今日到訪中環一間日式餃子小店——Gyoza AnD,店舖雖然空間較少,枱與座位比較緊密,但散發出濃厚嘅日式家庭風格,溫馨而親切博多雞飯團飯團嘅米係用上湯熬製嘅炊飯,米飯煙靭分明,而且吸收咗湯汁,入味而不鹹。飯團內混入雞肉、雜菜、菇類,營養均衡,口感豐富。外層包咗紫菜,增添層次感,值得一提,底層有一塊紫蘇葉,亦帶出咗飯團嘅清新感親父水餃子、自家製燒餃子餃子包含白菜、韭菜及豚肉,餡料飽滿。煎餃底部非常香脆,咬開時有肉汁,口感極佳。而水餃配搭黃金比例醬汁,非常入味同惹味担担撈麵撈麵加入咗肉碎、花生、芽菜及香蔥,同芝麻醬辣油及秘製醬汁,混和後,辣度有少少辣,調配得非常洽到好處,而且非常開胃,值得一讚嘅係佢個麵,麵質爽口彈牙,麵條非常入味

一早聽說有間日本東京過江龍餃子店Gyoza AnD開在中環,之前都慕名試過它的紫蘇葉餃子,今次再來試它其他食物。Gyoza AnD是一家充滿昭和風的復古日式餃子店,AnD的誕生源自老闆父親在1979年開創的東京老店「餃子安」,希望將昔日品嚐到父親的餃子風味帶來香港發揚光大,所以都是日本人主理。Gyoza AnD 除了有招牌水餃「親父の水餃子」和各種不同口味的日式煎餃外,更有拉麵、日式擔擔麵和配菜等。這裏每日供應不同創新口味的餃子,像是紫蘇、芫荽、章魚燒、芝士番茄等,每日都帶給顧客不同驚喜。今次就試了當日全部口味的餃子,分別有親父の水餃子、紫蘇、鮮蝦、羊肉、蠔及章魚燒。親父の水餃子就跟傳統中式餃子一樣,用了豬肉、白菜及韭菜。餃子皮薄,質感帶點煙韌,配上日式醋就好開胃。另外各款特式餃子都好足料,例如蠔會食到蠔粒的軟綿感及鮮味、紫蘇會食到紫蘇葉的香味等,鮮蝦餃子除了包著爽口蝦粒,而且一咬開便流出湯汁呢;章魚燒餃子就是把章魚燒的麵粉皮轉為餃子皮,裏面包著章魚粒,表面灑上木魚絲,個人覺得好有趣。此外,這裏還有款招牌担担麵,一款是湯麵、另一款是撈麵,今次就試了撈麵版,担担撈麵($72)的醬汁濃郁,

店員說日間會用蒸飯團,晚上會用煎飯團,飯團用到上湯熬製炊飯,裹著冬菇、雞肉粒及蘿蔔絲,有種家的味道。

一種比較新式的食法,咬開表面的脆皮後,便是滿滿骨膠原的口感,食法挺特別。

雞翼有我手掌般大,表面的炸皮令人有種在食天婦羅的感覺,而炸皮上塗上了醬汁,味道甜甜的。
