🤗 總結: Shion 走中高檔路線, 以日本師傅作招徠, 坐位舒適濶落, 可能空間太大, 講嘢聽嘢好空曠, 傾密計有點困難, 扣分. 服務貼心到位, 師傅有問必答. 論食物, 傳統江戶前風格, 魚料優質, 調味簡單, 十二貫壽司之外, 加料 鮟鱇魚乾 同埋 八爪魚, 多謝唒! 香港地, 日本餐廳五花八門, 人外有人, 天外有天, 今日有緣到此一遊.

📖 翻查資料: “江戶前” 原指 “江戶城前的河灣”, 即現在嘅東京灣, 當時魚類品種豐富. 另一個意思係 “江戶前” 嘅 傳統壽司製作方法 或者 手握壽司哲學. 江戶時代尚未出現如今先進嘅交通工具同埋雪櫃, 人們想出不同嘅方式保存海鮮食材, 包括煮, 醃, 浸泡等, 演變出一套製作壽司嘅哲學.

sushi shion ,位於中環威靈頓街的一間omakase餐廳。之前一直聽聞是困難預約店,今日終於有機會一試,晚市有兩個menu$1480/$1980,我們試左$1980set,大概20 道菜,仲另有有甜品。途中有部分唔記得影相😅😅,環境相對比較清靜,每道菜式師傅亦都有詳細的介紹,服務也不錯,整體來講超出預期。下次有機會再試試午餐,因為個價錢真係好吸引,系中環確實好難搵到性價比如此的omakase .

中環shion係一個月之前book落的,聽聞是預約困難店,所以都有d期待。我選的是1280 set,而同行隔離果位選680 set.1280set有刺身,賣相靚,Toro同海膽都好味,但螺有少少腥。牡丹蝦、甜蝦同墨魚不爽口,口感太漿。整體ok但不是太有驚喜(特別蝦和墨魚較遜色),個人覺得整餐最好吃的是石垣貝同toro蓉手卷。另外,之前我見到openrice d人講食貴set會有件3層toro的sushi, 點知我件toro sushi 居然同平set的一樣,令人失望。舍利偏酸,我自己覺得還可以,但同行隔離果位人兄話太酸佢唔like。同場撞啱有幾位有點好似好巴閉的女仕以英語高談濶論,疑似係喺度食緊team lunch。我知咁係唔關店方事的,但有點影響食慾。總結係我覺得呢個質素唔值呢個價錢。

Shion的Adachi San之前是在Kami,所以整体风格上,包括定价上都与kami有些类似。一些经典款,例如八爪鱼和海胆昆布渍也是同款。今天吃的是午市680套餐,包含了茶碗蒸,小食,11个寿司,手卷,玉子烧,汤及甜品。整体感觉寿司出品比Kami要好一些。首先是茶碗蒸,配了三文鱼籽很好吃。小食是八爪鱼配鱼卵,感觉这里的八爪鱼会更爽甜一些。寿司则是有Koji(实在没听出来中文是啥,一种白身鱼吧),深海池鱼,北极贝,甜虾,小肌,鳟鱼,中托,赤身 海胆,鱿鱼,金目鲷。其中比较出色的北极贝(肉厚,爽甜),小肌(看这闪闪发光的银皮就知道很新鲜),中托罗(好肥美),鱿鱼(糯叽叽的口感谁能拒绝呢),金目鲷(轻轻炙烤过好香)。而今天的甜虾新鲜度稍微有一点点差,海胆serve的温度有点太冰了,这两道略有不足吧。吞拿鱼手卷也很好吃。最后的甜品焙茶奶冻有惊喜哦。总体来说这家出品和性价比都不错,环境和服务也很好,唯一是师傅不太说话,整体气氛有点严肃吧。瑕不掩瑜,是好吃的店呢。

我叫了個$1288 omakase course ,刺身壽司、燒物樣樣都有些。普遍食材新鮮、原汁原味,配搭也好。


食物大概如下:
刺身:特別喜歡慢煮八爪魚,很稔很入味,另帶子也很鮮味。立魚魚子、佐口魚、中拖羅也ok。

白蝦新鮮好味,大溝貝幾特式新鮮,獅魚則一般。

尤其喜歡鮟鱇魚肝,因香濃,加埋醬料食完有點微辣的after taste ,很好的享受,食完仍齒頰留香。獅魚西京燒、大拖羅也不錯。


🍣昆布漬海膽-呢度既海膽用昆布醃漬,令口感及味道的層次更豐富。


海鰻壽司-海鰻特別燒過,咬落有輕微的香脆,幾特式好味。


朋友叫了一個$688🍱壽司omakase ,食材新鮮味道也不錯,更加物有所值。


總括來說,實而不華,物有所值,值得encore 的omakase 。

👉食物:好食,性價比幾高。我地叫既set唔同都無打亂節奏。同 $680 set比較 $1280 會多左小食,我自己會覺得 $680 抵食好多~
👉服務:店員同師傅都識少少中文,笑容好好覺得佢地超有禮貌!就算我要求要少飯少魚料師傅都盡力配合🥺,仲好鬼風趣😹。辛苦師傅當日一打六。
👉環境:只有10個位,好低調既木系裝修。

阿林💬:午餐omakase $680,由Adachi San主理。從茶碗蒸到甜品,水準十分穩定,穩定得來又有幾貫特別出色,其中秋刀和小肌是當日MVP。到訪時是十一月尾,正值秋刀最佳時節。魚身光亮潤澤,肉質紅潤,十分漂亮。入口滑溜溜的,油脂濃郁鮮香,不帶腥苦,吃完有滿滿的幸福感。小肌的味道由淺入深,初時只覺微酸,但經過咀嚼,味道慢慢滲出,越嚼越酸,越嚼越濃,很喜歡循序漸進的層次。赤身也不錯,醬油漬頗濃,但一抹大蔥起了提鮮的作用。其他還有三文魚籽茶碗蒸、汁煮八爪魚、深海池魚、赤貝、左口魚配左口魚群邊、中拖羅、鰤魚、牡丹蝦、昆布漬海膽、金目鯛、吞拿魚蓉卷、玉子燒及焙茶奶凍。整體沒有過分花巧的把戲,就是純粹地把魚料最好的狀態呈現。縱然間中出現可挑剔的部分,但未致於有嚴重影響。Adachi San全程都十分忙碌,切漬物抹碟一腳踢,又要趕進度,但他仍盡力滿足每一客人的需要。相反,樓面的服務不太細心謹慎,甚為可惜。

整體沒有過分花巧的把戲,就是純粹地把魚料最好的狀態呈現。縱然間中出現可挑剔的部分,但未致於有嚴重影響。

Adachi San全程都十分忙碌,切漬物抹碟一腳踢,又要趕進度,但他仍盡力滿足每一客人的需要。相反,樓面的服務不太細心謹慎,甚為可惜。

Heard many good reviews about their omakase and went to try with my friend.We certainly did not disappoint with their food and service. What were served to us were fresh and delicious. Chef Adachi modded all nigiri sushi perfectly!! My pick were toro, saba and marinated kelp and sea urchin. We certainly did not disappoint with their food and service. What were served to us were fresh and delicious. Chef Adachi modded all nigiri sushi perfectly!! My pick were toro, saba and marinated kelp and sea urchin.

一直都聽過很多關於他們omakase 的好評,今次係同朋友去試。 對佢地嘅食物同服務都冇失望,魚生都好新鮮。Adachi San嘅握功係完美!!我最鍾意係佢地嘅拖羅、鯖魚同埋昆布海膽。 向來呢間都係性價比之選,比起香港其他omakase,就算點埋sake,價格也很合理👍

食物整體表現出色,但加埋服務真係令到體驗更加昇華😍所有師傅都係日本人,但佢哋努力用廣東話介紹菜式;抹碟抹得非常頻密,大約食兩三件就抹一次;侍應會主動換手指布同熱茶;Adachi san親自迎賓送客。整體嚟講,呢度嘅lunch omakase果然性價比好高,雖然冇好悅目嘅環境擺盤之類,但舌頭感覺嘅美味同埋有溫度嘅服務先係最令人陶醉,令人暫時忘記咗身處喺繁囂鬧市🥰
