Full of anticipation to try this unique Nordic gastronomy fining dining restaurant at Poho area. Full of anticipation to try this unique Nordic gastronomy fining dining restaurant at Poho area. The ambiance, lighting, open counter kitchen (not the main cooking area) were all very pleasant and cosy. Tried the 7-course menu with 3-glass wine pairing. Every dish was innovative, pretty and delicious; well deserved Michelin star.

The only room for improvement is the service details - the server removed our bread (and the yummy signature butter) without asking us, and the chef did not ask us and assign the choice of dessert to us (quite weird feeling!) Chefs and servicing team need more passion in making the experience truly star-rated and hearty (some of them looked “meh” or tired).

I ordered a four course dinner. To start with, it’s French toast, with seasonal truffle, balsamic vinegar, aged cheese and truffle sea. It’s so delicious and full of truffle taste! We sat next to window and the environment was comfortable.I ordered a four course dinner. For snacks, I ordered Chawanmushi, which consists of cauliflower, blue mussel, lobster bisque and caviar. Nice environment, service and food, but better check it’s drinks price before order. Overall , the experience was good and will revisit.

Our first dish was the Chawanmushi - Jerusalem artichoke, uni from sea of Japan, lobster bisque and sturgeon caviar. Such a delicacy... and each spoon made you eyes rolled to the back

Our second dish was the ultimate dish for truffle lovers... The top shavings were seasoned truffle with cheese and balsamic vinegar. Just mind blown, It can get messy with awesomeness....

Beef tenderloin followed. The tenderloin was perfectly grilled or seared (medium rare.. my fav), topped with chanterelle and truffle... C'mon. Whoever does not like it, I'm gonna have a word with you.

All in all, this whole experience was amazing! Staffs were nice and attentive!

We both enjoyed the food and wine there and will definitely come back for different menus each month!

Came back for lunch as daughter had never been here. There is this waitress and she was so RUDE that I had to tell her colleague to make sure she stayed away from our table for the rest of our lunch. Probably won't come back after this time.

The toast was cooked in a batter with balsamic and truffle. Between the toast was caramelised white onion, and it was topped with an aged Parmesan cream. Finally, a generous amount of autumn truffle from France was placed on top. We enjoyed this toast with aged balsamic vinegar, and the vinegar cut through the richness of the cheese and lifted the earthiness of the truffle😍. This was served with a small cap of truffle veloute. You have a small bite of this toast and then have a little sip of the warm truffle veloute - that’s what I call heaven 👼

Swedish sushi was one of my favourite dishes at this restaurant😍 I love Frantzen’s version of sushi - instead of rice, this sushi was made withcrispy white moss, topped with creamy cep mayonnaise, a tender slice of venison, frozen foie gras and little bit of hay ash. This was such a creative combination of flavours and textures!

I have also had the chawanmushi (Japanese steamed egg) with cauliflower, herring caviars, and fermented mushroom jus. This was a served cold. The caviars had a mild flavour and this was a lighter dish compared with all others.

During this visit, we ordered the 7 courses tasting lunch menu. I have starred ⭐️ my favourites below:

⭐️🐟 House smoked Norwegian salmon. The salmon was smoked with apple wood, and had a very tender texture. It was served with pink peppercorn, cream fraiche, trout roe and cumcumber.

⭐️🍚 risottos with soya pickled shimeji, scallion, Swedish cheese and granola. Pickles and granola are unusual ingredients in risotto. Tangy pickled mushroom and the rich Swedish cheese went very well together, while the granola added some crunchy texture to the dish🤩

For desserts, we had Yuzu sorbet topped with pickled fennel and sancho pepper meringue. This sorbet was refreshing, and the sancho pepper gave this dessert some complexity and made this dessert surprisingly interesting🍋🍨

The second dessert was smoked ice cream, with ginger creme, birch tree oil, tar syrup, and ginger cookies. The ginger ice cream was smoky and ultra creamy, while the tar syrup was smoky and sweet. I liked this combination of smokiness, creaminess and spicy gingery taste 🍦

這是我和女友其中一次最有趣的用餐體驗, 它的本店Frantzen是瑞典以及斯德摩爾哥的第一家米芝連三星餐廳, 以前窮遊北歐的時候, 只聞其聲而沒能力負擔其高昂的價格. 主理人Bjorn Frantzen在香港開其第一間海外分店, 令人大感意外, 畢竟北歐菜在香港極為冷門, 在我記憶中只有FINDS比較多人認識, 他在香港開分店的原因其實很簡單, 就是因為餐廳身處的建築物業主是個瑞典人, 希望他的建築物有一家代表到瑞典的餐廳, 就促成這樣的合作, 而Chef Frantzen在餐廳於香港成立的四年間, 還開了更為Causal的The Flying Elk, 但是很快就結業, 幸好Frantzen’s Kitchen在上街依然屹立不倒, 它的對面就是充滿回憶, 而又令人唏噓的Upper Modern Bistro.說到食物本身, 和瑞典本店最大不同的是, 它大部分菜式也是以a la Carte為主, 而本店則是每人3500瑞典克朗的Set Menu, 這樣比較豐儉由人, 雖說它的菜單有分開Snack和Main, 但其實也是一人份量, 而這裡的Snack比Main吸引, 可以說是每件也是藝術

招牌菜是French Toast, 在炸起的麵包上鋪上滿滿的黑白松露, 黑醋和芝士, 味道澎湃之餘, 還是滿滿的鈔票味, 而口感層次因為中間的拉絲芝士而更多元化. 附上的特製茶味道回甘, 可以中和松露的Aftertaste, 這種做法有點中式呢! 另一道必點的Snack是Swedish Sushi, 沒有醋飯而以苔草代替, 中間是鹿肉而上面是鵝肝醬, 口感虛實交錯, 味道由淡到濃, 鹿肉沒有腥味, 比想像的柔和, 這”壽司”的創意的確可喜. 主菜點了北海紅蝦配上南瓜甘筍醬, 前者口感爽彈, 醬汁甜而不膩, 比起傳統煮海鮮的汁醬更為活潑, 貫設了這裡創新而有玩味的特色.

We went to Frantzen to celebrate a birthday. (Not mine but... I wanted to try that place for a while...
)

The great thing about this place is that they review classics with a Scandinavian taste or different twist but it means also that you may not enjoy everything...

I personally love it. I enjoyed surprising textures and undiscovered flavours (such as this lichen sushi).
So it might be not for you if you like to stick to the classics or not enjoying much try new things.

Everything is accurately explained by their waiters and it really adds value to the experience. Because YES!, this is surely what it is, a culinary experience more than dishes with ultimate finishing. But don't be misled, everything is done with thoroughness and precision.

The place itself is cosy even though I felt they tried to maximise the space rather than comfort.

Also I was a bit disappointed by the selection of wine and champagne, that was too narrow in my opinion.

In conclusion, very happy with the experience, not sure I will renew soon but still warmly recommend it.

PS: I'm French and must admit it was surely the best French Toast (croque monsieur), I ever had. We even reordered another one...

Located in a hip area, made me feeling like away from Hong Kong. A small little place, ambiance is just comfortable. Had a table for six at the corner, and thought the plastic petition isn’t really necessary, it just won’t do any protection, but make it difficult for serving. Had the 8 course tasting menu, with our own wine. All the dishes like a piece of art. Taste sensational. Chef Jim explained when every dishes arrived. 招牌嘅French toast果然好食,我同朋友都encore左,每人食左兩件🤤舖面嘅係份量generous嘅Seasonal truffle,下面Balsamic vinegar同埋好香好軟熟嘅Aged cheese🧀加上烘得香脆嘅多士全部一齊食口感同味道都幾好👍🏻另外仲有跟一小杯Truffle Tea,不過我覺得味道太濃,會搶左主角嘅風頭🤔 至於北海道帶子相對普通,加上少許truffle碎其實唔係太夾,個人覺得唔order都冇損失~

黎自瑞典嘅Frantzén’s Kitchen 🇸🇪一試北歐菜!呢味皇帝蟹係除French toast之外當晚嘅另一最愛😍蟹肉非常之鮮甜🤤配上亦同樣新鮮開胃嘅tomato & peach ‘ceviche’好夾!再加上微微wasabi同薑去調味做到提鮮嘅效果,出色👍🏻而Cod魚肉肉質嫩滑,調味用上yuzu同fingerlime,我都覺得還好👌🏻不過唔好魚嘅朋友就覺得有DD腥🤔

一間好高級噶西餐廳,環境好有格調,位置有小小偏,不多都還好,還是能找到。樣樣菜都好精緻小巧,又好體又好食,我最中意果個有鱈魚噶菜,條鱈魚搭配滴白奶油醬汁,味道層次好豐富,難以言喻噶美味!可惜忘記左叫咩名了,哩間店主推精緻同埋味道,所以分量系細左滴,不過真的好味!
