The ragout was made with minced chicken and cream, and the house made tagliolini was al dente, which allowed the sauce to hang onto each pasta really well. It was topped with parmesan cheese which brought an additional umami flavour.

This beef cheek was so collagenous and soft, and it was braised in a red wine sauce which brought of the beefy flavour. The mashed potatoes at the bottom was creamy, and has absorbed all the essence from the meat.
