炸子雞: 本身點了炸子雞, 第一舊吃的是雞胸與雞翼之間的部位, 但明顯廚師醃完雞後,沒有把鹽處理好, 結果咬落去,成口鹽,鹹到苦。 餐廳解釋因為醃製的效果,但這明顯是處理食材出問題, 屬於非常低級的錯誤。 無法想像在酒店中餐廳會遇上如此低等的犯錯。 餐廳後來建議改吃玫瑰豉油雞, 豉油調味還可以但做得不夠嫩滑,屬於不過不失的菜式。

反而Wine Menu有驚喜,作為一間5星酒店,最頂級的Fine Wine Mark Up 不算太誇張,可以接受的水平。

總結: 如果以五星級酒店的中餐來衡量,我會給予不合格的分數。 如果是家常便飯,有其他更好的選擇。

瑰麗酒店staycation既第二日酒店既餐廳數量放係香港都應該係排頭幾位而今日食既彤福軒相對就係比較易book既一間餐廳應該係做兩輪午市所以我地book到既係一點九既第二輪時間但就算夠鐘都要係門口等左一陣先入得彤福軒係以新世界已故既既創辦人鄭裕彤命名亦都係因為鄭裕彤出生於順德所以呢一間餐廳唔似得其他酒店都係傳統粵餐而係一間比較少見到既順德菜餐廳總廚李志偉耐唔耐都會上下報紙網上平台教煮餸其中包括埋已經唔再存在既飲食男女李師傅之前好似係澳門酒店做左好多年總廚餐廳而家暫時就仲未有星星只係一間米芝蓮餐盤推薦既餐廳瑰麗係呢方面仲差少少全間酒店唯一一間有星既反而係印度菜相反差唔多時間開業既瑞吉只得三間餐廳但一間粵菜一間法國菜都已經成為左二星餐廳一入去就會見到個西式bar檯然後係海景圓檯並唔係傳統華麗中國風大吊燈果種中菜廳餐廳設計係比較簡約時尚而我地坐既係四人方檯兩個人既話就夠晒大張擺盤正常同酒店既華麗相比係比較平實茶杯都係一樣醬料要自助去倒感覺係差少少呢個位因為有個露台阻間所以只能夠話係半海景開左壺鐵觀音四十蚊茶錢的確係六星級價錢不過六星就係六星除左點心可以以件數黎點女朋友淨係飲熱滾水又唔會收茶

Wonderful and delicious dinner!!! No matter ambience, service, taste and presentation are superb!!!

All food are tasty. The dessert plate is amazing in presentation!!! Wow!!! The set up is excellent. So great that those crispy dessert are hot!!! Each piece of dessert over there tastes great. The deep fried fiah filled with minced fish is uncommon to find in restaurant now. Well cooked and delicious!!!

整餐下來最讓我驚艷和記憶深刻的是第一道前菜叉燒搭配水晶柚皮,叉燒表皮又香又脆還有點麻辣味,加上一口柚皮又酸又甜,味道非常有層次,真的是絕了!😍

還有我好滿意的是黑松露雞頭米釀香梨🍐香梨把它切開,裡面內有乾坤,裡面是雞頭米,香梨的甜度加上又糯又香的雞頭米,口感好豐富!

最讓我意外的竟然是薑蔥花膠條撈牛肝菌面,看起來平平無奇的一碗面,沒想到味道好濃郁,感覺所有食材的精華都濃縮在這一碗面裡了,真的好好吃😋

最後甜品最經典的港式甜品「楊枝甘露」「脆皮炸鮮奶」都沒讓人失望!讓我滿足又滿意的結束這一餐美食體驗🔚

濑尿虾饺是普通虾饺的max版本,一揭盖扑面而来富贵的气息。澄面皮均匀细腻,是能透光的程度。虾肉新鲜饱满,脆韧的质地吃起来仿佛在嘴里弹跳,柔柔的鲜味如同舌尖跟蛋白质的深情长吻。

鱼饭里面没有饭,鱼面至少还是有几分像(乌冬)面的,这道算是彤福轩的必点招牌。

鱼肉细细剁成糜,加一定比例的淀粉制成鱼面,口感独特鲜弹,有点像港式鱼蛋,鱼肉的清鲜在咀嚼过程中弹开。配菜丰富漂亮,质地干干爽爽,吃完盘中无油,不需要过浓的调味已经足够。

【彤福生拆鲜鱼羹】
热腾腾的汤羹上桌,如同挨了一记香气与鲜味的组合拳。表面泛着浅而透亮的奶白色,羹中暗藏乾坤,一勺舀起来料巨足,块状的鱼肉与切丝的蔬菜轮番上阵,香菇和千张的韧,木耳和笋丝的脆,在鱼羹的鲜美中层次铺开又融为一体。

质地细腻浓稠,一碗喝完会有种后背微微发汗的舒畅,美中不足是最后两口稀得像鱼汤。

【金汤藜麦舞茸菇烩菠菜苗】
金灿灿的南瓜浓汤盖满翠绿的菠菜苗,甚至能“以假乱真”蟹粉,素菜都能做得这么美,感觉整张桌子都在发光。

汤汁浓稠,带着秋冬的暖意,淳朴绵实的南瓜香气和富有咀嚼感的藜麦完美挂上柔嫩的菠菜,舞茸菇也是鲜极了。

【脆皮炸鲜奶】
汤跟茶已经喝得肚子开始晃荡,加上糖水种类较少,从而选择了看上去更诱人的甜点。炸鲜奶虽然常见,但这一份出品属于制霸级别。

轻而薄的脆皮仿佛吹弹可破,牙齿咬合瞬间那声“咔嚓”空气感十足,并不是喷涌而出的滚烫流心,而是吮吸了一口细腻柔滑的奶冻。纯净而不腻的奶香让人已经忘记了正吃着会有罪恶感的炸物,甜度也宜人。

今年Rosewood 彤福軒嘅迷你奶黃月餅🥮🥮🥮🥮🥮係由佢地酒店🔆中菜行政總廚李志偉師傅親自監督製作🌕📍月餅嘅包裝由 100% 再生紙製成的環保月餅盒,過節得黎又為環保出分力♻️♻️真係好好呀。打開嘅月餅會見到分咗六層嘅禮合包裝。而每一個月餅都係獨立包裝,所以都好乾淨整齊。而月餅喺室溫下感覺都幾紮實。我用焗爐焗一焗熱佢,月餅焗熱咗之後外皮會比較軟熟,但整體奶黃香味 ,依然撲鼻傳來。呢一款嘅奶黃月餅內餡顏色比較淺色,散發出淡淡嘅奶黃香味,甜度適中,食落有好輕嘅鹹蛋黃味。呢一款嘅月餅真係唔錯,我又過咗一個美滿嘅中秋節🎑🎑🎑

難得一家人享受三日兩夜的staycation,在彤福軒享用一餐有心機及精緻午餐作終結。這間中餐廳位於瑰麗酒店的五樓,以順德美食為買點,我分別點了富貴瀨尿蝦餃、南翔灌湯小籠包、鮮蝦肉脆腸粉、雲腿瑤柱羅蔔絲酥餅、五彩炒魚麵、明爐吊燒琵琶鵝、魚塘公煎焗魚嘴、XO醬澳洲和牛炒陳村粉,最後,再點了甜品拼盤。其實全部點心和甜品也很精緻,簡直可以講好睇又好食。而炒魚麵及琵琶鵝,就簡直冇得輸,魚麵採用桂魚起肉製成,再加入大地魚炒,口感爽口彈牙👍🏻。而琵琶鵝用秘製調味料醃制,外皮酥脆、不油不膩,鵝肉嫩滑配以酸梅醬又可增添食味。我最欣賞的就是最尾的甜品拼盤,分別有芝麻卷(菲林)、白糖糕、香芒糯米糍、大良炸鮮奶卷、草莓蝴蝶酥及香脆奶皇芋角,個人最喜愛芝麻卷,芝麻味豐富又好像帶有芝麻油的味道。這𥚃每一道菜式也很有水準,食材講究,真正滿足我們的味蕾,連我仔仔只喜愛吃西餐多過中餐的年青新一代,也樂意陪同父母吃兩小時午飯,食物質素是其主要原因,當然這𥚃的服務質素也是一讚。
