第一次吃潮州凍魚,我以為是冷盤但原來會蒸熟後才呈上。雖然賣相不太吸引,但同時又很方便顧客吃,因為已經去骨,一夾就能起肉。烏頭啖啖肉,用上凍魚方式處理令肉質更加嫩滑,而且鮮味更突出。而且吃魚腩的部分也不會腥,整條魚只需$108很抵👍🏻配上普寧豆醬更有風味,但是千萬不要一下子沾太多,不然會很鹹🙈

平時同朋友去食飯諗食邊間都頭痕,最近見到銅鑼灣有一間新開嘅潮州菜融入酒吧,仲要由米芝蓮名廚主理,好似都幾吸引咁,同埋見價錢都唔貴,就一於決定去試吓食!打開個餐牌,因為都太多選擇嘅關係,就決定同朋友叫個二人餐,我見套餐都包咗好多菜式,每人當只係$228!🍡醃蘿蔔咬落去好脆口,酸酸味味好開胃!但佢罪特別嘅係蘿蔔切法並唔係一條條咁切,佢係不規則形狀三角形咁切,所以咬落去都特別有口感!🍡花生雞腳燉木瓜湯頭好甜,好香木瓜味,飲落口清清地咁幾好!🍡金牌滷水獅頭鵝肉鵝肉比較淡口味同老,但當我揭開面頭果一層嘅底下,鵝肉有少少筋嘅部位反而比較有彈性有𡁻口,好好食!而最底層當然就唔少得有炸豆腐啦!炸豆腐外層比較脆身,塊皮比較有厚度,有啲硬!🍡威士忌酒香鵝肝嚟到就一定要叫呢度嘅signature啦!侍應上菜嘅時候同我地講記得要先篤穿個波波,之後再將威士忌灑落塊鵝肝到,而當我哋張威士忌灑向鵝肝嘅時候,威士忌香味四飛,香到真係好似一朝醉咁!同埋我都係第一次食滷水鵝肝,鵝肝質地好軟熟好滑,完全無腥味!🍡脆炸拼盤配黑松露醬薯條正正係我鍾意嘅類型,外皮夠哂脆口,唔使點醬都已經夠晒!當然配埋黑松露醬更有風味!我會為左呢

咬落去好脆口,酸酸味味好開胃!
但佢罪特別嘅係蘿蔔切法並唔係一條條咁切,佢係不規則形狀三角形咁切,所以咬落去都特別有口感!

鵝肉比較淡口味同老,但當我揭開面頭果一層嘅底下,鵝肉有少少筋嘅部位反而比較有彈性有𡁻口,好好食!而最底層當然就唔少得有炸豆腐啦!炸豆腐外層比較脆身,塊皮比較有厚度,有啲硬!

🍡脆炸拼盤配黑松露醬

薯條正正係我鍾意嘅類型,外皮夠哂脆口,唔使點醬都已經夠晒!當然配埋黑松露醬更有風味!我會為左呢個薯條返黎encore🤣🤣🤣脆蝦好鬆化,但口味比較淡口,呢個係一定要配上黑松露醬先好食!

另外仲有兩塊外表我初頭以為係米通嘅小食,黃色同白色脆脆嘅配搭,一咬落口,勁香芒果味走出嚟,令我諗起好似煎堆但個餡係芒果醬咁!

米粉炒到好乾身,同時又唔油!但呢碟小菜嘅精髓係佢好香嘅XO醬!平時食開嘅XO醬只會帶有少少的辣味或者帶出少少惹味嘅醬料,但係佢呢度嘅XO醬係帶有蝦嘅蝦香味!

初頭第一次聽白滷水,但上網查過後先知道原來白滷水係指冇放醬油嘅滷水,味道相對上會比較清淡!呢間餐廳嘅白露水係自家調製,而且用於海鮮,味道好襯!

海鮮拼盤包括左右墨魚嘴,大蝦,攞及鮑魚!墨魚咀好軟身,一啲都唔硬,配埋少少辣嘅泰式海鮮汁好鬼惹味!大蝦🍤超級有彈性,好有咬口!鮑魚都好彈牙好軟熟!蛋相反螺可能係因為事先用酒調味過,一入口就好大陣酒味,搶咗本身螺應有嘅鮮味!

聼同事介紹,佢有個FD近排響銅鑼灣樓上鋪頭開左間餐廳,話自己試過超surprise,仲懶神秘唔講我知食咩,净係叫我上去試下你就知喇,包我滿意。講到呢個份上,本身我好奇心就重,我仲特登唔上網search,一於直接上去餐廳試下。 呢間鋪頭都好易揾,有吧嘅feel,裝修新敬又夠糧,唔似傳統嘅餐廳,應該算係吧同西餐廳嘅混合,感覺係度點份牛扒,飲杯野,應該都幾chill下。但係我估錯曬,居然係食潮州菜嘅!係一間有吧元素同西餐風格嘅餐廳入面食潮州菜,真係有少少顛覆我嘅想象。 餐廳嘅裝修佈置已經令我有D Surprise,唔知食物質素點呢?因爲我地就係三個人去,就叫左一個二人餐同海鮮拼盤share黎食。二人餐分量都幾足,有湯、鵝肝、鹵水鵝肉、脆炸拼盤、炒米等。當中我認爲最好食嘅係鵝肉同炒米。呢個鹵水鵝肉應該係招牌野,鵝肉處理得幾好,肥瘦適中,肉質嫩滑,無陣鵝肉騷味,調味上鹵水汁調得都岩岩好,夠味而又唔會太鹹令你越食越頸渴,同鵝肉好夾,食落滿滿汁水,味道甘甜,比好多打冷都做得好。 炒米粉係潮式嘅,雖然我就唔知正宗嘅係點,但係我净係知好好味,個炒粉落咗好多料,可以食得出用嘅XO醬幾靚,瑤柱香味都好明顯下

呢個鹵水鵝肉應該係招牌野,鵝肉處理得幾好,肥瘦適中,肉質嫩滑,無陣鵝肉騷味,調味上鹵水汁調得都岩岩好,夠味而又唔會太鹹令你越食越頸渴,同鵝肉好夾,食落滿滿汁水,味道甘甜,比好多打冷都做得好。

炒米粉係潮式嘅,雖然我就唔知正宗嘅係點,但係我净係知好好味,個炒粉落咗好多料,可以食得出用嘅XO醬幾靚,瑤柱香味都好明顯下,而且炒得夠曬乾身,所以食落係好夠鍋氣同夠曬香,越食就越令我有食欲,都係迅速清盤。

跟住就係我都幾期待嘅海鮮拼盤,由4種海鮮組成,有蟶子、鮑魚、墨魚同海蝦,冰鎮效果做得幾好,令海鮮鮮味最大程度發揮出黎之餘,口感又係最一流嘅狀態,都爽口彈牙,食起身好爽。味道方面,海鮮係用白鹵水去浸熟,自家製嘅,好處就係唔至於太鹹,Cum過海鮮鮮味,但係有提鮮嘅效果,食落去鹹鮮微甜,味道好配合,就咁食已經好鮮甜,仲有個泰式醬汁可以比我地點黎食,酸酸甜甜,都另有一番風味,冰冰涼涼,係好岩夏天嘅一道美食。我自己就最中意食海蝦,鮮味道最濃鬱,超正!

總括而言,邊個話老店整潮州野先好食,估唔到呢種年青人開嘅新派潮州菜唔單止裝修環境大膽有突破,食物出品精緻有心思,絕對唔輸平時嘅打冷,岩曬想試下新野嘅朋友。
