坊間供應這道菜的餐廳已買少見少。它原是北京街頭小吃,以上湯和雞蛋製作;江孔殷太史將之精緻化,用火腿及老雞熬成上湯,將上湯混入雞蛋、生粉,豬油,還有把雞子蒸熟後揉爛、混合在內煮成漿,再定型切好後炸成。

一到夏天就想食冬瓜盅,即刻book 位同一家人去留家開餐,再訂定個冬瓜盅大快朵頤。冬瓜盅份量依然充足,夠曬一家5口食,同埋依然勁足料,有瑤柱絲、蓮子、火鴨絲等,配埋個大大冬瓜,清甜消暑。我地一家去過留家勁多次都食唔厭,真係不得不讚嘆除了冬瓜盅外,留家其他菜式亦非常美味,極有水準。例如他們的招牌叉燒和煙燻雞等。蜜汁叉燒肉質鮮嫩,燒得啱啱好,亦唔會太甜,好入味。煙燻雞味道香濃,肉質韌身,仲要好多汁。如果喜歡傳統菜餚,這些菜式也是不錯的選擇。

做咗幾廿年人 第一次留食評 只因極之唔好嘅經驗長輩朋友嚟香港玩 因為長輩朋友俾錢 所以搵到呢間價位比較近民嘅餐廳 亦預訂了出名嘅鹽焗鷄 因為同長輩食飯 所以5:52便到達 但餐廳堅持6:00才可以入座 (?)6:10點好菜 餸菜陸續上 食物非常一般 (叉燒亦麻麻) 所有希望望喺隻雞 但唯獨佢遲遲未嚟 6:50同waiter跟單 waiter回覆”催咗”到7:10再催 waiter竟然話要再7至8分鐘(?)直至7:30依然未見雞影 再催多次 今次話斬緊 到7:35終於決定cancel一隻訂好咗嘅雞-個半鐘都出唔到嚟 全程一句唔好意思/對唔住都冇

老牌傳統酒家不多,留家廚房算是為數不多之一,名字改得好,留住客人,留住傳統,留住好聲譽。這裡樓底高,裝修簡單清雅,既傳統又不失時代感。喜歡來這裡用餐,從小到大,從天后到灣仔,忠實粉絲,希望可以一直食到老,但今日失望了,最喜歡的菜式野山椒肉碎冬瓜竟然失準。🙄野山椒肉碎冬瓜$108冬瓜切成均等厚片,用肉碎蝦米野山椒燜淋,再埋番個芡上台,冬瓜香軟鮮嫩,索曬蝦米肉汁,少少辣更帶出鮮味,刺激味蕾,越食越想食。但今次的冬瓜是爽脆的,不知是否客滿原因,廚房太忙,無時間煮淋冬瓜,敷衍了事,連肉碎都有點腥味,明顯未煮夠時間,太失望了。😪留家煙薰雞半隻$208辛好今日的煙薰雞保持水准,獨有的煙薰味道,拋離其他餐廳幾條街,皮薄肉嫩,煙薰的顏色光亮嫣紅,份外吸睛,👀,煙薰承度剛剛好,香味特殊,肉汁豐滿,還有幾塊雞腎和雞肝,是最精華部分。😘😘食肆受歡迎,服務水准是重要元素,這裡的侍應工作主動,態度友善,有求必應,令人賓至如歸。希望下次來時,菜式不再失準。💪💪

辛好今日的煙薰雞保持水准,獨有的煙薰味道,拋離其他餐廳幾條街,皮薄肉嫩,煙薰的顏色光亮嫣紅,份外吸睛,👀,煙薰承度剛剛好,香味特殊,肉汁豐滿,還有幾塊雞腎和雞肝,是最精華部分。😘😘

情人節嚟咗呢間嘢食中菜,一隻知道呢間嘢評價唔錯,每樣嘢都令我哋覺得好驚喜。 留家明蝦好入味,我隻貓都好彈牙,而且醬汁都有驚喜,好重蝦膏味,下面啲菜索晒啲汁好鮮味!另外個蟹肉羹都好有驚喜,鮮而不膩,估唔到呢個價錢都有幾多蟹肉係個湯羹入面。美中不足嘅係個叉燒燶咗啲,不過都好juicy, 唔會太影響味道!總括嚟講係食得好滿意嘅一餐!

黃色中菜店選擇不多,有留意開圈內的便不會對留家陌生。和家人聚餐慶祝因為他們絕大多數時間只吃中菜,亦令留家長期在我們家的清單上。長期光顧不只是因為顏色,而是性價比算很不錯。.雖然吃了多次,寫卻是第一次,因為….每次都拍得不好…哈。菜式沒有花巧的擺盤,很踏實,但味道不俗勝於一切。.每次必食有煙燻雞,作為招牌菜式,當之無愧。雞被滷汁浸熟後再以乾玫瑰花蕾、片糖及甘蔗煙燻,獨有的香氣滲透雞件,片糖和甘蔗加持後,大大提升了雞件鮮甜度。另一道必點的小吃是醉鮑魚。個人認為醃製任何‘’醉系列‘’,只要酒調得好,醃得入味便已很不錯。這款醉鮑魚還很脆亂彈牙爽口,鮮美得令人回味😋呀…重點只是$58一隻…哈哈…很可以呢!留家還有一樣我很掛念的食物,不過今次飯聚沒有拍,太急不及待了,它便是咖啡糕😋 希望快點再吃到。

另一道必點的小吃是醉鮑魚。個人認為醃製任何‘’醉系列‘’,只要酒調得好,醃得入味便已很不錯。這款醉鮑魚還很脆亂彈牙爽口,鮮美得令人回味😋呀…重點只是$58一隻…哈哈…很可以呢!

一上桌就是很香的煙燻味夾有點點的玫瑰露香,雞皮吃落有濃厚的醬油香,

每一樣都非常之出色同有驚喜😋㽞家叉燒係燶邊。 叉燒都頗多肉汁,但脂肪又唔多,可以一口接一口咁食但又唔覺得好肥,個蜜汁好特別,又唔會過甜又食到有玫瑰露酒味☺️但等侯時間較長,聽講係即叫即燒!
