今年參與公司飯局,有幸品嚐由這位在近年頻頻在電視烹任節目中亮相的鼎爺所開設的餐廳,一試他所設計的菜式👍🏻由於私房菜需要預訂,所以約一個月前已預留了座位,以及有幾款餐單可供選擇。當中不得不贊的是椰皇燉嫩雞,他入來親自為我們介紹製作過程,這盅湯水及椰香味兩邊味道取得平衡,沒有互相蓋過。值得推介還有新舊荷葉飯,不太愛吃米飯的我也吃了整碗,正因為由荷葉包後所取得的香味吸引了我😋😋還有不得不提的是懷舊明目萬壽果糖水,相當滋潤,味道十分清甜!

等左好耐,終於有機會試鼎爺私房菜。揀左$888個menu + 古法焗魚腸。第一道菜衣裏面既阿爺叉燒已經好有驚喜。叉燒有厚切同薄切,都係外脆內軟,不過厚切就juicy d, 薄切就有入口即融既感覺多d。醉鮑魚既酒味濃郁,入口一d都唔苦。椰皇燉雞湯,椰子味好香,好正。古法焗魚腸,上面既油炸鬼同下面既焗蛋好配,蛋內有陳皮,食落口完全唔腥,仲有脆脆地既感覺👍🏻。其實食到紫氣東來已經有10成飽,不過富貴雞同荷葉飯既香味,令我都忍唔住食左d. 富貴雞好juicy, 就算食雞胸都滑,荷葉飯夠乾身,正👍🏻

本人覺得很普通,沒有什麼特別驚喜,試食一次就夠了。坐房要1800一位,價錢=是去食下裝修環境和藝員的每一碟餸上菜都很慢,我們等到凍才上另外一碟餸菜,由頭盤開始每樣餸菜都有專人來講解例如:叉燒是的肉從何來,陳皮又用了幾十年陳皮^_^等1.紫氣東來就是生炒骨是淋身的只是加了生果失望2.乞兒雞我第一次食的,本人不喜歡3.春菜煲,糯米飯,炸煙薫鴨胸和炒鴨肉,湯,甜品很普通4.最可以食的就是蒸蟹,直頭不用理擺放蟹身的梅子醬料蟹都不吸收到這醬料的味。蟹新鮮肉就好食5.鱔新鮮差不多上甜品時,阿爺就會入來跟大家影相,打下招呼

Came here for a gathering with a couple of friends visiting from the US and booked the private room with the most space and best view. There were 14 of us. We chose the $888 menu. On balance the meal was good and for sure no MSG in the food. I enjoyed the eel, coconut chicken soup and the chicken the most. The dishes we had did not have the most expensive ingredients but they offer the nostalgic “traditional HK flavors” from the good old days .....

We ordered one extra dish and Ding Grandpa cooked the beef stir fried w asparagus for us and we can see him cook through the glass window. There is also a TV in the private room and broadcast live from the kitchen. You can refer to my photo.

Throughout the night, he came to our room twice. He must have spent at least 15 mins at the end of our meal sharing his techniques with us. Very generous of him.

我覺得四款都好好味

叉燒是本地黑毛豬,肥廋適中;芝麻蝦很香芝麻味、彈牙;醉鮑魚是鼎爺父親至愛,用高梁酒浸了三日三夜,很香很濃的酒味,口感軟滑,不過酒味略略蓋過了鮑魚味;青瓜是手拍的,很爽脆、海蜇都好爽好好味!!

一直以為是食「金蠔」(甲為是新年加上之前的食評都是食金蠔),所以一上菜見到是「炸蠔」,大家都有點失望
其實味道是好食的,蠔是用心處理過,所以很嫩、沒有筯,蠔亦炸得香脆。

不過一人兩隻炸蠔的份量,對於細食的我們就多了點。

我12月尾whatsapps想book2月份,查問哪日有位,可能生意應接不暇個幾星期都沒有回覆,到1月中突然通知有空檔期,就是1個月後可惜鼎爺去了旅行趕不及回來,只好影紙板公仔安排坐門口位置,屏風"鼎"字是鼎爺真跡鼎爺精選前菜,叉燒稍肥但好腍好味,醉鮑魚用上玫瑰露,入口好香玫瑰味用上廿年陳皮,吃得出是靚陳皮原個椰子燉雞,好香好濃椰子味排骨炸得剛剛好,香口又不會乾原條白鱔,份量多,肉質鮮嫩腐乳生菜就比較普通無驚喜為了食這道乞兒雞而來的,果然沒有白來,好香荷香味帶少少炭味,雞肉又滑又嫩這個荷葉飯就要扣分了,飯是微暖又乾身,可能因為不熱所以覺得乾吧糖水除有木瓜外有元肉,蓮子,紅棗,最特別是香蕉我們向經理反映荷葉飯不夠熱乾身,經理即時話整過一個給我們,我們話已吃飽只是給意見。後來經理就補上馬蹄糕煎得好香好好味。

阿爺乞兒雞:客人可試扑開泥模,泥是之前包裹酒呈的,所以帶有陣陣花雕及玫瑰露香。原隻鮮雞用新舊荷葉包裹著,肉汁得以完全保留,但由於長時間焗製令肉質變得很淋,個人不大喜愛這種質感。
新舊荷葉飯:這飯沒像外面般過份濕淋淋,每粒米都上色均勻,瑤柱味濃,再飽也吃得下!
萬壽果糖水:內有香蕉增加甜味,亦有玫瑰花倍添幽香,正好為是夜盛宴畫上一個完美的句號。
總括而言,民以食為先,以每位一千大洋的價錢嘗景嚐菜享服務,值得前來一試!
