茶碗蒸的味道絕對是超乎你想像的濃郁,除了有新鮮蟹肉外,還有秘製超濃湯底,用上完整的山茶菇去熬製,把頂部切出來放在滑滑的蒸蛋上,雖然菇味濃郁但不會難入口,它也是沒有額外加調料,喝到的都是最純粹的鮮味。

Fine dine 不能缺少的甘鯛立麟燒終於上桌~大廚用熱油淋熟魚肉令肉質保持到彈牙不會太overcooked,精華是提升視覺味覺的白奶油醬,裡面加了清酒帶了微微的酒味給魚肉,肉質都更有咬口,它的口感依然是滑,外層的魚皮還是很脆。

雞需要額外加錢,但絕對值得,它的製作過程非常繁複,需要先切走肥膩部分再風乾一晚,焗的時候就會更加香脆,雞件皮脆肉嫩,微微的咸香讓你會更想吃,不過最精華其實是燴飯,做到有點risotto的口感卻帶點飯焦,萬能蔥提味,甘荀粒減膩,七星米用白酒,雞湯去煮,最後加上雞油提升順滑口感,令飯味道更香濃吸引。

這個反轉蘋果撻製作非常繁複和花時間,但絕對是你要再來的原因,上面的蘋果每天新鮮切,而撻底沒有用到酥皮反而是想軟心曲奇的餅底,口感更實在,也能更集中感受甜品的組合效果。雪糕是自己人手製作,雲呢拿的香氣和味道都很強,和蘋果撻一起吃完全是一拍即合,你以為很甜很膩,其實所有味道都恰到好處,也是作為晚餐的完美句號。

As an ebi-lover I’m so satisfied with this dish! After ageing in kombu(seaweed), and marinated with yellow wine, the ebi has so much depth of flavours! Crispy tempura shrimp head added an extra texture to the dish, while the seagrapes and mozuku immensed in yuzu ponzu brings freshness and some acidity.

This is one of my favourite of the night! Cold Angel hair pasta cooked with dashi (Japanese broth) has a really full savoury flavour without extra seasonings. With white truffle oil and wakame added, the aroma is impeccable! A gentle scoop of caviar on top brings extra umami to the dish, and the Shiso flowers looks really cute as garnishing.
令人驚喜的一道菜!不加調味的冷天使麵在用日式出汁烹調後有非常獨特的鹹鮮,加上白松露油和若菜後香氣四溢,滿滿一勺魚子醬帶出濃厚的鮮味,作裝飾的紫蘇花也令人賞心悅目。

Longed for this dish since our arrival! The roast Hong Kong three yellow chicken smells so good after popping out of oven, with the beautiful glaze golden brown colour. After air-drying for a day, flavours from the chicken is further condensed, giving very rich flavours after roasting.
Rice cooked with cast iron pot was heart-warming, with spring onions and raw salmon roes for extra earthy tone and savoury.

It is just perfect for an apple tart lover, especially with that scoop of silky and creamy homemade icecream! Very pleasing aesthetically with all the tiny golden flakes and perfectly caramelised and browned apples. Interesting textures from soft cookies dough instead of puff pastry makes this dessert a unique one.
並非如傳統般用上酥皮,反而採用了軟曲奇的作法,這法式反烤蘋果塔非常濃郁,蘋果充分焦糖化後變得更可口,配上一勺自家製的雪糕,冷熱交替的口感實在令人上癮!

最後呢個就係我哋成餐最鍾意嘅燒三黃雞🐤如果你兩個人食嘅話 佢呢個就會有半隻雞 份量超多 而且佢係喺你前邊燒 我地一路望住一路超期待 因為佢個光澤感真係超靚😍😍之後佢個雞係真係煮到剛剛好 超滑 而且好嫩 無論係雞胸定係雞髀都好好食 而且佢個黃酒汁係真係超級畫龍點睛 佢係有少少酒味得黎好夾個雞 用黎撈飯一流 不過我自己就覺得佢個皮唔算話超脆 但係都好好味🤤另外佢個飯我哋都超鍾意 佢呢煲飯係我哋兩個人食嘅 之後佢入面係撈咗少少雞油 撈埋啲三文魚籽同蔥粒 超香超好味🍚我哋最後係食晒成煲飯 好飽 但係超滿足🥰

全場只有八個座位廚師較容易有時間介紹每一道菜色除了享受食物  多了一份交流吞拿魚他他 Tuna外面脆,入面吞拿魚蓉美味調味平衡做前菜非常之醒目Uni 海膽French toast 用咗少少豉油調味少少鹹香加咗青檸令到海灘變成一道度清新之選日本仙鳳趾綠色萬能蔥油帶微甜生蠔非常新鮮見到生蠔味很香很甜日本縞蝦  蝦頭天婦羅整 整個都吃得  煮法用昆布漬。用咗法國黃酒 白酒 清酒    珍珠洋蔥    dill草(蘿蒔)  海葡萄  水雲   很厲害是下柚子醋很多時都會做得偏酸   這餐廳做得很平衡  好味   用好多海中的食材  來配合縞蝦   很夾的組合Paste日本高湯  醬油漬  白松露油紫蘇花Wakame. Angel hairRoyal caviar club sturgeon魚子我不太熟  但不是死咸而且很帶咸香鮮味   幾好食   最重要係很闊綽  下了很多魚子呢蟹肉茶碗蒸 Chawamushi 個高湯入面有野菇,只見超多菇頭 ,一問之下原來廚師只用菇頭,菇身和根會用來煮湯。蒸蛋,花蟹,Yamacha take,  應該係我食過最好食嘅茶碗蒸Amadai 鯛 uroko yak
