咁啱去開上環,但好幾間舖頭都無開,原本有一間想食但無位,結果唔覺意黎左依間拉麵。其實唔肯定依間拉麵係日本黎定係香港嘅拉麵,不過見佢個廣島蠔豚骨湯拉麵好似幾吸引,就入去試下。入到去點餐發現原來仲有得揀梅頭瘦叉燒 火炙肥叉燒 或者 角切叉燒粒。廣島蠔味道不錯,拉麵同梅頭瘦叉燒就正常,無話好特別。魚介熊拉麵,湯底比我想像中濃,唔係清魚湯果d,反而角切叉燒粒好特別,雖然唔似係日本拉麵會見到嘅嘢,但啖啖肉好滿足。最後係熊自家製餃子,無比較無傷害,啱啱早前食左大阪拉麵店餃子,雖然唔係話唔好食,但就係被比下去。

雖然唔知依家仲有冇呢碗拉麵,但係因為太深刻,所以睇返相簿嘅時候真係值得過嚟寫返個食評。真係好少拉麵店,唔會用廣島蠔去做,係好有特色嘅感覺。唔會好腥,整體係做得好出色好完整。湯底好濃郁,講真已經食咗好多次熊拉麵,目測都一定唔會炒車,但係冇諗過呢個廣島豪拉麵係做得咁出色!整體body係重身嘅,好濃郁嘅蠔味嘅湯底,每一隻蠔都好肥美,呢間拉麵店水準一如既往,只要我想食拉麵通常都會諗起呢間餐廳,超正超正!!

配料 (2.5/5) - 豬叉燒,非常一般。肉質偏硬,肉味普通。我係揀左佢最瘦嘅叉燒選項:梅頭瘦叉燒,我估佢用左豬里脊,但冇處理好。肉瘦同肉韌,都可以係兩回事,我食過好多店 d 叉燒,既瘦,又嫩,又甘香,呢道完全係唔得。

溏心蛋就真係可以一讚。雖然佢唔係調味調到好入味嗰種,但個蛋無論係質感,蛋香,生熟度,我認為都係一流。同埋呢,我見到個廚,有刻意放一放個蛋落去熱水道稍為加熱先,令到個蛋入口仲係熱熱地,但流心效果還在,呢個心機我係有放在眼內。

呢間拉麵都好有人氣,無論嚟食lunch 定食dinner都要排吓隊。有時唔太肚餓,就會嚟排吓,成碗拉麵就夠飽。叫咗個招牌熊拉麵,配火炙肥叉燒同幼麵。佢嘅豬骨湯底係好濃厚,但就算食哂成碗麵都唔會覺得好滯。火炙肥叉燒夠香燒焦味,雖然係肥叉燒但又唔會成舊肥膏。其實嚟呢度最主要係為咗佢個芽菜嚟,辣辣哋好開胃,最正係放喺枱度俾你無限加,會成日不知不覺夾哂食兜芽菜,要佢再refill🤭芽菜加埋落啲麵度會多咗個口感,食吓食吓就好快食完碗麵。

今日已經係第二次去食。一入門口就聞到燒肉味,因為佢哋會燒肉另外冇試過佢嗰個餃子,下次可以試試流心蛋非常之好食。推介。你咬入去佢個流心係橙色,最好就係佢哋冇切開。至於面嘅份量嘅份量係唔會好飽嘅,但又唔會覺得好肚餓。如果真係唔夠食,可以加份量。兩次都會飲埋個湯,因為真係有好香嘅豬骨味。個湯嘅質地可以掛喺個面上面。另外一提個店員都好好比一個籃我裝住個手袋同書包。所以我真心覺得佢哋服務是不錯。我見有啲評語話佢哋服務麻麻。其實真係唔係。

流心蛋非常之好食。推介。你咬入去佢個流心係橙色,最好就係佢哋冇切開。

至於面嘅份量嘅份量係唔會好飽嘅,但又唔會覺得好肚餓。如果真係唔夠食,可以加份量。

這一間味道算ok既,前前後後來左幾次。但係今日哩件事之後我唔會再來幫襯。哩間鋪頭既員工真係死腦筋,唔識轉。今日我地來食午餐堂食,五個人唔可以做一張大桌四人位,老闆話甘樣坐危險,我唔明有咩危險,三個人坐一排,兩個人坐一排就得啦。根據我地就分開坐,兩個人坐係另一張台,甘我坐係果個走道就唔危險嗎?路過員工端的湯汁撒到我身上點訓?最後我換位置到吧檯,係五個人坐既size,但係員工又來話讓我往另一邊坐。我明明係跟住個number坐既,點解又要我挪。

中環的日式拉面店,12點前到不用等位亦都有幾枱人食緊叫左招牌的熊拉面,個樣就咁睇落有好有唔好。好係比起其他店佢係俾一隻完整半熟蛋你。不過叉燒就只有一片明顯較少,配菜亦都失色只有蔥花和木耳碎,個人比較喜歡有更多蔬菜和竹笋之類的配菜令成件事健康D,同埋蔬菜吸左面汁亦都好好味。試飲湯底飲落係OK GE,唔算係好濃好咸的味,口味較為清淡健康,但係豚骨味就唔太突出,不過不失。麵都係OK,叫左較粗的那款同埋普通硬度,但湯底不太掛麵所以食起上來會有少少淡,但就可以飲些湯來配搭。份量係足夠正常食量的人。總括來講味道OK,配料不足,價錢偏貴一碗$95性價比只是一般。

如果一個人嚟就唔會叫,因為碗拉麵份量都唔惹小,女仕勉強先食得晒。講返呢個餃子都唔錯,外層煎得金黃,食落好香脆,裡面嘅豬肉同菜比例平均,餃子皮厚薄適中,似鍋貼口感,所以都幾實在,但我鍾意。

如果鍾意食蠔都應該要一試,問咗應該做到新年前,隻隻蠔都肥大飽滿有蠔味,再加一片火灸半肥瘦叉燒,都咪話唔滿足,叉燒睇落好似好肥,但入口一啲油膩感都無,火灸過仲非常香口,最利害係個豚骨湯濃郁之餘不帶半點油,所以我忍唔住飲晒啲湯,除此之外,拉麵粗幼同軟硬度都可以揀,點揀啲麵都同樣掛湯,所以阿sir咁鍾意嚟都係一個主要原因,期望下次試其他期間限定。

之前睇咗「衞食攻略」,知道上環蘇杭街一帶有好多平民小店,放工就約埋同事一齊,係西營盤行過嚟搵食。見呢間熊拉麵有介紹過,價錢亦唔算貴,就入去坐低咗。招牌熊拉麵 ($95)豬骨湯底,份量正常,最出色係隻溏心蛋魚介熊拉麵 ($97)比起中環嗰間鯛魚湯底,呢間比較濃,但都好味。叉燒得一片,係大片薄切。麵底可以揀軟硬度。可以追加其他配料及香味油。會有期間限定款拉麵,呢段時間係生蠔拉麵。不過我哋對生蠔無興趣就試番招牌款。可以encore再去既小店。

比起中環嗰間鯛魚湯底,呢間比較濃,但都好味。

叉燒得一片,係大片薄切。麵底可以揀軟硬度。可以追加其他配料及香味油。
會有期間限定款拉麵,呢段時間係生蠔拉麵。不過我哋對生蠔無興趣就試番招牌款。
可以encore再去既小店。

嚟到呢間熊拉麵,真係要置身其中先知有幾得!湯底嚟講,啖啖濃郁,飲落去好順喉,完全唔會膩口,真係滿足到成個味蕾🤤!而家講吓拉麵,中幼條條麵身彈牙得嚟,每條都分明,好有嚼頭,一啖咬落,麵香四溢。嗱,熊拉麵個招牌肥叉燒,實言相告,真係肥美又多汁,火炙過嘅邊緣微微的焦香味,食落去簡直係嘆為觀止!呢個溏心蛋,真係熱門擋唔住,蛋黃流心得啱啱好,咸香得嚟又唔舂喧賓奪主。哎呀,實話跟大家講,呢個是但揀㗎嘅素菜,竟然都可以爽口到不得了,脆口嘅木耳同爽滑嘅筍尖,涼拌得啱啱好,成盤都係清新味道。試過喇,下次真係要搞個拉麵團,再帶多啲朋友嚟飽餐一頓,唔使搵得咁辛苦,因為呢間熊拉麵,係一個可以喺味道上打個滿分嘅好地方,肚仔餓嘅時候憶起就會心癢癢,走過路過唔好錯過啊!
