因有親戚在外地回港,指定要去昔日老粥店,唯有奉陪。早有心理準備,是去懷舊和印證香港史,看重於吃,用心多於用口。當日以上年紀舊客和自由行拖喼客為主。食店裝修令人舒服,門口左右兩邊是厨房,用玻璃透視煮麪煲粥和製麪過程。我最感興趣是向街的麪和粥兩個大紅字,有圓圈圍繞,是當年粥粉麪飯店的標誌。點選了腰潤粥和及第粥。豬腰爽口但無豬肉味,豬潤亦欠鮮味,沒有了及第粥原來是用剛屠宰豬的內臟,接濟考生的原意。粥有味精,是敗筆之舉。茘灣艇仔粥傳承廣州艇家用魷魚絲,豬肉絲,蠔豉,魚片,豬皮,菜絲規格,可以一試。吸睛是京都炸醬麪,是北方食物,京都可能是指北京。少辣偏甜,只宜懷舊人士回味。

上次幫朋友黎買粥,聞到好香好香既食物味道,到底是什麼呢?唔知係咪牛腩呢?原來我上次路過聞到好香既,搞到好想試既係炸醬撈麵,並唔係牛腩呢 ﹗

柱侯牛腩撈麵走蔥,清湯為大地魚湯,較為濃味及偏咸,凍左就更咸。牛腩過瘦又鞋烚烚,口感硬掘掘,唯一可取係炆得非常入味,我要牛腩係腍、棉、滑先叫好食 ﹗以三十幾蚊黎講,個麵底實在太細太少,不香不滑不爽,物非常值。

炸醬撈麵加柱侯牛腩,柱侯醬汁已完全滲透牛腩,每一口都充滿濃厚芳香味道,非常入味,雖略瘦但滿意可口。炸醬偏重甜味突出,裡面有肉碎及麵豉粒,香氣十足而霸道,深層味道有點似海鮮醬混甜醬。

有時食野係食感情,身為好旺角老顧客,行完街突然間想揾野食,咁就拎住一袋二袋行去洗衣街間分店。咁多年都無變嘅招牌及第粥,永遠都係我首選,粥底雖則係重左少少味精,但佢嘅豬潤好爽口彈牙,完全唔粉,而豬腰都彈牙,但我最愛係肉丸,自家手打,出面食唔到。而食得肉多都要碟菜襯下,芥蘭煮到好林身,易入口,不過就多左D油,但整體係OK嘅!

Preserved egg porridge with fresh beef: Served in bowl.  The half preserved egg was not old enough or not made from traditional way. Fresh beef wasn't fresh. I saw grey strips on the beef. Porridge was smooth and soft which was nice, but taste was not thick enough. Size was ok.

環境麻麻, 焗, 大味.Sitting not comfortable. Stuffy.

總體感覺: 無 誠 意. 頹煮.  Overall feeling: hea. (HK slang : slapdash)

曾幾何時,有位台灣來的朋友每次來香港,除了油渣麵外一定會吃好旺角的雲吞麵,可是一眾住在香港多年的港仔卻沒有一人光顧過,當年心想真的那麼好吃嗎??那就要試試了!結果由西洋菜街老店也搬到較遠的洗衣街才去吃麵,只因自己實在太多食肆想試,雲吞麵總不會是我的首選。新店沿用老店的設計格局,入門左手邊是煮麵煮粥的地方,由幾位很有閱歷的師傅坐陣,進店時也可順道看到師傅煮麵情況,只是飄出的雲吞湯香就沒有老店時濃郁了。遲來一步,店裡卡座全滿,中式雲石枱的圓桌雖更古色古香,只是當坐滿六位人客之時也相當親密;如一般舊式食店般,侍應先會送上熱茶一杯,至於小碟筷子則請自取了。本來只打算吃麵,只是看到有肉丸粥三個字又泛起吃粥念頭,只因問過侍應叔叔及第粥也有肉丸嘛。現煮粥比雲吞麵更快送到,還在冒熱泡的及第粥灑滿蔥花,如可用上蔥絲更有古早味也更有美感;仍看到一點米花的粥底尚算稠身,不過我喜歡更稠一點的程度,綿滑粥底熱得利害,在空調未算太強的老店裡吃得我滿頭大汗,畢竟熱天吃熱粥在我而言是自討苦吃。被熱粥煮熟的各款豬內臟件頭也算大,豬肝淡色略脆,未達真正黃沙膶的爽脆口感,剛剛全熟的不過老也沒有滲出血水;豬肚厚切不韌沒有怪味

本來只打算吃麵,只是看到有肉丸粥三個字又泛起吃粥念頭,只因問過侍應叔叔及第粥也有肉丸嘛。

現煮粥比雲吞麵更快送到,還在冒熱泡的及第粥灑滿蔥花,如可用上蔥絲更有古早味也更有美感;仍看到一點米花的粥底尚算稠身,不過我喜歡更稠一點的程度,綿滑粥底熱得利害,在空調未算太強的老店裡吃得我滿頭大汗,畢竟熱天吃熱粥在我而言是自討苦吃。

被熱粥煮熟的各款豬內臟件頭也算大,豬肝淡色略脆,未達真正黃沙膶的爽脆口感,剛剛全熟的不過老也沒有滲出血水;豬肚厚切不韌沒有怪味;薄片豬心是另一種爽脆;還有一片如熟透豬肝的豬腰,全碗及第粥還欠幾條粉腸,不然更為齊全。

期待中的肉丸如彈珠的小巧,略軟的肉丸沒有印象中的美味肉香,而且肉丸尺寸也太迷你,很可惜這老店仍未能找到回憶中的肉丸,唯有繼續發掘好了。

水餃麵送來時飄來微微湯香,加入韮黃後也勉強有點古早雲吞麵香味,單點每碗$3的蝦籽上湯在加了一點豬油後總可多飲一點,不要浪費。

銀絲麵在豬油相伴下口感更滑溜,爽口之餘但未夠彈脆,反而另一家荃灣老店彬記的銀絲麵更為對味。

外皮滑不溜口的水餃現煮的跟坊間一早煮好的不一樣,餡料都是蝦仁木耳筍絲幾款極爽口的食材,可惜筍絲吃來有點硬,成為唯一扣分地方。

老牌麵家客人絡繹不絕,不過沒有太多年青人食客,年青一點的都走到數步之遙的北海道餐廳吃厚蛋治嚕。

搬遷後裝修幾好睇。粥底綿、蠔豉味出、肉丸爽彈、皮蛋軟稔。豬手毫不吝惜地三大件鋪滿碗面,炆至軟滑離骨冇豬臭味,麵底彈牙。湯底依足傳統製法,韭黃豬油俱在。每個星期都會嚟食過番尋味。

雖然午食時間,但因獨自一人所以不用等位。搬新店後第一次來,以前的懷舊裝修當然不復再,但可幸蠔油撈麵美味如舊,香濃撲鼻的獨家蠔油加上爽滑麵條,令一碟普通不過的撈麵升華至美食的層次!
