來由水街直上, 但坐巴士落早了一個站, 由正街上, 順道探一探這間有名的古舊店. 已經臨近午飯時間, 已坐得八九成滿, 還加上一班學生哥等外賣, 擠得店內水洩不通.找了個門口位坐下, 向門口的點心部門 阿叔叫了一盅 “鹹魚肉餅飯” 和 “馬拉糕”. 坐下後琢磨一下 “叁去壹”的店名, 實在奇怪, 再看看其餐牌上的英文, 翻譯為意譯: “Three Minus One” , 與網絡上的翻譯, 以音譯: “ Saam Hui Yaat”, 完全不同. 蒸飯頗特別, 餸與飯分開上, 可能方便管理, 但欠缺了飯和餸一起蒸時的化學作用. 飯身蒸得過分乾身, 咬落有些少粉口了, 無論如何, 總好過蒸得過濕. 鹹魚尾一小件, 肉質軟而味道不太鹹, 肉餅肥肉不多, 略欠軟滑, 但食得健康, 內混有馬碲, 食落些少爽口, 最特別的是, 加了些少薑容, 增添味道和口感, 做得頗有心思.馬拉糕, 賣相一流, 顏色與形狀十分討好, 望落內裡組織緊密, 但食落如海綿般鬆軟, 甜度適中, 如果這店的蒸飯給七十分, 這款馬拉糕應得八十分以上.

與其說這裡滿室男人味,我覺得來這裡是吃食物中蘊涵了的鐵漢柔情。

悶熱,另一原因是不斷在蒸騰著的點心架。這裡的點心選擇非常少,以包餃和蒸包為主,亦有腸粉。反而飯類的選擇多得很,從蒸飯到碟頭飯都有。這也貫徹了店的剛陽味,而非纖細,精緻的陰柔。

也許愛甜是女性的專利,重男人味的叁去壹只得馬拉糕一款’甜品’($10).淺楬色的蛋糕氣孔大又鬆軟,入口清甜無比,是加進蔗糖或麥芽糖的緣故嗎?吃罷不覺膩甜,調味發酵拿捏恰當,也是貌不驚人的佳作.

雖然叁去壹沒有飽參翅肚,只有__老母,但偷聽著阿叔的豪情萬乳,阿伯的曾經舊屎,何不是感受舊區風情的好去處?間中來一次男人味送窩牛飯,重口味得來也很有feel啊.

早排睇電視講過呢間小食店老板個個對食物都好有heart,於是今日同老婆黎試下。兩個人黎到見門口有人係到等,以為係等緊位原來係等外賣。入去見有位於是搭檯坐低,小店完全無裝修可言,而且都好舊,不過黎食野嗟,最緊要野好食。於是去入口旁攞點心。叫左排骨、雞扎、馬拉榚、蝦餃、叉燒腸同後加左碟乾牛河。先講排骨,排骨用既係新鮮貨,味道同出面食到既好唔同,反而有D似自己企屋整既味道,應該係少左師傅之故。雞扎雖然唔係老法用豬肚而係芋頭,不過雞好滑,冬菇亦好入味,芋頭我唔食既。馬拉榚好鬆軟,好味又唔太甜。蝦餃我係其他地方好少叫,因為動不動就係特點,貴得黎又唔好食。呢到既蝦餃比出面細隻少少,但皮較有彈性唔易破,蝦爽口。叉燒腿老婆至愛,加埋甜豉油好味。後加個炒牛河攞黎熱辣竦,芽菜條條都炒到好爽口,牛肉唔會好多粉,河粉亦沾滿豉油,味道唔錯。雖然地方好細,坐得好迫下,但個個老板招呼都好好,埋單仲唔使一百蚊,抵到爛。希望呢D有熱誠既小店能夠生存落去啦。

行過聞到好香既點心味,抵受唔住誘惑一向對小店都特別支持,特別係有咁上下年資既店舖點心選擇不多,不過勝在基本點心有齊曬叫左:雞札;蝦餃;燒賣;山竹牛肉;馬拉糕雞札好正:雞肉好嫩滑,冬菇又香又爽;芋頭香林蝦餃同燒賣都有水準,比得上其他大大間既酒樓山竹牛肉:牛肉好嫩滑,仲食到香茜同馬蹄粒馬拉糕:拍得上蓮香樓,清香鬆軟,無個陣梳打粉味(一般酒樓既馬拉糕都會有呢個問題),就算好飽都堅持食曬先走!追加左個潮州粉果,味道唔錯,係皮薄,不過好易就穿每樣點心都係 $10 - $11 咋!抵過高級酒樓好多!而且,小店既感覺係多一分風味,雖然唔覺店內有冷氣,食完有少少熱,又唔係坐得特別舒服,不過都好值得黎!

山竹牛肉:牛肉好嫩滑,仲食到香茜同馬蹄粒

馬拉糕:拍得上蓮香樓,清香鬆軟,無個陣梳打粉味(一般酒樓既馬拉糕都會有呢個問題),就算好飽都堅持食曬先走!

追加左個潮州粉果,味道唔錯,係皮薄,不過好易就穿


每樣點心都係 $10 - $11 咋!抵過高級酒樓好多!而且,小店既感覺係多一分風味,雖然唔覺店內有冷氣,食完有少少熱,又唔係坐得特別舒服,不過都好值得黎!

I had in mind to visit this place before after reading the reviews, so I subconsciously steered myself towards PFL road. Et Voila! The walls opened up and this little place appeared out of the crack, with a few tables on the pavement and 3 to 4 more small folding tables inside. The chairs were a mish mash of what has survived the test of time - a high hair, a plastic stool, some folding chairs they use in canto movies when a fight breaks out between triads in dai pai dongs. A corner by the entrance was cordoned off which is where the steamers are piled high, filled up simple but tasty steamed dim sum, from har gau, siu mai, beef balls, ma lai go and other dumplings and buns. The inside kitchen fixes up cheung fun and other cooked dishes with rice and noodles. The writing's on the wall, so order at will (no English, but learn how to pronounce a few of your favourite dishes and they're bound to be there).

We ordered SIX dim sums between the two us, which seemed like a delight at the time, but then we fell into a food coma afterwards. We had 2 steamers of har gau (skin was a little sticky but the prawns were fresh, with some bamboo shoots and bits of fat mixed inside for juice and flavour), one ma lai go (spongy texture, tasty, but maybe a touch on the dry side as it has been steamed for a while since we had lunch at 2:30pm), char siu bao (much bigger than restaurant ones, less red gooey paste, decent sized char siu inside and balance of sweet and savoury was just right), a dried shrimp cheung fun and a char siu cheung fun (the skin was a bit rubbery and sticky, but generally acceptable and of a good portion).

On top of that we ordered a dish of salt n pepper squid, which at $40 seemed like a rip-off compared to the other $10 dim sums, but it was tasty and would have made a good meal on its own with rice.

Tea is $3 a person, and they even have several kinds to choose from. To their credit it didn't taste like sewage water like some inexpensive establishments and the staff helpfully refilled the tea when asked. No frills, just good food, that's what you're here for right?
