The waiter and waitresses are super attentive. I think the restaurant definitely offers one of the best services in the industry! We ordered the lunch sets, and you can ask them to change certain things on the menu if any diet restrictions. The food portion was not big as expected but very tasteful and to the highest quality. The bread basket served was also very yummy, I definitely indulged on a few of these (*feeling guilty*).

有4款bread, crispy的好香芝士味,另一款則太咸了.
The Appetizer look interesting, it is a plate of foie Gras paste with around 6 pieces of finger nail sized vegetable. However, The foie gras is very salty. And I can see the goose oil because it turns white n solidify.
Here comes the hand made pasta with porcini. It's al dente and that's all. Don't you think it's a bit too ordinary to see this on a tasting menu? That's what I wanna ask the chef if he comes to my table.
Main course is John Dory (fish) and the fishy smell is very strong. Why? And the sauce is super salty.
Dessert is white fig tart. It is not sweet. The pastry at the bottom is a bit hard to cut through.
The wine pairing is so-so.
I'm sorry to say that 色香味 are all lacking.

It didn't take long for our two starters to arrive and what a great start it was. First up was the lightly seared langoustine served with young leaves salad and crab mayonnaise. I thought the crab meat salad biscuit (left) was fairly nice and it was pretty slick to complement it with a pea purée and bone marrow. The interesting mix of flavors was quite a refreshing treat for us (4/5).

Of course, Chef Lavarra's newest creation, sea tiramisu, had to be on my agenda this afternoon. It looked really good on paper too, with red prawns carpaccio and seared scallop as the main ingredient of this dish.

At first, I was a little confused with the presentation. OK, I spotted the scallop and red prawn carpaccio but what's the rest of the "stuff"?

But take away the slightly "odd" presentation, they really got something special here. On the bottom of the pile, you have a delicious red prawn carpaccio with just the perfect taste and texture. Then on top was a seared scallop, seafood foam, deep fried red prawn and a small "cous cous" made with something crunchy and some red prawn paste.

Like I said, lots of stuff in there but the fact that everything harmonizes with each other made this a very enjoyable dish (4.5/5).

Our first main course was a simple white tomato risotto with caramelized pancetta and Liguria pesto as we wanted something light. It was another excellent dish. The white tomato juice was mild and not overwhelmingly overpowering, yet it provided the risotto just the right balance of flavors. And look at that presentation, absolutely beautiful (4/5).

This was an odd choice for me coz I never like lamb. But Chef Lavarra's kitchen has always been very good with lamb so why not?

I really like this bread roasted lamb loin with perline aubergine fondant. The lamb loin was ooohhhh so good. Very tender and juicy. And there was no strong gamey flavor from the lamb. Only if the pastry with parmesan cheese was made slight better, it would've been perfect (4.5/5).

Onto dessert we go, we again picked the traditional tiramisu with limoncello which we've had on a number of occasions already. The texture was again perfect but I thought the bitterness was a little dominant this time around (3/5).

I personally picked the strawberry semifreddo with cantaloupe melon soup. The strawberry parfait was very refreshing and it was perfectly matched with a delicate cantaloupe melon soup. This was very nice and I am definitely a happy camper (4/5).

I thought Chef Lavarra's Tosca has really emerged as one of the top restaurants in Hong Kong in recent years. I can always count on his kitchen to deliver some of the most high quality dishes with great consistency. Looks like we will be back very soon.

原來這兒的配酒午市套餐每月都會推介一個意大利地區的餐酒,六月的推介地區是薩丁尼亞。我不知道薩丁尼亞也有岀產葡萄酒的,而且水準還很不錯啊!

配這道菜的餐酒是2012 Vermentino di Gallura Vendemmia Tardiva, Capichera,基本上與配前菜的餐酒的年份、葡萄品種和酒莊都一樣,只是用了晩收的葡萄來釀製。我問侍應晚收葡萄釀的酒一般較甜,不是配甜點的嗎?他解釋說這款白酒其實並不太甜,而且酒身較前一杯厚和滑,與靖魚主菜的味道很配合,更比配另一道主菜的紅酒昂貴呢!我喝了一口後,就知道他沒有騙我,並且學到新知識,就是晚收葡萄釀的酒不一定要配甜品的。

2011 "Korem", Cantina Argiolas 是配這道燒肉的紅酒,酒身半厚,但入口順滑,單寧平衡,相當不俗。雖然侍應説配靖魚的白酒價錢較高,但友人對這款紅酒也感到滿意。

最近愛上了Langoustine,這可是龍蝦的一種,但沒龍蝦大隻,有點像蝦,其實有時覺得這個比龍蝦更美味呢,味道上更鮮呢;而Tosca把這個也做得很好呢,肉質嫩滑,味道很鮮,很香呢;而旁邊那個圓圓的則是脆餅夾著的是蟹肉沙律,蟹很鮮,被脆餅夾著,質感不錯呢;頗喜歡這道菜的。

這個刨似乎很好,刨出來的芝士很美呢;fusilli是自家做的,質感特別的棒,十分煙韌;汁醬方面則用了蕃茄來做,蕃茄味的酸度剛好,當中混入了免治雞肉,與意粉撈在一起十分配呢,很喜歡這個!

主菜方面有數款可選,因為比較喜歡吃肉,面對著羊架和和牛之間時,我是十分猶豫的,因為旁邊的食客正好來了一份和牛,觀其貌,吸引度是0的,但侍應說這個是signature dish,所以最後還是點了這個。

和牛中間的顏色是美的,但味道上則有點強差人意,肉質不夠嫩,肉味亦不夠,頂層那些smoke還很苦,還要加了二百多元,真的覺得超級不值;幸好旁邊的鵝肝煎得很好,外層香脆,入口即化,鵝肝味亦濃郁。

切開我的蛋糕後,當中的是raspberry,味道酸酸的,令綠茶mousse沒那樣的膩,這個蛋糕的甜度都適中,雖不算特別棒,但整體上還是不錯的。

朋友送了張午餐優惠卷,三個course的午餐收$348,一於去試下。我的三個course套餐放棄了頭盤,只選了意粉,羊扒及甜品。首先來個麵包,非常鬆軟,好味!之後來個意粉,有點像肉醬意粉,意粉煮得剛好,煙煙靭靭。雖然不太特別,但尚算不錯。終於到主菜的羊扒,舊羊扒切成一個方盒似的,面是焗脆的。羊扒本身也算霖,但就未夠滑,面的脆脆好香口,跟羊扒切在一起加點汁食會較好,因為此羊扒的肉身沒有太多的seasoning較淡。甜品我選了tiramisu,好creamy好香咖啡味,芝士同cream的部份也非常滑,是全個course最yummy的一道菜。於天空中賞過這一頓午餐,雖然食物只是不過不失,但迷人的維港景色已值回票價。

第二道是意粉來的【Baked pasta with meat stuffing and béchamel sauce】,同樣非常簡潔,不用花巧,但實則卻內藏乾坤。原來大意粉筒內釀入了由牛肉、豬肉及雞肉煮成的肉醬,再在上面舖有一層忌廉來焗,意粉很爽口又有嚼感,而肉醬與忌廉又非常融合,除了筒內的肉醬外,碟內亦放在另一種調味的肉醬,就是加入更多的茄醬來煮的,酸溜溜的,吃完不覺油膩而覺開胃。

第三道是主菜的【Scorpion fish Anconetana style】,這款魚與石頭魚很相似,肉質幼嫩細緻,鮮味無比,配合以橄欖油加檸檬汁來煮,十分清新爽口,同樣地魚上放有多款海鮮,仿如一個小型海鮮拼盤,有嫩滑的青口、爽口的蝦肉、滑溜的墨魚及鮮甜的蜆肉,整道菜就充滿了海洋的氣息。

最後一道主菜是肉類的【Guinea fowl with Potacchio sauce】,顏色最為深色的一道,分別以雞的不同位置做成烤雞卷及煎雞扒,雞扒煎得香口,而且肉味非常濃郁,初時有錯覺以為是鴿肉,因味道帶點血味,相反地,烤雞卷則白雪雪的,雞皮十分香脆,內裡則柔軟腍滑,配上以蕃茄做成的醬汁,清新又美味。不過,絕對不能缺少了那件Potato Cake,吸收了醬汁的美味,越吃越滋味,如果可以份量多一點會更開心。

每次到來用膳,都感受到很妥善的安排,由入座至用膳完畢,服務都很好,而且環境舒適,友人都很開心。最喜歡的是每一道菜及每一支酒都由侍應細心講解,知道每一道菜的用料煮法及食法,實在貼心。

生日飯,第一次去tosca。呢間係米之連一星意大利菜,係icc 102樓。被安排坐係窗口位,個view唔錯,環境幾舒服幾relax。單點左幾樣野食,冇叫酒因為想食完飯係樓上ozone飲。整體上頭盤,前菜,意大利飯,湯都好好味!(記唔到菜名)係個牛扒過左點火。。不過呢間野服務都不錯,知道我地唔太鐘意個牛扒,問我地要唔要煎過,但我話好飽唔駛。跟住佢送左個甜品比我地。。。佢地服務好細心同用心(雖然我真係好飽食唔落個d甜品)生日係度過真係不錯,幾滿意!
