麵,走鹼的功夫做的很好。牛腩入味,雲吞鮮味,水餃爽口,湯頭味濃,完全是一碗吃得很順口的麵。雖說,她不是絕對傳統的廣東雲吞麵,但細微之處卻見到沉積良久的真功夫和對傳統味道的堅持。廣東麵必下韭黃(好到底放青蔥的做法,並非傳統口味),湯頭濃郁的大地魚和羅漢果味也是對辦的老味道。另外一個值得留意的細節位是廣東麵除了紅醋之外,辣椒醬也是必備的配角之一。而在廣東麵講究的傳統吃法中,則是落辣椒醬而不是辣椒油的。這裏,自然也是尊從古法。而如果你和我一樣,對吃麵的辣醬有要求的話,坤記更不會叫你失望。一碗雲吞麵,卻用上了余均益,這種用心,坊間少有啊!

如果午餐吃厭一般飯餐,想試一碗地道雲吞麵,此店必然是首選。現今以竹昇麵作招倈已少之又少,而且又能在傳統舊式格局中加以轉變,給人簡潔整齊的感覺,又能保持傳統的味道,實是非常難得。此店大多以套餐形式來吸引食客,除了吃麵外,還包油菜及飲品,飲品可選五花茶、酸梅湯等。今天點了一碗鮮蝦雲吞、蝦球和牛腩麵,蝦球爽口彈牙,雲吞內蝦肉與豬肉比例均勻,鮮甜美味,湯底充滿大地魚味,更帶有少許甜味,十分可口。另一碗是蟹肉雲吞、蝦球和南乳豬手,雲吞充滿鮮甜蟹味,豬手軟腍有咬口,值得一試。油菜分別是腩汁生菜和腐乳通菜,亦都青嫩可口。最後加了一份鮑汁鳳爪,略嫌鮑汁只是淋在鳳爪之上,不夠入味,實是美中不足之處。

見舊區小店拎到米芝蓮,又近屋企,所以去試下!!門口有個開放式既位俾你睇住佢整麵,可惜今日無師傅拎條大竹un麵。最普通既野往往最考功夫,所以叫左碗雪吞麵同豬手麵!!麵。。。可能佢太趕太忙?定係我食唔慣硬既幼麵。。。我問個呀姐係咪未住得夠熟,而且麵都未開哂,中間篤入去仲有少少硬。。。佢話我唔識食,呢啲係叫爽口彈牙我食左一吙就算。。。湯係好飲鮮甜既,雲吞都醃得夠味,蝦夠爽,肉多鮮,但偏細隻。豬手可以煮得耐少少,雖然上哂色,但未多軟,林,入味,可能我偏向更林既材料同湯底係好既,但個麵我唔識欣賞。。。

今次用團購價試試孖麵套餐,雖沒有大驚喜但也冇失望。二時許進入了店子立即找到位置,只感覺冷氣較為不足,等待不久食物來了: 平凡的麵大小賣相算是壯觀,蝦子撈的蝦子很香口可惜敗筆是奉上蠔油是要自己撈的,而加上蠔油冇鮮味就缺乏了靈魂,再者講下三寶麵,雲吞水餃比吃慣的細小,亦少了應有的大地魚味所以有點失色。其次雲耳配的醋酸得較寡,比較可取的是伴餐的兩小杯甜醋飲料,香濃濃的黐纏著喉嚨良久的,此外還須讚麵質彈牙及冇鹼水味,的確取回不少分數。這套餐賣$60很足夠兩人吃,團購價較正價超值得多,可是如果要用正價去吃還是欠了很好的驅動力呢。
