學生時代常在觀塘流連~但畢業之後就很少去這邊了~~每次回到這邊都會勾起不少回憶~相約了同窗好友在觀塘afternoon tea相聚一下無意中發現了有家法國南部的米芝蓮一星餐廳~一於去試一下它的afternoon tea set~很有個性的賣相~不像酒店用的下午茶架~食物是放在黑色板上~十分型格呢~一板是鹹點~另一板是甜點~這是二人份量的~店員於上菜時會逐一介紹~但隔了一段時候我都忘記了~鹹點有4款~每款有2件~整體來說水準還不錯~甜點才是主角~ 共有6款~scone, macaron 和麵包布各有2件~~size 較大的蛋白檸檬tart, mango mouse tart & chocolate tart 就各有1件~~

偶然之下,有機會試試BriKetenia的晚餐。

Main Course: 燒春雞 + 香煎帶子燴意大利飯


先談春雞吧!肉質鮮嫩,實肉兼吸引到醬汁之味
配以塞米仔,加上露荀,再搭啲雜菜,你好野!確實食完,都覺自己健康萬分。或許小弟個人較愛每餐,必須有蔬菜食下。


再講講份意大利飯,帶子大大粒,煎得幾香口
飯方面,飯質岩岩好又唔會太濕,可以再戰。況且又有少量磨菇、脆片為配菜,口感確實Rich!

燉蛋入面有鵝肝醬
平時個面係會用砂糖
但係佢哋係用櫻花籽
中間有raspberry醬減膩
可以就咁食又可以搽落麵包度食
就咁食其實一啲都唔漏
個味道好複雜因為又會甜甜地但係中間有好香濃嘅鵝肝味
一個人可以食兩碗

油封鴨髀蘆筍配南瓜汁

之前未食過油封鴨髀
聽個名怕會好油膩
但係briketenia 嘅油封鴨髀真係完全打破我嘅幻想
原來油封鴨髀係可以冇油味同埋好林㗎!

最後一次幫襯已經差不多係一年前嘅事,之前成日去,因為有個老友喺嗰邊做野,間唔中揾佢去Brikentania 食晏,老友轉左工之後就冇再去幫襯喇,最近有朋友約食晚飯,想食西餐,就諗起左久違嘅佢。

桃花依舊,人面亦依舊。一別經年,無論室內陣設,廳面Waiter ,開放式廚房內的站台大廚,都熟口熟面,同一年前冇大分別,現今香港地請人極度困難,飲食員工流失嚴重,食肆轉廚房樓面班底十分頻密,食物水準唔穩定係慣常現像,所以大家如果見倒食肆員工班底穩定,水準亦會相當穩定。

帶子體積屬於中等,只有5蚊硬幣直徑大細,味道偏淡,但肉質纖維頗具彈性,根據舌尖經驗,帶子應該係產自加拿大嘅帆立貝,番茄沙沙用嘅欖油味道濃郁,但就冇蓋過帆立貝嘅清爽味道,配撘得宜。

焦糖燉蛋cream brûlée 一般會喺食法國菜時最尾段出現,係一道法式甜品,呢度嘅廚師好破格地將佢造成一道前菜,放入甘香鵝肝後,令原本香滑甘甜嘅燉蛋添加左一重濃郁鵝油脂香,作為前菜大家可能會覺得有啲膩漏,但廚師巧妙咁喺燉蛋上加上咗酸味紅莓醬,中和咗甜同膩嘅感覺,伴碟蔬菜份量唔少,邊食燉蛋邊食蔬菜,令到本來口感厚重嘅燉蛋食落變得清爽。

Briketenia提供嘅麵包係自家製出品,午市只提供皮脆內軟嘅法式長包,食過幾次俾倒我嘅感覺都係好有麥香,包心軟熟得嚟有咬口,質素高嘅出品,通常我食午餐,一個人都食兩兜,佢地午市時段麵包都係任食嘅,啱哂我呢種大食嘅麵包怪。

除咗法包,晚市仲有提供酥皮芝士條,佢地呢個酥皮鬆脆得嚟並冇油膩口感,酥皮油嘅投入量好精準。

先頭已經講過鯷魚味麵包醬好好食,蛋黃醬酸味同鯷魚嘅鹹鮮味非常平衡,搽麵包真係一流,我成日喺度Encore 麵包,正正係因為醒胃嘅佢。

波士頓龍蝦如果喺大造嘅季節,其實相當平,我兩三年前曾經喺灣仔街市買過HK$40幾蚊一斤,同豬肉咁上下價錢,不過口感一般,唔太爽口彈牙,鮮味亦一般,後來知道左原來最靚嘅波士頓龍蝦嚟自加拿大,美國出產嘅就次一皮,價錢亦平好多。

面前嘅一碟扁意粉,蝦汁味道濃郁,蝦肉肯定喺生猛龍蝦身上攞出,彈牙鮮甜,估計係加拿大生猛活貨,扁意粉亦煮得剛剛好,帶住髮絲粗幼嘅Al Denti 內心,唯一嘅小挑剔係龍蝦汁有啲瀉,而且浸住哂啲意粉,影响口感同賣相。

菜牌上寫嘅係西班牙牛肉,點菜時知道西班牙牛肉暫停供應,現有嘅係美國Prime Grade 自家熟成牛,小弟食慣美國牛,鍾意濃郁牛味之餘,比較有𡁻頭,冇和牛咁鬆化但就唔會食到成口油。

西餐永遠是我的最愛,法國菜更加令人好快投入與享受跟喜歡的人進餐的時光,在觀塘原來有一間米芝蓮餐廳—BriKetenia,雖然過了放工時間,但晚飯時間特意前來的客人卻越來越多⋯BriKetenia位於觀塘工業區,地址較近地鐵站,餐廳佈置簡約卻不失貴氣氣,又帶有一點懷舊感覺,餐廳內播放著輕柔的音樂,非常適合情侶共餐,很有情調⋯Dinner Set價錢屬中上,選擇算多⋯餐包有香脆法包及芝士條,配以秘製醬,口感鬆軟香脆⋯Stater:白酒汁煮時令法國藍青口平時食藍青口以急凍為主,但這裡的藍青口感覺上是新鮮的,鮮味與軟滑口感跟平時食到的完全不一樣⋯Stater:鵝肝焦糖燉蛋過往食焦糖燉蛋以甜品為主,原來變成咸點也沒有半點遺和感,焦糖燉蛋似乎是由Paul Lafayet提供,那份細滑不用多說,但當中混和了非常濃烈的鵝肝味道,綿滑的口感加上濃郁的味道完全刺激味蕾,感覺非常特別﹗法國干邑龍蝦湯絕對不得了,待應先送來大大粒龍蝦肉及配料的湯碟,再即場為客人倒進龍蝦湯,熱辣辣的龍蝦湯令胃很暖和,超濃的龍蝦鮮味一層一層的滲透味蕾,再咬一口龍蝦肉,龍蝦的鮮甜又推進另一層次,非常出色⋯時令鮮魚伴帶子及普羅旺斯雜燴
