鱈魚白子

鮟鱇魚肝

煙燻春魚
白身魚味道本身較淡,師傅就用咗煙燻嘅方式去處理,加入洋蔥絲、薑花、酸汁、芥末籽醬、炸蒜,淡淡煙熏味又有炸蒜嘅味道。

糖醋蛋配慢煮八爪魚
糖醋蛋其實都係流心蛋,上面淋上土佐醋、同埋白色嘅新鮮魚鬆。食之前可以攪拌蛋漿,令到八爪魚被蛋漿覆蓋,口感會更加幼滑。八爪魚用左櫻煮處理2個鐘以上,好腍身又有嚼勁。

壽司十一貫
帶子壽司
白色嘅新鮮帶子,加上柚子皮、檸檬汁、岩鹽,帶出帶子本身嘅鮮甜。

真鯛
肉厚邊緣有淡紅嘅魚皮,魚肉上面加入左梅醬,肉質鮮嫩又微甜。

深海池魚
白身魚,魚皮呈灰色魚肉末端淺紅色,厚身又有油脂香,入口甜美又細膩。

生北寄貝
平時出面食開係紅色嘅熟北寄貝,生嘅末端會有灰色。食落會爽口過熟嘅好多,味道仲更加鮮甜。

金目鯛
經過微微火炙,迫哂魚皮啲油脂出嚟,上面放左焦糖洋蔥,魚鮨味濃郁又有洋蔥嘅香甜。

牡丹蝦
蝦身晶凝通透,上面係蝦膏,兩者一齊食好鮮甜。

池魚
銀色魚皮嘅粉紅色魚肉,上面放左薑蔥,肉質緊致又略帶魚鮨香。

吞拿魚赤身
肉質厚實,油脂相對較少,魚味比較濃。

大拖羅
塗上醬油,大拖羅身微微粉紅,食落一口即溶又有豐富又油滋味。

海膽
北海道赤海膽,味道非常鮮甜又帶少少creamy。

江戶鱈魚玉子
睇落好似普通玉子,其實用左蝦膠、魚膠去煎,食落口感好滑身,又有魚鬆嘅味道。

卷物
拖羅蓉手卷
拖羅蓉有豐富嘅油脂又有綿密嘅口感,好適合做手卷。

吸物
用左魚骨同埋大魚嘅魚肉煮成嘅濃縮魚湯,再加入麵鼓醬,味道好濃身又帶魚嘅鮮味。

甜品
抹茶蕨餅配紅豆
第一眼就比佢哋嘅熊仔脆餅所吸引,抹茶蕨餅彈牙又有茶香,紅豆又綿密甘甜。


廚師發辦魚生丼
如果唔想食omakase嘅朋友,可以試下依款廚師發辦魚生丼。總共有12款當做魚生同埋刺身,包括左口魚邊、春魚、真鯛、赤身、深海池魚、金目鯛、油甘魚、大拖羅、帶子、魚籽,牡丹蝦、鮟鱇魚乾,好大一碗,簡直就係omakase嘅濃縮版,食完一定好飽肚。

朋友介紹來這裏試一試,我們來到大約下午2時錯過了午餐時間,所以我散叫壽司。我們叫了火焰三文魚壽司、北海道帶子壽司、鰻魚壽司、油甘魚壽司、赤身壽司、池魚壽司、中拖羅魚腩壽司、碎蔥吞拿魚軍艦、火焰金目鯛壽司、加州卷、日本海膽軍艦和活赤貝壽司。本來想試一試秋刀魚刺身,不過季節性限定冇貨,醉酒鮑魚刺身也冇貨,試不到有些可惜。有驚喜的是海膽軍艦,新鮮鮮甜好味。而活赤貝看著新鮮劏開,即刻order了三個,入口爽脆十分鮮甜。中拖羅魚腩壽司,沒有筋位入口即溶十分鮮味可口。

岩岩做完野,朋友帶左我地去食傳聞最好食的地道omakaese,因為個廚係五星級出黎,年紀輕輕就已經做左大廚,真係邊食邊享受呢個小鮮肉喎!成間餐廳得10個位,所以要食都要預先預約時間!用料上全部係日本早上直運香港,夠晒新鮮有質素!前菜:prama ham包住新鮮芒果呢個食法幾特別,個芒果好鮮甜,咁樣食好清爽清甜開胃~跟住來到最期待的日本生蠔,唔重海水味,好CREAMY,尺寸仲有成隻手掌咁大!又係日本空運過黎,即場開即食!夠晒誠意!唔駛我講,自己睇都知有幾新鮮啦!個飯係加入加入赤醋令壽司飯微酸,仲加入左自家調豉油,帶出到刺身肉感的鮮味~而且好多時佢會選用柚子皮灑係刺身面,食落口就會帶出陣陣清新感~ 幾有夏日的感覺!鰹魚刺身係你面前即席煙燻,令魚味更有層次更濃郁。野菜豆乳湯食完一輪生野之後,飲返一碗湯即刻暖胃,好好,個CP值幾高,濃濃奶滑味消滯,唔錯!熊仔威化+朱古力皮雲尼拿雪條好有少女心,仲唔算好甜,咁樣為今個晚飯畫上句號,perfect!
