話說今晚兩人去吃晚餐,叫了幾樣食物,但最想食的仔粥等了又等,嗺了3次也不得要领,等了共一小時也沒上枱,最後叫侍應取消仔粥,侍應拎張單走時我們還以為可以取消,好戲在後頭。。。及後竟來了一個高級的經理拎張單同我們說,‘’如果你依家走便可以取消,你未走便等到粥上枱與否才能幫你取消‘,即是如果我們未埋單也不能取消,而當時我們還有部分餸菜未吃完,又怎麼能立即走呢?”這個條件交換的技倆,竟然立生在一間這麼多人吃的潮州菜館,果然令人大開眼界。本身不是想取消的,但問題是等了一個小時己經吾想再等了。但想不到過了3分鐘後,同一個經理竟然主動過來同我們取消,但這個不容許食客因為等得太久而取消餸菜的做法,我們基本上從未過。不會再來了,亦絕對不會介紹朋友來這間潮洲菜館吃了。附註:現場環境因為樓底不高,D食客聲音回彈很利害,比街市還嘈吵,同一張枱坐也要大聲講野對方才能聽得清楚,大家考慮一下是否去光顧。

潮州菜算是比較昂貴的中菜,就算只是街邊小店也不便宜,今天的這間性價比高,乾淨企理。朋友不吃鵝,叫了一個鹵水豬手,鹵水味濃郁而不咸,份量夠大,豬手脂肪也不覺很肥,骨膠原感重。潮州最出名炸蠔餅,酥炸的表面,煙韌的中層,再加上海鮮味的內涵,而且蠔量多大隻。一次過滿足三個願望。苦瓜冬菇腩肉,潮州的煮苦瓜一向比其他弄的苦,而且不會過軟而口感不好。苦瓜的苦味浸入冬菇內,非常好吃。潮州鹹菜炒麵,炒麵油膩,再配上潮州特製的鹹菜,非常惹味。

另一道護國菜,這名字很有亮點
其實取名有段故
相傳是宋朝末代皇帝趙昺落泊到逃到潮州
在寄住的廟中得一僧人奉上
一碗蕃薯葉菜湯
古代蕃薯葉是窮人才吃的粗糧
僧人貼皇帝吃不慣
用心烹調令趙昺十分感動
在動盪之年無米無糧
落難之際仍能得人如此推心置腹
於是就把此菜命名「護國菜」
簡單一道菜湯羹
蕃薯𦳑打成泥加上湯烹調
一開蓋陣陣清香淡雅
連不吃湯羹(主因是怕芡汁)的我都全清!

這道菜感覺上很像道廣東小菜
但仔細看魷魚的切法與平常吃的炒鮮魷不同
但明顯是要南澳魷夠厚大肉厚才能完美呈現這種切法

今日同老公行灣仔電腦商場,買完嘢就四圍搵嘢食。行過呢條街見到間好有中國傳統餐特色餐廳,咁就比佢吸引入左去。內裡中式酒樓裝修,入到去已經見到坐滿人。呢度地方都幾大,坐得舒服。呢間餐廳係食潮州菜,打開餐牌,見到好多特色潮州菜,老公就隨便點左幾款。滷水鵝片(例牌):鵝片夠瘦,一D都唔韌,滷水味濃,好入味,又唔會太鹹。有豆腐墊底,同樣入晒味,幾滑。汕頭煎蠔烙:煎得夠脆,好香口,蠔仔夠大隻,帶鮮味,加埋胡椒粉就啱晒我胃口。蕃茄炒白菜:有蕃茄味,唔算太濃,白菜煮得軟硬適中,整體幾好。肉碎蠔仔粥(例):老公指定菜式,份量多,裡面食到有魚乾仔同芹菜等味道。蠔仔無論煎同煮粥都唔錯,值得推介。
