Located within the luxurious five star St. Regis Hong Kong, The Drawing Room features grand interiors decorated in classic Edwardian style with opulent furnishings and chandeliers. The restaurant is very popular for its Afternoon Tea and it is difficult to book a table during that time. The beef tartare was an exquisite creation. The beef was accompanied by crispy potato shoestrings which provided pleasing textural contrast while the homemade vinaigrette artfully united the components into a cohesive whole. The portions were judicious, allowing the complex flavors of the raw beef preparation to unfold without culinary fatigue.

The fish fillet had been perfectly seared in butter, resulting in a crisp yet moist exterior yielding to a succulent and flaky interior. What impressed us the most was the deftly balanced reduction of champagne and yuzu which elevated this simple fish preparation to gastronomic heights, simultaneously enriching and brightening the dish.

The pasta was cooked to perfection, neither too al dente nor overly soft. The exquisite sauce of sea urchin and semi-dried tomatoes imparted umami richness and depth of flavor that complemented while not overwhelming the other high quality ingredients. However, it was the blue lobster tail that truly elevated the dish. It was delicately poached to achieve perfect texture and aesthetically arranged atop the pasta, contributing a delicate yet distinct briny flavor.
